ORANGE YAMS COLONIAL
Lightly sweetened, buttery, fresh yams with orange and nutmeg.

Steps:
- Preheat the oven to 325° F.
- Boil the yams in a covered pan of water until tender. Drain; drop in cold water and then slip off the skins. Rinse the cooked yams, chop and put in a large bowl. In a small bowl, whisk together the butter, honey and orange juice/zest. Add to the yams and toss gently.
- Spoon into a buttered casserole dish. Sprinkle with salt, pepper and nutmeg. Bake for 30 to 40 minutes, or until golden.

CANDIED SWEET POTATOES WITH ORANGE JUICE
Every holiday my mother makes these candied sweet potatoes with orange juice and every holiday someone asks for her recipe. After 53 years, she certainly has perfected it!

Steps:
- Place sweet potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender but not mushy, 18 to 20 minutes. Drain. Peel sweet potatoes and cut in half lengthwise. Discard skins.
- Combine brown sugar, butter, orange juice, salt, and cloves in a large skillet or electric frying pan; bring to a boil. Reduce heat and simmer for 5 minutes until syrupy. Arrange potato halves in the syrup and simmer for 20 to 25 minutes. Remove cloves from syrup before serving, if you wish.

AMARETTO YAMS
I had this dish years ago at an ex-boyfriend's house while I was there for Thanksgiving dinner and his mom shared her recipe. I am usually pretty traditional and old-fashioned with my Thanksgiving menu, but always make these because they are so good! My relationship didn't last, but this recipe continues to be a favorite, years later!

- Preheat oven to 400 degrees F (200 degrees C).
- Mix crushed cookies with 1/2 cup butter in a bowl. Mash sweet potatoes with 1/4 cup butter in separate bowl; add brown sugar, marmalade, amaretto liqueur, and ginger to sweet potatoes. Mix well. Pour sweet potato mixture into a 9x9-inch baking dish; top with cookie mixture.
- Bake in the preheated oven until cooked through and bubbling, about 30 minutes.

MASHED YAMS IN ORANGE CUPS

- Pierce each yam all over with fork. Working in 2 batches, cook yams in microwave 15 minutes. Turn yams over; cook until tender, about 12 minutes longer. Cut yams in half; scoop pulp into bowl. Add 3/4 cup marshmallow creme, butter, and syrup; mash until smooth. Season with salt and pepper. Whisk in eggs. (Can be made 1 day ahead. Cover; chill.)
- Preheat oven to 350°F. Cut thin slice from top and bottom of each orange to make flat surfaces. Cut oranges in half. Scoop out pulp; reserve for another use. Place orange cups on 2 baking sheets. Divide yam mixture equally among cups. Top each with dollop of marshmallow creme and 2 pecan halves. Bake until beginning to brown, about 30 minutes.
YAMS IN ORANGE SHELLS
This recipe has been in my files for over 15 years, & I find it a nice variation to a yam side dish. Originally I smoothly pureed the yams, preserves & butter in a food processor, but more recently I just mash them & am not concerned about any small lumps!

Steps:
- Cut oranges in half, then carefully scoop out the pulp, keeping the orange shells intact.
- Remove membrane from oranges, then chop/dice the pulp, & set it aside.
- In a large saucepan, cook unpeeled, washed yams 40-45 minutes or until tender.
- Preheat oven to 350 degrees F.
- Drain & peel yams.
- Mash yams together with the butter & preserves.
- Fold in the orange pulp, then season to taste with salt.
- Spoon yam mixture into the orange shells, & bake 15 minutes until heated through.

YAMS ( SWEET POTATOES ) COINTREAU
My husband is not a huge fan of sweet potatoes, but I think he liked this just as much as I did. This has a subtle flavor, and the only sweetness comes naturally from the sweet potatoes. I used more liqueur and pepper. From Southern Living.

SWEET AND SOUR YAMS

- In a frying pan, heat all but 1 tablespoon of the olive oil. In batches, fry yam slices on each side until golden brown, about 5 minutes. Drain on paper towels. Add onions to the pan; add sugar and cook until soft, about 10 minutes. Add vinegar, water and pepper. Scrape pan well to combine the browned bits; continue to simmer for 5 minutes until mixture is reduced by half. Remove from heat.
- Use remaining 1 tablespoon of olive oil to grease a shallow baking dish. Carefully fan yam slices in rows. Drizzle vinegar and onion mixture evenly over yams. The dish can be covered and refrigerated for one day.
- Before serving, warm the yams in a 350-degree oven for 15 minutes. Sprinkle with mint and serve.

ORANGE LIQUOR YAMS

- Directions Preheat an oven to 425 degrees F (220 degrees C). Scrub and dry the potatoes, then prick several times with a fork and place onto a baking sheet. Bake in the preheated oven until the potatoes are easily pierced with a fork, about 1 hour. Remove and allow to cool briefly. Cut the ends off the yams and discard; transfer the yams to a large bowl. Add the honey, melted butter, cardamom, cinnamon, tangerine juice, and orange liqueur to the yams. Beat with a hand-held electric mixer until combined.
