Sweet and Sour Grilled Swordfish Kabobs image

If you're lucky enough to get swordfish, let the mild and meaty fish grill to perfection with a simple prepared glaze and pretty summer vegetables.

Bamboo or metal skewers
1 lb. swordfish steak, cut into bite-sized (1 1/2 to 2-inch) pieces
1/2 cup purchased sweet-and-sour sauce
2 medium zucchini, cut into 1/2-inch-thick slices
1 medium red bell pepper, cut into 1 1/2-inch pieces
15 to 20 cherry tomatoes
Additional sweet-and-sour sauce, if desired

Steps:

  • If using bamboo skewers, soak in water for 30 minutes.
  • Meanwhile, heat gas or charcoal grill. Place swordfish pieces in large bowl. Add 1/2 cup sweet-and-sour sauce; turn fish to coat all sides. Add zucchini, bell pepper and tomatoes; stir gently to coat.
  • Thread fish, zucchini, bell pepper and tomatoes evenly onto skewers.
  • When grill is heated, place kabobs on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 8 to 10 minutes or until fish flakes easily with fork, turning once. Serve kabobs with additional sweet-and-sour sauce.

¾ cup teriyaki sauce
⅔ cup dry sherry
4 teaspoons minced garlic
2 teaspoons minced fresh ginger root
1 teaspoon sesame oil
6 (6 ounce) swordfish steaks

Steps:

  • In a large saucepan combine teriyaki sauce, sherry, garlic, ginger, and sesame oil. Bring to a boil. Set the marinade aside to cool for 10 minutes.
  • Place fish in a shallow baking dish. Pour 1/2 of the marinade over the fish. Flip the fish over and pour the remaining marinade on the fish. Coat entire fish with marinade. Refrigerate the fish for 1 1/2 hours, turning the fish over often.
  • Grill the fish over medium-high heat for 4 minutes. Flip the fish over and grill it another 4 minutes. Fish should flake easily with a fork when done. Serve hot!

1 tablespoon olive oil
1/2 medium onion, diced
2 tablespoons grated fresh ginger
1/4 cup white vinegar
1 cup adobo or barbecue sauce
2 tablespoons brown sugar
1/2 teaspoon freshly ground black pepper
2 pounds swordfish, cut into 1 1/2inch thick steaks
Olive oil for brushing fish
Coarse salt and freshly ground black pepper

Steps:

  • Heat the oil in a skillet over medium low heat. Saute the onions until soft, about 5 to 7 minutes. Add the ginger and cook for 1 minute to release the aromas. Add the vinegar and simmer to reduce by half. Add barbecue sauce, brown sugar and pepper and simmer, stirring occasionally, until sauce thickens, about 15 minutes. Place the sauce in a blender and puree.
  • Heat a grill. Brush swordfish steaks with olive oil and sprinkle with salt and pepper. Grill fish about 7 minutes, brushing with ginger barbecue sauce. Turn, brush with barbecue sauce and grill another 3 minutes, or until cooked through.

Sicilian Swordfish with Sweet-and-Sour Vegetables image

2 tablespoons extra-virgin olive oil
3/4 pound cipollini onions, peeled
1 bulb fennel, trimmed, cored and diced
2 teaspoons sugar
Kosher salt and freshly ground pepper
1/4 cup white wine vinegar
4 cloves garlic, minced
1 pound assorted small heirloom tomatoes
2 sprigs fresh oregano, leaves stripped and chopped
3 tablespoons brine-packed capers, plus 1 tablespoon brine
1/3 cup pine nuts
Zest and juice of 1 lemon
2 cups fresh parsley, chopped
Sea salt and freshly ground pepper
3 3/4-to-1-pound swordfish steaks (about 1 1/4 inches thick)
2 tablespoons extra-virgin olive oil, plus more for brushing and drizzling

Steps:

  • Prepare the vegetables: Heat the olive oil in a pot over medium heat. Add the onions and cook until golden, 3 to 4 minutes. Add the fennel and cook until slightly soft, 2 to 3 minutes. Stir in the sugar and season with kosher salt and pepper. Add the vinegar, garlic and 1 cup water; bring to a boil, stirring, then reduce the heat to medium low and simmer until the onions are tender, about 25 minutes.
  • Meanwhile, prepare the fish: Finely chop the pine nuts by hand. Mix the nuts, lemon zest, parsley, and sea salt and pepper to taste on a cutting board. Pat the swordfish dry and brush with olive oil on both sides. Press the fish into the nut mixture, turning to coat.
  • Heat a large nonstick skillet over medium-high heat. Add 2 tablespoons olive oil and swirl to coat. When the oil shimmers, lay the fish in the pan and cook, undisturbed, until golden on the bottom, 4 to 5 minutes. Flip and cook until just golden on the other side, 3 to 4 more minutes. Using tongs, lay each swordfish steak on its side to sear the edges, 1 to 2 minutes. Reduce the heat to medium low. Turn the fish so the lighter side is down and cook until just firm to the touch, 6 to 8 more minutes. Transfer to a cutting board.
  • While the fish rests, finish the vegetables: Add the tomatoes, oregano, capers and brine to the onions and cook until the tomatoes soften, 5 to 8 minutes. Season with kosher salt and pepper.
  • Slice the fish and divide among plates. Spoon the vegetables and juices onto the plates. Drizzle with the lemon juice and olive oil.

The aroma is out of this world. This Asian-inspired recipe yields very generous helpings, and is chock-full of veggies and lean protein. Lemongrass and lime give it a nice sour punch. Can easily be tweaked to make it gluten free. Garnish with any leftover cilantro and green onion, if desired.

4 cups water
2 (6 ounce) swordfish steaks
salt and freshly ground black pepper to taste
2 tablespoons reduced-sodium vegetable bouillon
1 medium lime, juiced, divided
1 cup shredded carrots
1 cup bean sprouts
2 tablespoons reduced-sodium soy sauce
4 green onions, chopped
1 red jalapeno pepper, seeded and diced, or to taste
1 stalk lemongrass, split lengthwise
5 sprigs cilantro, stemmed and roughly chopped
1 tablespoon minced garlic, divided
1 ounce finely chopped ginger
2 tablespoons olive oil, divided
5 ounces shiitake mushrooms, stemmed and sliced
2 heads baby bok choy, cut into 1-inch pieces
14 ounces buckwheat noodles
3 drops sesame oil, or more to taste

Steps:

  • Bring water to a boil in a pot. Rinse swordfish and pat dry; season both sides with a pinch of salt and pepper. Reduce boiling water to a simmer. Stir in bouillon and 3/4 of the lime juice. Add carrots, bean sprouts, soy sauce, green onions, jalapeno, lemongrass, cilantro, 2/3 of the garlic, and ginger. Simmer broth for at least 10 minutes.
  • Heat 1 tablespoon olive oil in a saucepan over medium heat. Add mushrooms; season with a pinch of salt and pepper and add remaining garlic. Cook until tender, about 5 minutes. Transfer mushrooms to a bowl. Wipe the pan clean if there are bits stuck to the bottom.
  • Return pan to medium-high heat; add remaining olive oil and swordfish. Cook until internal temperature reaches at least 145 degrees F (63 degrees C), 4 to 5 minutes per side. Squeeze remaining lime juice over the fish and set aside to rest.
  • Add mushrooms and bok choy to the broth. Continue simmering on low, about 5 minutes. Add soba noodles; cook until heated through, 5 to 7 minutes. Add sesame oil.
  • Cut each block of noodles in half and divide between 4 bowls. Ladle vegetables and broth over the top. Cut swordfish steaks into equal pieces and place one on top of each bowl.

12 ounces swordfish
Enough vegetable oil for light brushing of fish
2 tablespoons red-wine vinegar
1 tablespoon grated fresh ginger
1 tablespoon sugar
1/2 cup plus 3 tablespoons water
1 1/2 teaspoons reduced-sodium soy sauce
1 cup chopped fresh pineapple
2 teaspoons cornstarch
2 or 3 tablespoons fresh cilantro leaves

Steps:

  • Brush swordfish lightly with vegetable oil and broil or grill until done. Use the Canadian rule: measure fish at the thickest part and cook 10 minutes to the inch.
  • Combine vinegar, ginger, sugar, 1/2 cup water, soy sauce and pineapple and mix well. Bring to boil; reduce heat and simmer 2 minutes.
  • Combine cornstarch with 1 tablespoon water to make smooth paste. Stir in remaining 2 tablespoons of water and stir well. Stir into sauce and cook briefly, stirring, just until mixture thickens. Spoon sauce over fish; sprinkle with cilantro and serve.

James Martin's Asian soup combines a fragrant broth with fish, seafood and light noodles, topped with strong herbs

1 tsp coriander seeds
small piece ginger or galangal, sliced
850ml chicken or fish stock
175g thin rice noodles
2 tbsp fish sauce
2 fat red chillies , deseeded and thinly sliced
3 garlic cloves , thinly sliced
300g raw, tail-on tiger prawns
200g/7oz skinless salmon fillet , cut into small cubes
4 spring onions , chopped
handful coriander leaves
handful mint leaves , torn
juice 2 limes

Steps:

  • Put the coriander seeds and galangal or ginger in a saucepan. Pour in the stock, bring to the boil, then simmer gently for 5 mins. Leave to stand for 10 mins.
  • Meanwhile, cook the noodles following pack instructions. Drain and keep warm. Return stock to the boil. Add the fish sauce, chillies and garlic, reduce the heat and simmer for 2 mins. Add the prawns and salmon, return to a simmer and cook gently for about 5 mins until both are firm and cooked. Add the spring onions, herbs and lime juice, to taste.
  • Divide the noodles between soup bowls. Using a slotted spoon, lift out the prawns and fish, and place on the noodles. Season the hot stock, pour into the bowls and serve with Spring rolls on the side.

Orange slices

Steps:

  • Combine first 7 ingredients in 9-inch glass pie plate. Add swordfish and turn to coat in marinade. Cover and refrigerate 30 minutes or up to 3 hours.
  • Preheat broiler. Using rubber spatula, scrape marinade from swordfish and pie plate into small saucepan. Season swordfish lightly with salt and pepper. Broil swordfish until just cooked through, about 3 minutes per side. Transfer to platter. Boil reserved marinade until syrupy, about 3 minutes. Season with salt and pepper. Spoon over swordfish. Garnish with orange slices and green onions and serve.

DH and I made this for dinner a couple of nights ago and really enjoyed the combination of ginger and soy with the swordfish. From Keiko O Aoki's "Easy and Healthy Japanese Food for the American Kitchen." I should mention that I always use reduced sodium soy sauce (I prefer San-J Tamari).

4 pieces swordfish fillets
2 green onions, finely chopped
4 slices fresh lemon rind
2 small tomatoes, wedged
1/2 cup flour
4 tablespoons vegetable oil
salt, to taste
pepper, to taste
2 1/2 tablespoons butter
2 inches fresh ginger, peeled and thinly shredded
4 tablespoons white wine
2 tablespoons soy sauce

Steps:

  • To make the sauce, melt the butter in a small frying pan. Add the thinly shredded ginger and slowly saute over low heat. Add the white wine and soy sauce to complete the sauce.
  • Place the swordfish filets on a plate and sprinkle with salt and pepper on both sides. Lightly coat the filets with flour.
  • Heat the vegetable oil in a frying pan and place the swordfish filets in pan, frying until both sides are nicely browned and cooked through.
  • Serve on a plate with lemon rinds and finely chopped green onion on top. Pour the sauce on the fish. Serve with tomatoes on the side for garnish.

4 cups canned low sodium chicken broth
1 1/2 ounces dried shiitake mushrooms
5 tablespoons rice vinegar
2 tablespoons cornstarch
1 1/2 tablespoons oriental sesame oil
3 tablespoons peeled minced fresh ginger
10 1/2 ounces extra firm tofu, cut into 1/4 ' dice
1 ounce cellophane rice noodles or 1 ounce angel hair pasta, broken in half
1 tablespoon soy sauce
1/2 teaspoon crushed red pepper flakes
1 pinch sugar

Steps:

  • Combine broth and mushrooms. let stand until mushrooms soften apprx 20 minutes.
  • Remove mushrooms from the broth and squeeze over the bowl with the broth.
  • Discard mushroom stems: thinly slice caps.
  • Combine vinegar & cornstarch, stir to blend,.
  • Heat oil in a large saucepan, add ginger, saute 30 seconds.
  • Pour in the reserved broth.
  • Bring to boil.
  • Add tofu, noodles, soy sauce, red chili flakes, sugar & mushrooms.
  • Simmer 5 minutes.
  • Add cornstarch mixture, stir until slightly thickened apprx 1 minute.
