- Soak wood chips in a bowl of water, 8 hours to overnight.
- Mix paprika, white sugar, cumin, cayenne pepper, brown sugar, chili powder, garlic powder, onion powder, salt, and black pepper together in a bowl. Rub the spice mixture over the entire brisket; refrigerate for 24 hours.
- Preheat smoker to between 220 degrees F (104 degrees C) and 230 degrees F (110 degrees C). Drain wood chips and place in the smoker.
- Smoke brisket in the preheated smoker until it has an internal temperature of 165 degrees F (74 degrees C), about 12 1/2 hours. Wrap brisket tightly in butcher paper or heavy-duty aluminum foil and return to smoker.
- Continue smoking brisket until an internal temperature of 185 degrees F (85 degrees C) is reached, about 1 hour more.

- Place meat on double layer of heavy-duty foil. Mix pineapple and peppers; pour over meat. Bring up foil sides. Double fold top and sides to seal packet, leaving room for heat circulation inside. Refrigerate 1 hour.
- Heat charcoal grill to medium heat. Arrange coals evenly on each side of charcoal grate. Open packet; pour half the barbecue sauce over meat. Reseal packet. Place on center of grate; cover with lid. Grill meat 3 hours, turning after 1-1/2 hours.
- Open packet; pour meat drippings into bowl. Discard foil. Grill meat 20 to 30 min. or until done.

TEX-MEX SHREDDED BEEF BRISKET
Sometimes in Texas you just want barbecue. Unfortunately, it takes all day and a good smoker to make real Texas barbecue brisket. Not everyone has the equipment or the time. Here is a recipe for barbecue beef that will satisfy your craving with minimal effort. All you need is an ovenproof pot with a tight-fitting lid. For all you purists out there, this is not intended to duplicate a real slow smoked Texas barbecue brisket. It's something a little different. The chipotle pepper adds a mild smoky flavor and a little heat. (Chipotles are smoked, dried jalapeno peppers. They are available in small cans marinated in adobo sauce.)

- Preparation: Combine all ingredients for the sauce in a bowl. Check the sauce for desired seasoning and adjust to your liking. If you like more heat, add more chipotle peppers. If you like more sourness, add more vinegar. This is an important step when cooking with recipes. Use them as guidelines and feel free to experiment a little. Keep in mind that the onion and mango will add a little sweetness to the finished product when they cook down. Set aside. Season the beef with salt and pepper. In a large non-reactive pot (stainless steel or enameled cast iron) on medium-high heat, brown the beef on all sides in the olive oil. Do this in several batches being sure not to crowd the pan or you will never get the beef browned. You also want a "fond" to form on the bottom of the pan. This is all the browned bits and caramelized juices from the meat and it adds a significant amount of flavor. When all the meat is nicely browned, return the meat to the pan with the sauce. Bring the sauce up to a simmer, scraping the bottom of the pan with a wooden spoon to remove the browned bits. Cover the pot, reduce heat and simmer on low heat. The easiest way to do this is to put the whole covered pot into a preheated 300F degree oven or dump the whole thing into a crock pot set on low. Simmer for at least 2 hours. Check occasionally to make sure the liquid has not evaporated. If you start to run out of liquid, add a little beer or water. The beef should be fork tender. As you check on it, you can begin to break up the meat into shredded chunks with a fork. When it's all done, you should be able to easily pull the meat apart with a fork. NOTE: An electric carving knife is best for slicing brisket. Serve the shredded brisket on white sandwich buns with sliced sweet onions and sliced pickles. You can also serve it as tacos with taco fixings and tortillas. This brisket freezes very well.
TEXAS BBQ BRAISED BEEF BRISKET

- For the rub: Mix the paprika, 1 tablespoon each of salt and black pepper, the brown sugar, and the cayenne. Rub spice mixture all over brisket, wrap tightly, and refrigerate overnight.
- Soak the wood chips in water for at least 30 minutes before grilling. Prepare an outdoor grill with a medium to medium-low fire for indirect grilling.
- For the sauce: Mix the tomato puree, beer, celery, onion, 1/2 cup of the vinegar, the brown sugar, mustard, bacon, garlic, chiles, bay leaves, chili powder, 1 tablespoon salt, and black pepper to taste in a large disposable aluminum pan. Put brisket in the sauce.
- Throw a handful of drained wood chips on the hot coals, put the pan over the cooler side of the grill, and cover so the vent holes are directly over the brisket. Baste meat every 30 minutes, turning occasionally and adding water to the pan as necessary to keep meat partially submerged, until the meat is tender and an instant-read thermometer inserted in the thickest part registers 200 degrees F, about 3 3/4 hours. Replenish the charcoal as needed to maintain a medium to medium-low fire.
- Transfer the brisket to a cutting board, tent with foil, and let rest for 20 minutes. Skim the fat from the braising sauce and stir in the remaining 1/4 cup cider vinegar and salt to taste. Reheat if necessary. Thinly slice brisket across the grain and arrange on a serving platter. Spoon some sauce over the meat and pass the rest at the table.
TEXAS BRISKET

But when we asked our Texan readers what one dish represents their state, the answer was a traditional Texas Brisket - by a landslide. - Trim the fat cap on the brisket to about 1/4 to 1/8 of an inch. Coat the brisket with a light coating of the yellow mustard. Mix the sugar and spices together to form the rub for the brisket. Apply the rub to both sides of the meat.

- 1.Dice brisket into medium size chunks. Season lightly with salt and pepper. 2.Heat a heavy bottom skillet with vegetable oil over high heat. Add brisket chunks to cover the bottom of the pan in one layer. Brown the meat and stir to brown on all sides. Remove meat and transfer to a slow cooker. 3.Add broth to the skillet and bring to a boil. Add to beef in crock pot 4.Add the Chipotle sauce and set at medium. Allow to simmer for 2 ½ to 3 hours until meat is tender and falling apart. Once meat is cooked thoroughly, gently shred with the back of a fork while still in slow cooker. 5.Warm flour tortillas with 2 tablespoon of cheese on each one in microwave or oven. Add ¼ cup of beef with some sauce on each tortilla. Top with 2 tablespoons of shredded lettuce and 1 tablespoon chopped tomatoes. Fold and serve.
- - If serving a family of 4, use remaining brisket for other meals; burritos, nachos or etc. - If you desire, chopped onion and minced garlic can be added when you brown the brisket. - You can omit the vegetable oil and heat or 'render' fat in a large, heavy skillet until it browns and liquid fat covers the bottom of the skillet, then brown the beef in the rendered fat. - An authentic method of thickening the sauce that the beef is cooked in is to crush Mission(R) Round Tortilla Chips in a blender with some of the stock the beef has been cooked in. Add that mixture back to the sauce and heat to thicken. - Serve these tacos with sour cream, chopped cilantro, and a squeeze of fresh lime juice.

- Place chiles in medium bowl. Pour enough boiling water over to cover. Soak until chiles soften, at least 30 minutes and up to 4 hours.
- Preheat oven to 350°F. Sauté bacon in heavy large oven-proof pot over medium-high heat until beginning to brown. Add onions. Reduce heat to medium; cover and cook until tender, about 5 minutes. Sprinkle beef all over with coarse salt and pepper. Add to pot; stir to coat. Set aside.
- Drain chiles, reserving soaking liquid. Place chiles in blender. Add 1 cup soaking liquid, garlic, chili powder, cumin seeds, oregano, coriander, and 1 1/2 teaspoons coarse salt; blend to puree, adding more soaking liquid by 1/4 cupfuls if very thick. Pour puree over brisket in pot. Add tomatoes with juices, beer, green chiles, and cilantro stems. Stir to coat evenly.
- Bring chili to simmer. Cover and place in oven. Cook 2 hours. Uncover and cook until beef is almost tender, about 1 hour. Add squash; stir to coat. Roast uncovered until beef and squash are tender, adding more soaking liquid if needed to keep meat covered, about 45 minutes longer. Season chili to taste with salt and pepper. Tilt pot and spoon off any fat from surface of sauce. DO AHEAD: Can be made 2 days ahead. Cool 1 hour. Chill uncovered until cold, then cover and keep chilled.

- You are going to need a large pit BBQ with a cover to completely cook outside- or you can finish this off in the oven.
- Completely cover the brisket with the steak seasoning- don't be stingy- and pat in well or"rub" as we do here in Texas.
- Seasoning layer should be thick.
- Place brisket over coals located on one end of pit or in BBQ and sear all sides of brisket, watching for flame ups, for 2 hours.
- Use heavy duty foil and completely wrap brisket, placing in a pan that brisket fits comfortably Move pan to the side of the pit without the coals- or to your oven, set at 325 degrees- and let cook for 3 hours, replacing coals to keep temp in your pit at about 325-350 degrees.
- Remove pan and let brisket set for 15-20 minutes before slicing.
- Be sure that you slice against the grain of the brisket or it will be tough.
- There will be lots of wonderful au jus in the foil, be sure to pass that with your brisket and serve with pintos, cornbread and slaw.

CHIPOTLE LIME SMOKED BRISKET
Low, Slow and Yummy! You can't rush this! Impatience is not allowed here. Try not to pierce the meat, use tongs so not to loss any of the juices. Here in NJ you can't get Brisket like you can in Texas. My purchase was 2 flat briskets. They had much of the fat removed in which bacon can be laid over the brisket.

- Mix all the marinade ingredients, squeezing the lime juice and add the lime halves right into a large zip lock bag.
- Place the brisket into the bag. Yes I got both in one gallon bag. If you can`t place in a container that can hold it.
- Remove as much air as you can, seal, and then message the marinade into the meat.
- Refrigerated for at least one day, two days is better!
- Pecan, apple, oak or mesquite are good smoke woods to use, or mix woods is fun. Add water soaked chips or chunks to smoker wood every half hour for the first 2 hours of smoking, Then once each hour for the next 2 or 3 hours. One fist sized chunk, or 1 big handful of chips is enough for one addition.
- Remove the brisket from the fridge.
- The day of smoking remove meat and place the marinated brisket on paper towels and blot dry and set out at room temperature to warm up for an hour. Discard the used brisket marinade.
- Place on a rack in a disposable foil pan fat side up.
- If fat is cut away, place a couple slices of bacon over the brisket.
- If using a smoker, set temperature to 225 degrees. Cook for approximately one hour to seventy five minutes per pound, or until the internal temperature reaches 185 for slicing, or 195 for shredding.
- If grilling, use the indirect grill method, medium to medium high heat.
- Meanwhile mix mop ingredients except for oil saving to mix the oil right before mopping.
- After the first four hours of smoking, baste with the Mop sauce.
- Optional: To increase tenderness, take the brisket out of the smoker, wrap in aluminum foil and place in oven at 180-200 degrees for the last two hours.
- Test the brisket for doneness by inserting a fork into the meat and slightly turning. You'll be able to tell when it's fork tender to serve.
- When done, remove the smoked brisket and let it rest for at least 45 minutes covered with foil before serving.
- Cut the fatty top section away. Slice across the grain.
- Serve with BBQ Sauce, fresh lime slices and cilantro.
- An optional Cool step:.
- Brisket should not be crispy when done smoking, (the half way point) but rather still heavy and have about 1/4 to 1/2 inch of smoke penetration. You can measure this by cutting open a small area and seeing the pink. Remove brisket from grill, double wrap in foil, and then refrigerate for several hours, which will allow the smoke to cure into the meat. At this stage, you can choose to cook the barbecue brisket now, or freeze it for later. If you decide to cook the barbecue brisket, leave in the foil and slow cook in oven for 7 more hours at 225 degrees. If you decide to freeze the brisket, double wrap in freezer bags and be sure to date the bags before putting them in the freezer.

- Preheat grill to 325 degrees, building fire on opposite sides of grill if using charcoal, or on one side or opposite sides if using gas. Season brisket with rub.
- If using charcoal, every hour for first 5 hours add fresh coals and toss 1/2 cup wood chips on each mound of coals. If using gas, place wood chips in smoker box, and preheat until you see smoke (depending on model of gas grill, use all 5 cups at once or 1 cup every hour for first 5 hours).
- Place brisket, fat side up, in foil roasting pan just large enough to hold it. Place pan in center of grill, away from heat.
- Barbecue brisket until nicely browned, cooked through and very tender, for 5 to 7 hours. If brisket starts to brown too much, tent it loosely with foil.
- Transfer cooked brisket to cutting board, cover with foil, and let rest for 10 minutes, reserving pan juices. With sharp knife, trim and discard any large lumps of fat. Slice brisket thinly across grain. Serve with slices of white bread, spooning pan juices over top.
SLOW-COOKED, TEXAS-STYLE BEEF BRISKET

- To make the barbecue sauce, heat the oil in a frying pan, then cook onion and garlic for a few mins until soft. Add the rest of the sauce ingredients to the pan with a good pinch of salt and simmer for 20 mins. Use a hand blender or food processor to whizz to a smooth purée.
- Heat oven to 150C/130C fan/gas 2. Make the rub by mixing all the ingredients together with a pinch of salt. Rub the mix all over the beef and set aside.
- In a large roasting tin, mix the beef stock and ½ the barbecue sauce. Add the brisket to the tin, cover tightly with foil, then cook for 4-5 hrs until the meat is really tender when you push a fork into it. The beef can be prepared the night before - just leave it to cool in the tin covered with foil, but don't refrigerate.
- To finish the beef, get a barbecue fired up and wait until the coals are completely ashen - you want a low, not fierce, heat. Lift the beef out of the roasting tin and place on the barbecue to char. If your barbecue has a lid, close it now. Cook for about 20 mins, turning it carefully with tongs, until lightly charred all over and heated through. Lift onto a board and serve sliced with the remaining barbecue sauce on the side.

- Trim fat on brisket to 1/2-inch thickness. Rub brisket with pepper and salt; place in a large disposable foil pan, fat side up. Refrigerate, covered, several hours or overnight. - Trim the Brisket: Trim the brisket directly from the fridge, cold brisket it easier to trim. Set the brisket in front of you meat side up, fat side down. Remove the large hard piece of fat that separates the point from the fat, trim this down until it is smooth between the point and the flat. Remove any silver skin or excess hard fat from the flat muscle. Trim the thin corner of the flat, this will dry out during cooking since it’s so thin. Flip the brisket over to the fat side and trim the fat down to 1/4 inch thickness. Be careful not to cut down into the meat.
- Prepare the rub: add the ingredients for the rub into a small bowl. Stir to combine, then add into a large shaker, or use a spoon to evenly spread the rub all over the brisket, both sides.
- Smoke: Place the brisket on the smoker, fat side down (my preference because it helps the bark develop nicely over the top) and with the flat (the thin portion) furthest from the heat source. Place the point closest to the heat source. Insert a probe thermometer to monitor the internal temperature, place this in the thickest part of the meat. Close the lid and smoke until the internal temperature reaches 165℉, replacing wood pellets or chips as needed. Takes 6-8 hours. (DO NOT open the smoker the first 2 hours of the cook, this is when the meat will absorb the most smoke flavor).
