5 pounds fresh mussels, scrubbed and debearded
⅓ cup fresh lime juice
1 (13.5 ounce) can unsweetened coconut milk
⅓ cup dry white wine
1 ½ tablespoons Thai red curry paste
1 ½ tablespoons minced garlic
1 tablespoon Asian fish sauce
1 tablespoon white sugar
2 cups chopped fresh cilantro

Steps:

  • In a large stock pot, combine the lime juice, coconut milk, wine, curry paste, garlic, fish sauce and sugar. Stir to dissolve sugar and curry paste and bring to a boil over high heat. Boil for 2 minutes then add mussels. Cover and cook, stirring occasionally, until mussels are opened, 5 to 8 minutes.
  • Remove from the heat and discard any unopened mussels. Pour mussels and liquid into a serving dish and toss with cilantro.

1/2 pound New Zealand green muscles or black muscles (about 6 mussels)
1 cup salt
4 slices bacon, chopped
2 tablespoons sliced shallots
1 tablespoon shaved garlic
1 cup dry white wine
2 tablespoons unsalted butter
1/2 cup Panko (Japanese style breadcrumbs)
1/4 cup Italian (flat-leaf) parsley, finely chopped
Pinch kosher salt

Steps:

  • Scrub muscles under cold running water. Using your fingers, pull out the beards that are visible between the shells. In an 8 quart Dutch oven combine 4 quarts (16 cups) cold water in 1/3 cup of the salt. Add muscles; soak for 15 minutes. Drain and rinse, discarding water. Repeat twice more. Preheat oven to 400°F. In a hot heavy-bottom roasting pan over medium heat cook bacon, shallots, and garlic until bacon is nearly crisp and shallots and garlic are tender; drain fat. Add the mussels, white wine, and 1 tablespoon of the butter to the pan; In a small microwave-safe bowl heat the remaining 1 tablespoon butter in the microwave on high heat for 30 to 60 seconds or until melted; stir in the breadcrumbs, parsley and the pinch of salt. Remove and discard the top shell of the mussels. Return the mussels to the roasting pan. Spoon a little of the breadcrumb mixture on top of each mussel. Place the roasting pan in the oven and bake for five minutes or until breadcrumbs are light brown. Keep an eye on the breadcrumbs as they may brown quickly. Remove from the oven. Drizzle reserved cooking liquid over the muscles to serve.

1/2 cup light stock, such as vegetable, chicken, fish or dashi
1 shallot, minced
2 garlic cloves, sliced or minced
3 kaffir lime leaves, chopped or shredded, or 1 (4-inch) piece lemon grass, minced
1/2-inch piece ginger, minced
20 mussels (about 12 ounces), (preferably cultivated, or cleaned and bearded)
1 fresh chile pepper, red or green, seeded and chopped or sliced finely
1/2 cup boiling water
1 tablespoon lime juice
1 tablespoon mirin
1 tablespoon fish sauce
1/2 cup chopped fresh coriander

Steps:

  • Bring 2 cups of water to the boil. Put the stock, shallot, garlic, lime leaves, and ginger in a saucepan, cover and let it bubble away at a moderate to high heat for 3 to 5 minutes or until you have a thickish, softish mess at the bottom of the pan. Check to make sure it isn't either burning or just getting too dry for comfort, and add a bit of boiling water if it is. Meanwhile, put the mussels in a sink filled with ice-cold water. Chuck away any that don't sink and then, as you remove them, make doubly sure by chucking away any that don't shut when you tap then sharply. I wouldn't expect you to have to throw many away, so don't worry unduly.
  • Add the chile pepper to the mixture in the pan. After about 30 seconds, or just long enough to get them out of the sink, add the mussels and then throw over them 1/2 cup boiling water, and then the lime juice, mirin, and fish sauce mixed together. Cover, give the pan a shake, and leave on a high heat for about 3 minutes, by which time the mussels should have steamed open. Add half the coriander, shake again, and pour into a noodle bowl. Sprinkle over the remaining coriander and eat.

1 T minced ginger
2 T fish sauce
150 ml dry white wine
1 finely sliced red chilli (seeds removed)
3 T sweet chilli sauce
1 cup coarsely chopped fresh basil and mint
1/2 small red pepper, sliced
1/2 small orange pepper, sliced
2 packets Hokkien noodles (soaked for 5 mins in hot water)

Steps:

  • 1. Fry garlic, onion and ginger in oil until golden. 2. Add the fish sauce, wine, and sliced chilli. 3. Add the mussels, cover and simmer for about 5 mins (defrosted) or 8 mins (frozen) 4. Add the chilli sauce, 3/4 cup chopped basil and mint. 5. Add the red and orange pepper and the noodles. 6. Cover and simmer until heated through. 7. Serve and sprinkle over remaining herbs.

1 tablespoon peanut oil or 1 tablespoon canola oil
1 teaspoon sesame oil
3/4 cup green onion, chopped
1 cup thinly chopped red bell pepper
2 medium carrots, sliced
1 small yellow squash, sliced
1 small zucchini, sliced
3 garlic cloves, minced
1/4 teaspoon red curry paste (or more to taste)
1 teaspoon curry powder
1/2 teaspoon cumin
6 kaffir lime leaves, thinly sliced
grated lime zest
2 tablespoons fish sauce
2 -3 tablespoons brown sugar, to taste
1 (14 ounce) can unsweetened coconut milk
1 lb medium shrimp, raw peeled and deveined or 1 lb firm flesh white fish fillet, such as cod
1/2 cup cilantro
lime wedge

Steps:

  • Heat peanut oil in a 12" skillet on Med heat. Add sesame oil, onions, pepper, carrots and sauté about 5 minutes.
  • Add squash and zucchini and sauté another 2-3 minutes.
  • Add garlic and cook 30 seconds.
  • Add curry paste, curry powder, cumin and kaffir leaves or lime zest and stir to combine.
  • Add fish sauce and brown sugar and stir to combine.
  • Stir in coconut milk and bring to a boil.
  • Lower the heat and simmer for 5 minutes.
  • Add the seafood, cover, and cook, shake the pan occasionally. Cook until the mussels are open if you are using them, discard any that have not opened. If you are using shrimp cook until they turn pink. If using fish, cook until fish easily flakes.
  • Stir in 1/4 cilantro and remove from heat.
  • Allow to sit for about 1 minute. Spoon over rice or ladle into bowls and garnish with remaining cilantro.
  • Serve with lime wedges.

2 serrano chile peppers - or to taste seeded, minced
1 cup fish or shrimp stock
2 tablespoons lime juice
2 teaspoons sugar
2 1/2 pounds New Zealand Green Shell Mussels well rinsed in
several changes of water, beards removed, any open mussels discarded
1 cup unsweetened coconut milk
Chopped cilantro leaves
Chopped mint leaves
French bread as accompaniment

Steps:

  • In a large saute pan or saucepan, heat the oil over medium-high heat. Add the onions and cook, stirring, until soft, 2 to 3 minutes. Add the garlic, ginger, and chile peppers, and cook, stirring, until fragrant, 1 minute. Add the stock, lime juice and sugar, and stir well. Add the mussels and bring to a boil. Cover and cook, shaking the pan, until the mussels open, about 2 minutes. Add the coconut milk, cilantro and mint, and stir well to combine. Cook until the coconut milk is warmed through, about 1 minute. Remove from the heat and serve in deep bowls. Serve with French bread. This recipe yields 2 to 4 servings.
