CHEESY STUFFED TOMATOES

Cheesy Stuffed Tomatoes image

You don't have to use mozzarella; other fresh cheeses like ricotta, goat, or feta will work, though you might miss that stretchy molten-cheese effect.

Provided by Andy Baraghani

Categories     Bon Appétit     Summer     Dinner     Side     Appetizer     Tomato     Mozzarella     Vegetarian     Quick & Easy     Raisin     Thyme     Pistachio     Soy Free     Peanut Free     Wheat/Gluten-Free

Yield 4 servings

Number Of Ingredients 8

1/4 cup raw pistachios
4 large heirloom tomatoes (about 2 1/2 lb.)
Kosher salt, freshly ground pepper
1 garlic clove, finely grated
2 Tbsp. chopped golden raisins
1/4 cup extra-virgin olive oil, plus more for drizzling
1 Tbsp. chopped thyme, plus 6 sprigs
8 oz. fresh mozzarella

Steps:

  • Preheat oven to 350°F. Toast pistachios on a rimmed baking sheet, tossing once, until golden brown, 5-8 minutes. Let cool, then finely chop. Reduce oven temperature to 325°F.
  • Slice about 1/2" off the top of each tomato; reserve tops. Using a spoon, scoop out the center of each tomato (save for making sauce). Season insides of tomatoes with salt and pepper. Transfer to a baking dish large enough to hold tomatoes (they can be snug).
  • Mix pistachios, garlic, raisins, 1/4 cup oil, and 1 Tbsp. thyme in a medium bowl; season with salt and pepper. Place about 1 Tbsp. filling in each tomato. Tear mozzarella into bite-size pieces and snuggle into tomatoes. Top with remaining filling (you may need to gently press filling down with your fingers).
  • Replace tomato tops; drizzle with oil. Scatter thyme sprigs over and bake, uncovered, until tomatoes release some liquid and begin to get a little wrinkly on top, 35-45 minutes. Let cool slightly before serving.

TOE AND DON'S CHEESE & CRACKER STUFFED TOMATOES

Toe and Don's Cheese & Cracker Stuffed Tomatoes image

This is one of my beloved family recipes. My Grandmom Toe and Grandfather Don lived outside of Meadville PA. Her family had a restaurant in the 30's and I believe that is where this came from. You can take the pulp of the tomatoes and make a casserole with it and extra cracker mixture if you want. This was my Grandfather's favorite. They are just as good re-heated and it's one of those things that I have to keep eating until it's gone! YUM!

Provided by Kiwiwife

Categories     Lunch/Snacks

Time 1h10m

Yield 7 serving(s)

Number Of Ingredients 4

7 medium tomatoes
80 saltine crackers (two sleeves)
12 ounces sharp cheddar cheese (DON'T sub low fat for this recipe, it's too dry)
4 tablespoons butter

Steps:

  • Cut tops off of tomatoes and scoop out pulp leaving shell.
  • If you want to save the pulp, put it in a casserole dish at this point.
  • Crush saltine crackers (I just do it carefully right in the unopened sleeve) to say pea size, put in bowl.
  • Grate the cheese into the bowl, turning with your hands every few minutes so the cheese doesn't stick together and gets mixed in nicely with crackers.
  • Carefully but firmly stuff tomatoes with mixture.
  • Dot each tomato with a pat of butter.
  • Bake 1 hour or until tomatoes are soft.
  • If making the casserole cut tomato count to six and use extra crumbs on pulp.

One 9-ounce bag baby spinach, steamed

2 tablespoons grated Parmesan
1/2 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1 cup grated gruyere cheese

Steps:

  • Preheat the oven to 400 degrees F.
  • Use a serrated knife to cut the top off of each tomato. Use a grapefruit knife (or a paring knife) to cut out the inside of the tomato. You may need to use your fingers to pull it out after cutting. Use a spoon to remove any leftover seeds or pulp.
  • In a blender or food processor, puree the spinach with the sour cream, Parmesan, salt and pepper. Gently spoon the mixture into each tomato and top with the gruyere. Bake until the cheese is melted and bubbly, 20 to 25 minutes.

BLUE CHEESE STUFFED TOMATOES

Blue Cheese Stuffed Tomatoes image

Provided by Katie Lee Biegel

Categories     appetizer

Time 25m

Yield 4 to 6 servings

Number Of Ingredients 7

1 pint grape tomatoes
Kosher salt and freshly cracked black pepper
2 ounces cream cheese, at room temperature
1/2 cup blue cheese
2 tablespoons finely chopped fresh chives
4 slices crispy cooked bacon, finely chopped
1 tablespoon hot honey (or 1 tablespoon honey mixed with a dash of hot sauce)

Steps:

  • Slice the top third (stem side) off each tomato. Cut a small slice off each bottom so that the tomatoes are flat and able to stand up. Using a melon baller or small spoon, remove the inside of each tomato to hollow out the center. Place the tomatoes on a plate or platter. Sprinkle the tomatoes with 1/4 teaspoon salt.
  • Mash the cream cheese in a bowl with a rubber spatula until it is soft and malleable. Gently fold in the blue cheese, being careful not to overmix and break the blue clumps. Season with pepper. Use two small spoons to fill the tomatoes with the blue cheese mixture. (How much will depend on the size of the tomato; small tomatoes should get about 1 teaspoon of the mixture. You can also transfer the mixture to a pastry bag or resealable plastic bag with the corner cut off and pipe the cheese mixture into each tomato.)
  • Toss the chives and bacon together in a small bowl. Top each tomato with the mixture. Drizzle hot honey over the entire plate. Serve.
