ROASTED EGGPLANT RAGU WITH POLENTA



Roasted Eggplant Ragu with Polenta image

Easy roasted eggplant ragu with tomatoes and roasted peppers over a bed of golden yellow creamy polenta. Rich and meaty but without the actual meat. Legit!

2 eggplants
3 red bell peppers
28 oz can San Marzano Tomatoes ((lightly crushed))
8 oz mushroom mix (, sliced)
1/2 yellow onion (-diced)
5 cloves garlic (-minced)
1 tsp smoked paprika
1 pinch red pepper flakes
2 tsp oregano
1/4 cup red wine ((optional))
1 pinch sea salt ((or to taste))
1/4 cup fresh basil
6 cups water
1 cup yellow cornmeal
1/2 cup cashew milk ((optional))
1 leaf bay

Steps:

  • Preheat a cast iron skillet over medium high flame and roast the peppers until charred on all sides. Transfer to a bowl and cover with a lid or towel and allow to cool.
  • Use a knife to poke the eggplant in a few places to help steam escape while roasting so the eggplants won't explode in your beautiful kitchen. Please poke them :-)
  • You can use the same skillet you roasted the peppers on to cook the eggplants or broil both the peppers and eggplants until charred. Allow them to charr nicely on all sides then transfer to a bowl until cool enough to handle.
  • Use your hands to remove the peels from both the roasted peppers and eggplants and discard the core.
  • Transfer to a cutting board and dice the peppers. Finely chop the eggplant and set aside until needed. (Alternatively you can use a food processor if you prefer a smooth texture, we like it more rustic).
  • Preheat a large skillet or pot over medium flame. Add a splash of water and saute the onion until translucent. Stir in the garlic and red pepper flakes and cook another minute or so until you can smell the fragrance.
  • Stir in the smoked paprika, oregano and mushrooms and cook a few minutes until most of the liquid has evaporated. Add in the roasted peppers, eggplant and the San Marzano tomatoes together with the red wine. Give everything a good stir and bring to a simmer. Cover with a lid and cook for 45 minutes on low flame until the sauce has reduced and thickened to your liking. Season to taste with the sea salt.

1/2 cup grated pecorino
3 tablespoons extra-virgin olive oil
2 teaspoons chopped oregano
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 cup thinly sliced red onion
1 cup halved cherry tomatoes
1 cup chopped heirloom tomatoes
1 1/4 cups tomato puree
1/3 cup extra-virgin olive, plus more for drizzling
1 teaspoon soy sauce
1/4 teaspoon sriracha
5 large cloves garlic, thinly sliced
2 large eggplants, cut vertically and flesh scooped out (reserve eggplant skin)
1 cup grated or finely chopped fresh whole milk buffalo mozzarella (or other mozzarella cheese)

Steps:

  • For the gratin topping: Combine the panko, pecorino, oil, oregano salt and pepper in a medium bowl. Mix until the crumbs are evenly coated with the oil.
  • For the eggplant and tomatoes: Preheat the oven to 375 degrees F. Combine the onions, cherry tomatoes, heirloom tomatoes, tomato puree, oil, soy, sriracha, garlic and eggplant flesh in a large bowl. Add half of the gratin topping. With your hands or two spoons, gently mix the vegetables and topping until thoroughly combined.
  • Put the scooped-out eggplants in a baking dish. Pour the eggplant and tomato mixture into the eggplants and top each with the remaining gratin topping. Sprinkle the mozzarella over the top. Bake, uncovered, until the eggplants are tender and the tops are lightly browned, 45 to 60 minutes. If after 30 minutes the tops are browning too rapidly, cover the dish with foil for the remaining cooking time.
  • Remove from oven and let rest for 10 minutes before serving. Drizzle with olive oil to taste.

  • In same skillet, heat remaining 1/4 cup olive oil over medium-low heat. Cook onions in oil about 10 minutes, stirring occasionally, until very tender. Add garlic and cook 30 seconds; add celery and cook 2 to 3 minutes. Add tomatoes; cook and stir 2 minutes. Add cooked eggplant, 1/2 teaspoon salt and the pepper; heat to a slow simmer. Cover; cook 20 minutes. Stir in parsley.

3 tablespoons olive oil
1 small onion, halved and sliced
4 medium tomatoes, sliced
¼ cup balsamic vinegar

salt and pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Season the eggplant slices with salt, and let stand for about 10 minutes. Drain off liquid.
  • Heat 3 tablespoons of olive oil in a large skillet over medium-high heat. Quickly brown the eggplant slices on each side.
  • Place a layer of the eggplant slices in an 8 inch square baking dish or casserole dish. Place some tomato slices over the eggplant, and then a few slices of onion. Repeat layers until you run out of eggplant. Pour balsamic vinegar over everything. In a small bowl, stir together the bread crumbs and remaining olive oil. Season with salt and pepper. Spread in a layer over the vegetables.
  • Bake for 25 to 30 minutes in the preheated oven, until the top is golden brown and the eggplant is tender.

2 large eggplants
1 green bell pepper
1 sweet red or Corni di Toro pepper
1 red onion
1 small zucchini or courgette squash
4 cloves garlic (chopped)
Vegetable oil for frying
5 large tomatoes (peeled and cut into large chunks)
2 tbsp. tomato paste
1 tsp. sugar
1 tsp. salt, more or less to taste
1/4 tsp. black pepper, more or less to taste
Garlic yogurt for garnish

Steps:

  • Prepare the eggplant: Cut off both ends and using the edge of a vegetable peeler or a paring knife, remove the skin in alternating strips going from top to bottom. Do this gently, saving as much flesh as you can.
  • Cut the eggplant into bite-sized rectangular chunks about 2 inches long. Put the chunks of eggplant in a large mesh strainer or colander and salt well, turning with your hands to salt all sides. Let the salted eggplant rest for about 15 minutes while you prepare the other vegetables. This removes the bitterness.
  • Coarsely dice the peppers, red onion, and zucchini.
  • Once the vegetables are ready, pour about 2 inches of oil in a deep frying pan or saucepan and turn the heat on high. While the oil is heating, wash the eggplant in the strainer with cold water, turning it with your hands, until the salt is removed. Drain it well and blot off the extra water with paper towels before you fry them.
  • Fry the eggplant until tender and just beginning to brown at the edges. Do the same with the squash. Strain out the fried vegetables and drain them on a thick layer of paper towels. Let them sit for several minutes to make sure as much oil as possible drains away.
  • In the meantime, put 2 tablespoons of olive oil in a skillet and fry the onion, garlic, and peppers until tender.
  • Add the tomatoes, tomato paste, sugar, salt, and pepper. Cover and reduce the heat to low. Let the sauce simmer until the tomatoes are soft and begin to break down.
  • Remove the lid, stir it well, and let the sauce simmer until most of the liquid is reduced. It should be the consistency of jarred pasta sauce.
  • In a mixing bowl, add the eggplant, squash, and tomato sauce and stir together well. Put the şakşuka in a serving dish and chill for several hours. Just before serving, spoon generous amounts of garlic yogurt over the top.

2 medium eggplants, halved
2 tablespoons salt
2 tablespoons olive oil
1 large onion, chopped
2 garlic cloves, minced
1 (15 ounce) can diced tomatoes, drained
1 (15 ounce) can chickpeas, rinsed and drained
2 tablespoons capers
1 teaspoon sugar
1/4 cup parsley, chopped

Steps:

  • Scoop out center and seeds of eggplant halves. Cut eggplants into 3/4 inch dice. Toss with salt in bowl and let it stand for at least 20 minutes. Drain off the fluid that collects, rinse well, and pat dry.
  • Heat olive oil in large saucepan over medium heat. Add onion, and saute until softened (about 5 minutes.) Add garlic, and cook 1 minute more, or until fragrant. Stir in tomatoes, chickpeas, and eggplants. Reduce heat to medium-low, and cook 15 minutes, or until eggplants are tender but not mushy.
  • Stir in capers and sugar, and cook 2 minutes more. Fold in parsley, and season with black pepper.

2 teaspoons finely minced garlic
1/2 teaspoon rosemary
1/2 teaspoon oregano

6 tablespoons olive oil
1 tablespoon finely chopped parsley

Steps:

  • Preheat oven to 450 degrees.
  • Trim off each end of eggplant. Cut eggplant lengthwise in half. Place each half, cut side down, on flat surface and cut crosswise into half-moon shapes, each about one-third-inch thick. There should be a total of about 34 slices.
  • Trim off ends of tomatoes and cut away the cores. Cut tomatoes crosswise into slices, each about one-inch thick. There should be about 32 pieces. Alternate tomato slices with eggplant slices and arrange them compactly in a baking dish.
  • Combine garlic, rosemary and oregano and sprinkle over layered eggplant. Sprinkle with salt and pepper and dribble oil over all.
  • Place dish in the oven and bake 30 minutes. Baste the layered eggplant with any juices that have accumulated around it. Sprinkle with parsley and serve.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a plastic bag, combine the flour, bread crumbs and Italian seasoning. Shake to mix. In a shallow bowl, whisk together the eggs and water. Heat the oil in a large skillet over medium-high heat. There should be enough oil to thinly coat the bottom of the skillet. Dip the eggplant slices in egg, then place in the bag and shake to coat. Fry the slices in the skillet until golden brown on each side. Remove, and drain on paper towels.

1 1/2 cups water
1 cup quinoa
1 large egg, lightly beaten
4 to 5 tablespoons olive oil, divided
For topping
1 1/2 pounds eggplant, cut into 1/2-inch cubes
1 small onion, finely chopped
2 teaspoons finely chopped garlic
1/2 teaspoon dried oregano
3 tablespoons olive oil
1 cup grape or cherry tomatoes, halved
1/2 cup drained bottled roasted red peppers, rinsed and chopped
3/4 cup water
1 tablespoon chopped flat-leaf parsley
1/4 pound smoked mozzarella, diced (1 cup)

Steps:

  • Make quinoa cakes:
  • Bring water and 1/2 teaspoon salt to a boil in a heavy medium saucepan.
  • Meanwhile, wash quinoa in 3 changes of water in a bowl, then drain well in a fine-mesh sieve.
  • Stir quinoa into boiling water and return to a boil, then simmer, covered, until quinoa is dry and water is absorbed, 20 to 30 minutes. Remove from heat and let stand, covered, 5 minutes. Transfer to a large bowl and cool, stirring occasionally, 10 minutes, then stir in egg.
  • Line a baking sheet with plastic wrap and lightly brush with oil. Lightly oil a 1-cup dry-ingredient measure. Pack enough quinoa into measure with a rubber spatula to fill it two-thirds full. (If spatula becomes sticky, dip in water.) Unmold onto baking sheet and gently pat quinoa into a 4-inch-wide patty with spatula. Make 3 more quinoa cakes, brushing measure with oil each time. Chill cakes, uncovered, at least 15 minutes.
  • Make topping while quinoa cooks and chills:
  • Toss eggplant with 1 teaspoon salt in a colander and drain 30 minutes. Squeeze handfuls of eggplant to extract liquid, then pat dry.
  • Cook eggplant, onion, garlic, oregano, and 1/4 teaspoon each of salt and pepper in oil in a 12-inch heavy skillet over medium heat, covered, stirring occasionally, until softened, about 5 minutes. Stir in tomatoes, roasted peppers, and water and simmer, covered, stirring occasionally, until eggplant is very tender and mixture is thick (if dry, thin with a little water), about 10 minutes.
  • Cook quinoa cakes:
  • Heat 2 tablespoons oil in a 12-inch nonstick skillet over medium heat until it shimmers. Carefully add quinoa cakes and cook, turning once carefully and adding remaining 2 to 3 tablespoons oil, until crisp and golden, 8 to 10 minutes total (pat cakes to reshape with cleaned rubber spatula while cooking if necessary). Transfer to plates.
  • To serve:
  • Return eggplant ragù to a simmer and stir in parsley and half of mozzarella, then simmer, stirring, until cheese just begins to soften, about 30 seconds. Spoon over quinoa cakes, then sprinkle with remaining mozzarella.

1 lb plum tomatoes, quartered lengthwise and seeded

1 1/2 (3/4-lb) sugar pumpkins or butternut squash, cut into 3/4-inch wedges and seeded
1 1/2 cups water
1 cup dry white wine
1/2 lb fresh or frozen edamame (soybeans in the pod; 1 1/2 cups) or 2/3 cup fresh or frozen shelled lima beans
3 large eggplants
3/4 lb fresh chanterelle or shiitake mushrooms, trimmed (discard stems from shiitakes)
1 tablespoon minced garlic
1 1/2 teaspoons minced fresh rosemary
1 tablespoon balsamic vinegar

Steps:

  • Roast shallots, tomatoes, and pumpkin:
  • Preheat oven to 400°F.
  • Toss shallots and tomatoes with 3 tablespoons oil in a large roasting pan and season with salt. Roast until tomatoes are tender but not falling apart, about 25 minutes. Transfer tomatoes only to a large bowl.
  • Add pumpkins with salt to taste to shallots, tossing to coat with oil in pan. Roast until pumpkins are just tender, about 30 minutes, then add vegetables to tomatoes.
  • Reduce oven temperature to 200°F.
  • Straddle roasting pan across 2 burners. Add water and 1/2 cup wine and deglaze by boiling over moderately high heat, stirring and scraping up any brown bits. Reserve liquid.
  • Cook soybeans while vegetables roast:
  • Cook soybeans in boiling salted water until just tender, about 1 minute (3 minutes for lima beans), then drain. When cool enough to handle, shell soybeans, discarding pods.
  • Prepare eggplant:
  • Cut 2 (2-inch-thick) crosswise slices, or "steaks," from thickest part of each eggplant and season generously with salt and pepper. (Reserve remaining eggplant for another use.) Brown 3 eggplant steaks in 3 tablespoons oil in a 12-inch nonstick skillet over moderate heat, about 5 minutes on each side.
  • Add 1/4 cup wine to skillet and simmer, covered, turning once, until eggplant is very tender and wine is absorbed, about 5 minutes total. Transfer to a small roasting pan.
