Tortilla Crusted Fish Tacos with Avocado Crema image

Tortilla Crusted Fish Tacos with Avocado Crema are a healthy and easy weeknight meal you can make in just 20 minutes with your Airfryer! Crispy Tortilla Crusted Tilapia is layered in a grilled corn tortilla with avocado crema and fresh tomatoes for a flavorful dinner recipe the whole family will love.

6 Corn tortillas
2 Tortilla crusted tilapia fillets
1 cups tomatoes chopped
1/2 bunch green onions chopped
5 oz. container nonfat plain Greek yogurt
1/2 avocado diced
1/2 lime, juiced
1/2 tsp. chili powder
1/2 tsp. garlic powder
1 tsp. cumin

Steps:

  • To get started, pop your fish fillets in your Airfryer and bake them at 390° for 15-18 minutes, until they are nice and crispy. If you don't own an Airfryer you can bake the fish fillets according to the package directions (I bumped up my temperature to 400° for a crunchier outside).
  • Meanwhile, to prepare the avocado cream, combine the Greek yogurt and avocado so it is smooth. To that, add the lime juice, chili powder and garlic powder. Mix well and set aside.
  • Throw your tortillas in a heated saute pan with a little bit of pan spray and cook on high on each side for 30-60 seconds. This helps to get some browned color on them and improves the texture of the tortilla by giving it a chewy bite.
  • Remove your fish from the oven when it is done and slice into 1/4" strips.
  • To assemble your tacos, start by spreading a generous amount of avocado cream on each tortilla, topping with 1/3 of a fish fillet and diced tomatoes and green onions. Serve immediately.

8 Old El Paso™ flour tortillas for soft tacos & fajitas (6 inch; from 8.2-oz package)
8 Old El Paso™ taco shells (from 4.6-oz package)
1 bag (12 oz) broccoli slaw mix (about 4 cups)
1/3 cup light lime vinaigrette dressing or vinaigrette dressing
1/4 cup chopped fresh cilantro
1 package (1 oz) Old El Paso™ taco seasoning mix
4 tilapia or other mild-flavored, medium-firm fish fillets (about 1 lb)
1 tablespoon vegetable oil
1 cup prepared guacamole
1 cup crumbled cotija or feta cheese, if desired

Steps:

  • Heat tortillas and taco shells as directed on package. In medium bowl, toss broccoli slaw mix, dressing and cilantro; set aside.
  • In shallow dish, place taco seasoning. Coat both sides of fish with taco seasoning. In 12-inch nonstick skillet, heat oil over medium-high heat. Cook fish in oil 6 minutes, turning once, or until fish flakes easily with fork. Divide fish into 8 pieces.
  • Spread each flour tortilla with 2 tablespoons guacamole. Place hard taco shell on center of flour tortilla. Using slotted spoon, spoon about 1/4 cup slaw into each hard taco shell. Place 1 fish piece over slaw in each taco shell. Gently fold tortilla sides up to match taco shell sides. Top with 1 tablespoon cheese.

¼ cup sour cream
¼ cup mayonnaise
¼ teaspoon ground chipotle pepper
1 pinch salt
1 dash hot sauce, or to taste
1 tablespoon fresh lime juice, or to taste
¾ pound rockfish
2 teaspoons olive oil
½ teaspoon kosher salt
⅛ teaspoon cumin
⅛ teaspoon ground chipotle pepper
¼ teaspoon chili powder
2 cups very thinly sliced green cabbage
¼ teaspoon kosher salt
2 teaspoons fresh lime juice
1 pinch dried Mexican oregano
4 (6 inch) flour tortillas
2 teaspoons olive oil, divided
2 tablespoons thinly sliced radishes
1 tablespoon thinly sliced jalapeno pepper
2 tablespoons torn cilantro leaves
1 medium lime, cut into wedges

Steps:

  • Whisk sour cream, mayonnaise, chipotle powder, salt, hot sauce, and lime juice for sauce in a bowl until smooth. Taste and adjust as needed. Refrigerate until needed.
  • Cut fish into eight 1 ½-inch pieces.
  • Transfer fish to a bowl; add olive oil, salt, cumin, chipotle pepper, and chili powder. Toss with tongs, thoroughly but gently, until coated.
  • Let fish marinate in the refrigerator for 15 minutes.
  • Meanwhile, preheat the oven to 500 degrees F (260 degrees C). Line a baking sheet with parchment paper.
  • Toss cabbage, salt, lime juice, and dried oregano together in a bowl with your hands until coated.
  • Place 2 tortillas on the prepared baking sheet and coat lightly on both sides with some olive oil. Place 3 ounces of sliced fish on each tortilla, on only one side so that you can fold the tacos after baking.
  • Bake in the center of the preheated oven until fish flakes easily with a fork and tortillas are browned and puffy, 7 to 8 minutes.
  • Fold tacos in the center of each tortilla to crease. Top with cabbage, followed by jalapenos, radishes, and sauce. Sprinkle with cilantro and serve with lime wedges to squeeze over. Repeat for remaining 2 tacos.

I'm not fond of fish, but even I like this dish. Tilapia is mild, and the spicy crust is very appealing. I like to make the crumb crust in bulk and freeze in meal sized amounts. Then this becomes a super quick weeknight meal.

6 corn tortillas, torn in pieces
1 jalapeno pepper, seeded and coarsely chopped
1 teaspoon lime juice
1/4 cup fresh cilantro
1/2 teaspoon chili powder
1/4 teaspoon ground cumin
1 teaspoon seasoning salt
1 egg, beaten

Steps:

  • Preheat oven to 375°F Coat a baking sheet with cooking spray.
  • Place tortilla pieces, pepper, lime juice, cilantro and spices in blender. Pulse until the mixture is uniform small crumbs. Spread on plate.
  • Beat egg in shallow dish.
  • Dip each fillet in egg, then in crumbs, patting crumbs to adhere. Place on baking sheet.
  • Bake until fish flakes, about 15 minutes depending on thickness of fillets.
