1-1/2 pounds lean ground turkey
8 onion rolls, split
8 lettuce leaves

Steps:

  • In a large bowl, combine the first eight ingredients. Crumble turkey over mixture and mix well. Shape into eight 1/2-in. thick patties., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill burgers, uncovered, over medium heat or broil 4 in. from the heat for 8-10 minutes on each side or until a thermometer reads 165° and juices run clear. Serve on rolls with lettuce and tomato.

Try to use both white and dark meat for this, just using white meat will create a very dry turkey burger. Plan ahead the turkey burgers have to marinade overnight before cooking or grilling them. Serving and cooking times are only estimated depending on the size of you burgers.

3 onions, chopped
2 tablespoons minced fresh garlic
1/2 teaspoon cayenne pepper (or to taste)
1 teaspoon dried basil
1 teaspoon dried oregano
3 -5 tablespoons olive oil
1 1/2 lbs ground turkey (use white and dark)
1/4 cup favorite barbecue sauce
3 tablespoons quick-cooking oats
1/2 cup grated cheddar cheese or 1/2 cup mozzarella cheese, packed
1/3 cup grated parmesan cheese
3 tablespoons milk (or use half and half cream)
2 teaspoons seasoning salt
1 teaspoon black pepper (add in more if desired)
1/3 cup dried breadcrumbs (you will most likey need more)

Steps:

  • In a large skillet, saute the onions with cayenne, oregano and basil for about 4-5 minutes, then add in the garlic and saute for another 2 minutes; transfer to a bowl to a small bowl or plate to cool completely.
  • In a large bowl mix together the turkey, BBQ sauce, oats, shredded cheese, Parmesan cheese, milk, seasoning salt, pepper, then add in the cooled onion/garlic mixture.
  • Add in about 1/3 cup dried bread crumbs.
  • Using clean hands mix completely adding in more dry breadcrumbs if the mixture is too moist, add enough to just shape into patties.
  • Shape into about 9 or 10 patties.
  • Cover with plastic wrap and chill overnight.
  • When ready to cook fry, broil or grill the turkey burgers, cook for about 6 minutes on each side, or until done and golden brown. *NOTE* cooking time will depend on the size of your patties, cook until a thermometer inserted in the center reads 165 and the meat is no longer pink.

4 (1-inch) chunks blue cheese
1 tablespoon olive oil

Steps:

  • In a large bowl, combine turkey and poultry seasoning. Mix well to combine. Shape mixture into 12 patties, each about 1 inch thick. Press blue cheese into the center of 4 of the patties, covering cheese with turkey. Heat oil in a large skillet or griddle over medium-high heat. 1 heaping tablespoon clover honey
1 tablespoon fresh orange juice
1/2 teaspoon lemon zest

1 1/2 pounds 90-percent lean, freshly ground turkey (not all white meat), chilled

Steps:

  • For the Meyer lemon-honey mustard: Whisk together in a small bowl the mustard, honey, orange juice, lemon zest, lemon juice and season with salt and pepper. Cover and refrigerate for at least 30 minutes and up to 24 hours to allow the flavors to meld.
  • For the burgers: Preheat the grill to high. Form the meat into four 6-ounce burgers. If you are not going to cook right away, keep the burgers cold in the refrigerator. Sprinkle the burgers on both sides with salt and pepper. Grill until cooked through, 3 to 4 minutes on each side. During the last minutes of cooking, add 2 slices of cheese to each burger, cover the grill and let the cheese soften slightly, about 1 minute. Extra-virgin olive oil, for coating the pan
1 onion, cut into 1/4-inch dice
Kosher salt
2 cloves garlic, smashed and finely chopped
1 1/2 pounds ground turkey
One 8-ounce can water chestnuts, coarsely chopped (not too fine--they add GREAT texture)
1/4 cup soy sauce, plus more if needed
1/2 bunch of fresh cilantro, leaves finely chopped
1-inch piece of fresh ginger, peeled and grated
2 tablespoons sambal oelek or Asian chili paste, optional (but recommended)
1/2 cup mayonnaise
2 teaspoons sambal oelek
4 burger buns (I like the seeded ones)
4 slices American of Cheddar cheese (American melts better)
4 slices beefsteak tomatoes
4 slices red onion
4 leaves butter lettuce

Steps:

  • For the turkey burgers: Coat a large saute pan with olive oil and toss in the onion. Season with salt and bring the pan to medium heat. Cook the onion until soft and very aromatic, 7 to 8 minutes. Add the garlic and cook for another 1 to 2 minutes. Turn off the heat and let cool.
  • In a large mixing bowl, combine the turkey, water chestnuts, soy sauce, cilantro, ginger, sambal if using and the cooked onions and garlic. (NOTE: Save the onion pan to cook the burgers in later!) Add 1/4 to 1/2 cup water to the mix--this will keep the burgers really moist! Use your hands to squish the mixture until everything is really well combined.
  • Make, cook and eat a little tester patty to be sure the turkey is really delicious. If the seasoning isn't just right, add a little more soy or a sprinkey-dink of salt. When you're confident the burger mix is perfectly seasoned, form it into 4 equal patties.
  • With a paper towel, wipe out the saute pan you used to cook the onion, coat the pan with fresh olive oil and bring it to medium-high heat. Add the burgers, being sure not to crowd the pan--if you need to work in batches, knock yourself out. Cook the burgers for 5 to 6 minutes on each side. The burgers should be browned and cooked through when done. (If working in batches, keep the first batch warm in the oven at 200 degrees F while cooking the second batch.)
  • For the toppings: Mix together the mayo and sambal oelek in a small bowl. Toast the burger buns and top with the burgers. Garnish as desired with the cheese, tomato, red onion, lettuce and spicy mayo.

  • Combine all the ingredients in a blender or food processor and blend until smooth. (If you don't have a blender or food processor, just stir everything together in a bowl-the texture will be different but it will still be delicious.)
  • Burgers and Assembly
  • In a large bowl, combine the ground turkey, cheese, Worcestershire, salt, and pepper. Mix together with your hands until just combined-you don't want tough burgers.
  • Divide the meat mixture into four portions and roll each into a ball. Place each ball on a large plate and squish it down into a flat patty. Press your thumb into the center to create a little well. This will help the burgers keep their flat shape.Spray the grill with olive oil and heat it to medium heat. Grill the patties on direct heat for 5 minutes, covered and undisturbed. Flip once, cover, and grill for another 4 to 6 minutes, until cooked through.To assemble the burgers, smear the caramelized onions on the bottom half of each roll or bun. Top with romaine and place a cooked patty on each. Add avocado slices and jalapeño rings, if using. Smear the top halves of the buns with Salsa Ranch Dip, then place them on the burgers and serve.

Yes, there is a turkey burger that my red meat eating boys will eat! After several attempts of trial and error - I have come up with a flavorful, juicy burger that has made it into our regular rotation of meals. Makes 5-6 large, thick burgers. Watch closely when cooking for the first time, because the ricotta - which adds the extra moisture - can burn easily.

2 lbs ground turkey (I use 7% fat rather than fat free)
3/4 teaspoon salt
1/2 teaspoon cracked black pepper
4 teaspoons Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
4 teaspoons Dijon mustard
2/3 cup ricotta cheese

Steps:

  • Mix all ingredients together with hands.

1/2 cup finely grated Gruyere cheese
4 thinly sliced scallions
1/4 cup dried breadcrumbs
1/4 cup Dijon mustard
1 clove garlic, minced
Coarse salt and freshly ground pepper
Vegetable oil, for grill
4 hamburger buns
Sliced tomatoes, red or white onion, ketchup, mustard, mayonnaise, and lettuce leaves, for serving

Steps:

  • Heat grill to high. In a medium bowl, use a fork to gently combine ground turkey with cheese, scallions, breadcrumbs, mustard, and garlic. Season with salt and pepper. Gently form mixture into four 1-inch-thick patties.
  • Lightly oil grill. Place patties on the hottest part of the grill; sear until browned, 1 to 2 minutes per side. Move the patties to cooler part of the grill; continue grilling until cooked through, 5 to 10 minutes per side.

1 large shallot, finely chopped (1/4 cup)
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 1/2 pounds ground turkey (not labeled "all breast meat")
5 ounces extra-sharp Cheddar, cut into 4 (1/2-inch-thick) slices
4 hamburger or kaiser rolls
For sun-dried tomato mayonnaise
1/4 cup oil-packed sun-dried tomatoes, drained
1 tablespoon water
2 teaspoons cider vinegar
1/4 teaspoon salt
1/4 cup mayonnaise
Accompaniment: lettuce leaves

Steps:

  • Make burgers:
  • Put oven rack in middle position and preheat oven to 350°F.
  • Cook shallot in oil with salt and pepper in an 8-inch skillet over moderate heat, stirring occasionally, until golden, 2 to 3 minutes, then transfer to a bowl. Add turkey and mix gently but thoroughly.
  • Turn out turkey mixture onto a sheet of wax paper and divide into 8 equal mounds. Pat 1 mound into a 4-inch patty and top with 1 piece of cheese, then put a second mound on top, patting it onto other patty to enclose cheese. Pinch edges together to seal and shape into a single patty. Make 3 more burgers in same manner.
  • Heat an oiled well-seasoned ridged grill pan over moderately high heat until hot but not smoking, then grill burgers, turning over once, until just cooked through (no longer pink), 8 to 9 minutes total.
  • While burgers are cooking, heat rolls on a baking sheet in oven until crusty, about 5 minutes. Transfer rolls to a rack to cool slightly.
  • Make mayonnaise and assemble burgers:
  • Purée tomatoes with water, vinegar, and salt in a blender or mini food processor, scraping down sides as necessary, then blend in mayonnaise.
  • Cut rolls in half horizontally (if necessary) and spread cut sides with tomato mayonnaise. Serve burgers on rolls with lettuce.
