TOMATOES STUFFED WITH CORN AND BLACK BEANS

Tomatoes Stuffed with Corn and Black Beans image

Meaty beefsteak tomatoes are easily found in most supermarkets and are the go-to choice for thick slices on burgers or BLTs. When stuffed and baked, as here, they are meltingly delicious. Don't waste a bit of these amazing tomatoes -- use the insides you scoop out here to make a simple Spanish appetizer called Pan con Tomate, below.

Provided by Martha Stewart

Categories     Food & Cooking     Quick & Easy Recipes

Time 30m

Number Of Ingredients 10

4 beefsteak tomatoes
2 tablespoons olive oil, divided
3/4 cup corn kernels (from 1 large ear)
2 scallions, white and green parts separated and thinly sliced
1/2 to 1 small jalapeno, seeded and finely chopped
1 cup drained, rinsed black beans
1/2 cup shredded sharp cheddar (2 ounces), divided
1 cup fresh breadcrumbs, divided
1 tablespoon lime juice
Salt and pepper

Steps:

  • Preheat oven to 450 degrees. Slice top 1/2 inch from tomatoes and scoop out flesh (reserve for another use; see below). In a medium skillet, heat 2 teaspoons oil over medium. Add corn and scallion whites and cook until crisp-tender, 3 minutes. Transfer to a medium bowl and stir in jalapeno, beans, 1/4 cup cheddar, 1/2 cup breadcrumbs, and lime juice. Season with salt and pepper.
  • Coat an 8-inch square baking dish with 1 teaspoon oil. Brush tomato skins with 1 teaspoon oil, season all over with salt and pepper, and place in dish. Fill tomatoes with corn mixture. Combine remaining 1/4 cup cheddar, 1/2 cup breadcrumbs, and 2 teaspoons oil, season with salt and pepper, and divide among tomatoes. Tent dish loosely with foil and bake 10 minutes. Uncover and bake until tomatoes are soft and breadcrumbs are deep golden, about 5 minutes more.

SIMPLE CORN STUFFED TOMATOES

Simple Corn Stuffed Tomatoes image

Something I threw together when I was given some fresh tomatoes out of a neighbor's garden. Delicious! If you bake this, put the tomatoes over a muffin pan so they can drain into the muffin cups, or they'll be very watery. We prefer the corn hot but the tomato crisp and raw. This recipe can be easily made vegan by subbing margarine for butter or leaving it out altogether, and skipping the cheese.

Provided by JeannaLW

Categories     Corn

Time 5m

Yield 4 tomato halves, 2 serving(s)

Number Of Ingredients 8

2 tomatoes
1 cup corn
1 tablespoon butter
1/4 teaspoon italian seasoning
1/4 teaspoon garlic, minced or 1/4 teaspoon garlic powder
1/2 teaspoon dried basil or 1 teaspoon fresh basil, chopped
salt & pepper
mozzarella cheese (optional)

Steps:

  • Cut tomatoes in half, then scoop out seeds so you are left with tomato "boats" -- don't scrape the meat off the sides.
  • Salt the insides of the tomato boats, then set cut side down to drain on a plate or paper towels.
  • In a bowl, place the corn, butter, garlic, and Italian seasoning. Salt & pepper to taste.
  • Place bowl in microwave for about two minutes, until corn is hot and butter is melted. Stir well.
  • Turn tomato boats right side up, and fill with corn mixture. Top with basil and, if desired, a bit of shredded Mozzarella cheese.
  • Serve, OR, bake at 375 degrees for about 20 minutes before serving.

SWEET CORN, ZUCCHINI, AND TOMATOES WITH BULGUR

Sweet Corn, Zucchini, and Tomatoes with Bulgur image

Grain salads are ready in a flash and substantial without weighing you down-a perfect choice for lunch. This colorful tumble of tomatoes, corn, and squash invites improvisation: Swap red quinoa or brown basmati rice (cooked and cooled) for the bulgur, and fold in anything delicate and leafy in place of the arugula and radish sprouts.

Provided by Sarah Copeland

Categories     Food & Cooking     Salad Recipes

Time 35m

Yield Serves 4 to 6

Number Of Ingredients 12

1 cup medium-grind bulgur
Kosher salt and freshly ground pepper
2 tablespoons extra-virgin olive oil, plus more for drizzling
2 purple scallions, chopped (1/2 cup)
1 clove garlic, thinly sliced
2 medium green or yellow zucchini (12 ounces), halved lengthwise and cut into 1/4-inch-thick slices (3 cups)
2 tablespoons unsalted butter
2 cups fresh corn kernels (from 2 ears)
1 to 2 beefsteak tomatoes (12 ounces), cored and chopped into 1-inch pieces
2 cups packed baby arugula
1/2 cup packed radish sprouts (optional)
Parmigiano-Reggiano, for serving (optional)

Steps:

  • Combine bulgur, 1 1/2 cups water, 1/4 teaspoon salt, and a drizzle of oil in a small saucepan. Bring to a simmer, then reduce heat to low. Cover and cook until tender, about 12 minutes. Remove from heat; let stand, covered, 10 minutes. Fluff with a fork and transfer to a large bowl.
  • Meanwhile, heat oil in a large skillet over medium-high. Add scallions and cook, stirring, until fragrant, about 2 minutes. Add garlic and zucchini; season with salt and cook, stirring occasionally, until golden and softened, 6 to 8 minutes. Add butter and corn and cook, stirring, until corn is crisp-tender, 2 to 3 minutes.
  • Add tomatoes and cook until they just begin to release juices, 1 to 2 minutes. Season to taste. Add zucchini mixture to bulgur and toss. Fold in arugula and sprouts. Shave cheese over salad and serve.

Yield Makes about 24 hors d'oeuvres

Number Of Ingredients 6

1/2 pound red potatoes
6 Brussels sprouts
1 tablespoon unsalted butter
1/2 teaspoon salt, or to taste
freshly ground black pepper to taste
3 bacon slices, cooked until crisp and crumbled

Steps:

  • Peel potatoes. In a saucepan cover potatoes with cold water by 2 inches and simmer, covered, until very tender but not falling apart, about 20 minutes.
  • Preheat oven to 350°F.
  • While potatoes are cooking, trim Brussels sprouts. With a paring knife cut 4 firm cup-shaped leaves from stem end of each sprout and reserve. Quarter rest of each sprout and slice thin.

  • Have ready a bowl of ice and cold water and bring reserved cooking water to boil. Gently stir in reserved sprout leaves and blanch 5 seconds. Working quickly, with a skimmer or slotted spoon transfer leaves to bowl of ice and cold water. Blanch shredded sprouts 30 seconds and drain in a sieve. Beat shredded sprouts into potato purée.
  • Transfer leaves to paper towels to drain upside down. Transfer purée to a pastry bag fitted with a 1/2-inch plain tip and pipe into upturned leave cups. Arrange filled leaf cups in a buttered shallow baking dish. Hors d'oeuvres may be prepared 3 hours ahead and chilled, covered.
