An easy-to-make venison stew recipe. You'll need root vegetables and a can of Guinness. Pair with a creamy vegetable mash and top with fresh parsley leaves.

1kg (2lbs) venison stewing meat, cubed
60ml (4 tbsp) flour
60ml (4 tbsp) oil
2 onions, peeled and finely chopped
5 garlic cloves, peeled and crushed
5 carrots, peeled and chopped
5 turnips, peeled and chopped
4 celery ribs, washed and sliced
5ml (1 tsp) allspice
5ml (1 tsp) ground cumin
5ml (1 tsp) cardamom seeds, crushed
3 bay leaves
4 cans (440ml) Guinness
1 orange, juiced and zested

Steps:

  • Toss the venison in the flour.
  • Heat half the oil in a large cast iron pot and fry the meat until browned all over.
  • Remove the meat from the pot and set aside.
  • Add the remaining oil and fry the onions and garlic gently for 5 minutes or until softened.
  • Stir in the carrots, turnips and celery and cook for another 5 minutes.
  • Add the browned venison, allspice, cumin, cardamom and bay to the stew.
  • Top the stew with Guinness until all the ingredients are submerged.
  • Bring the mixture to a slow simmer and let it cook for 2 hours or until the meat is tender.
  • Towards the end of cooking time, add the orange zest and juice. Season to taste.
  • Season with buttery mash and steamed green vegetables.

2 - Pounds Boneless Venison, cut into 1 - inch pieces
¼ - Cup all-purpose flour
1 - 16 ounce can tomatoes, cut up
1 - 12 ounce can BEER (1 ½ cup)
1 - medium onion, chopped (1/2 cup)
2 - Teaspoons instant beef bouillon granules
1 - Teaspoon sugar
½ - Teaspoon dried Thyme, crushed
½ - Teaspoon Rosemary
½ - Teaspoon Parsley Flakes
¼ - Teaspoon Black Pepper
1/8 - Teaspoon Red Pepper
2 - Cloves Garlic, minced
3 - Medium Carrots, cut into 1 - inch pieces
2 - Small Turnips, peeled and cut into wedges
1 - Stalk Celery, cut into 1 - inch pieces
1 - Cup frozen Peas

Steps:

  • Cook bacon till crisp; drain, reserve 2 - Tablespoon drippings; Crumble bacon set aside Coat Venison with Flour Brown Venison, half at a time, in hot drippings; drain off any fat. Add un-drained Tomatoes, Beer, Onion, Bullion, Sugar, Thyme, Black and Red Pepper, Parsley, Rosemary, and Garlic. Bring to a boil, reduce heat; cover and simmer 1 ½ hours. Add carrots, Turnips and Celery, cover; simmer ½ hour more. Stir in frozen Peas; cook 5 - minutes more. Stir in Bacon, spoon into serving bowls.

3 tablespoons olive oil
2 pounds venison stew meat, cut into 1-inch cubes
1/4 cup all-purpose flour
Essence, recipe follows
2 cups chopped onions
1 cup chopped celery
1 cup chopped carrots
1 tablespoon chopped garlic
1 cup chopped tomatoes, peeled and seeded
1 tablespoon chopped fresh basil leaves
1 tablespoon chopped fresh thyme leaves
2 bay leaves
1 cup red wine
4 cups brown stock
Salt and black pepper
Crusty bread
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • In a large pot, over high heat, add the olive oil. In a mixing bowl, toss the venison with flour and Essence. When the oil is hot, sear the meat for 2 to 3 minutes, stirring occasionally. Add the onions and saute for 2 minutes. Add the celery and carrots. Season with salt and pepper. Saute for 2 minutes. Add the garlic, tomatoes, basil, thyme, and bay leaves to the pan. Season with salt and pepper. Deglaze the pan with the red wine. Add the brown stock. Bring the liquid up to a boil, cover and reduce to a simmer. Simmer the stew for 45 minutes to 1 hour, or until the meat is very tender. If the liquid evaporates too much add a little more stock.
  • Remove the stew from the oven and serve in shallow bowls with crusty bread.
  • Combine all ingredients thoroughly.

1 lg. diced onion
1 bay leaf
1 pt (2 cups) carrots, diced
1 pt (2 cups) beans
1 pt (2 cups) peas
4 potatoes, diced
1 can beer
1 tsp salt
1 tsp pepper
2 qt s. water

Steps:

  • Brown venison with a little water and onion soup mix.
  • After venison is browned, add all other ingredients and cook on low for 1 hour or more.
  • Remove and discard bay leaf. Makes one kettle full of stew.

1 1/2 lbs beef stew meat, cut into 3/4-inch pieces or 1 1/2 lbs venison
1/2 cup flour
2 -3 tablespoons shortening (add more if need be)
salt & pepper, season according to taste
1 medium onion, chopped fine
3 -4 dashes Worcestershire sauce
6 cups hot water
2 teaspoons beef bouillon granules
1 pinch dried thyme
1 bay leaf
1 tablespoon lemon juice (This tenderizes the meat)
4 whole cloves
5 carrots, sliced thin
4 medium potatoes, cubed small
1/2-1 green bell peppers, chopped fine or 1/2-1 yellow bell pepper
1 stalk celery, sliced thin
1 (4 ounce) can mushroom stems and pieces, drained
1 (14 1/2 ounce) can whole tomatoes, cut up
1/2 cup frozen peas (*See note) (optional)
4 tablespoons flour (I use cornstarch)
1/2 cup cold water
1 teaspoon Kitchen Bouquet, browning & seasoning sauce (optional)

Steps:

  • Coat beef stew meat (or venison stew meat) with flour.
  • In a large skillet, melt shortening.
  • Add the flour coated meat; season with salt and pepper.
  • When the meat is almost browned, add onions; finish browning.
  • Add the Worcestershire sauce; stir for another minute.
  • Transfer to a 5 quart Dutch Oven, or a large soup kettle.
  • Add the hot water, bouillon granules, thyme, bay leaf, lemon juice, and whole cloves.
  • Bring to a boil. Cover, reduce heat to a simmer, and cook for 2 hours.
  • Add the carrots, potatoes, green peppers, celery, mushrooms and tomatoes.
  • Cover, and simmer 1-1/2 hours.
  • Remove bay leaf and whole cloves at this point.
  • Bring back to a boil.
  • Combine the flour and cold water, and add this to the boiling stew; stirring constantly.
  • Finally add the Kitchen Bouquet; mix through thoroughly.
  • Serves 8 - 10.
  • *Note: Sometimes you'll only need 3 tablespoons of flour, mixed with 1/3 cup cold water to thicken the stew. Also, if wanting to add peas to the stew, add the frozen peas within the last 20 minutes of cooking time (while the vegetables are simmering).

2 tablespoons canola oil
2 pounds venison stew meat
3 large onions, coarsely chopped
2 garlic cloves, crushed
1 tablespoon Worcestershire sauce
1 bay leaf
1 teaspoon dried oregano
1 tablespoon salt
1 teaspoon pepper
3 cups water
7 potatoes, peeled and quartered
1 pound carrots, cut into 1-inch pieces
1/4 cup all-purpose flour
1/4 cup cold water
Browning sauce, optional

Steps:

  • In a Dutch oven, heat oil over medium heat. Brown meat on all sides. Remove from pan. Add onions to the same pan; cook and stir until crisp-tender, 5-7 minutes. Add garlic; cook and stir 1 minute longer. Add water, stirring to loosen browned bits from pan. Stir in Worcestershire sauce, bay leaf, oregano, salt, pepper. Return meat to pan; bring to a boil. Reduce heat; cover and simmer until meat is tender, 1-1/2 to 2 hours., Add potatoes and carrots. Continue to cook until vegetables are tender, 30-45 minutes. Remove and discard bay leaf. In a small bowl, mix flour and cold water until smooth; stir into Dutch oven. Bring to a boil; cook and stir until thickened, 1-2 minutes. If desired, stir in browning sauce.
