A fragrant pudding, best served with scoops of really good vanilla ice cream

25g unsalted butter
2 ripe peaches or nectarines, stoned and thickly sliced
2 tbsp clear honey
juice 1 orange
8-10 basil leaves, shredded
vanilla or white chocolate ice cream, to serve

Steps:

  • Melt the butter in a frying pan, add the peaches or nectarines, then cook both sides until slightly softened, about 3 mins. Add the honey and stir to make a sauce, then add the orange juice and allow to bubble briefly. Stir in the basil and serve warm with scoops of ice cream.

1 French baguette, sliced 1/4 inch thick
1/4 cup olive oil
1 pound large peaches, cut into small dice
2 tablespoons chopped fresh basil
1/4 teaspoon kosher salt
1/4 cup honey
1 teaspoon apple cider vinegar
1 teaspoon hot sauce, plus more as desired
4 ounces goat cheese

Steps:

  • Preheat the oven to 350 degrees F.
  • Lay the baguette pieces in a single layer on a parchment-lined baking sheet, brush both sides with 3 tablespoons of the olive oil and bake until golden brown, 15 to 18 minutes.
  • In a medium bowl, toss together the peaches, basil, salt and remaining 1 tablespoon olive oil.
  • Whisk together the honey, vinegar and hot sauce in a small bowl, adding more hot sauce to taste.
  • To build the bruschetta, start with a piece of baguette, spread with the goat cheese, spoon on some peaches and top with the hot honey.

1 tablespoon cinnamon
5 peaches, quartered, with peel on
1 stick butter
1 cup spicy cinnamon schnapps, such as DeKuyper Hot Damn! Cinnamon Schnapps Liqueur
Vanilla ice cream, for serving

Steps:

  • In a medium bowl, combine the sugar and cinnamon. Toss the peaches in the sugar mixture until generously coated. Leave them in the mixture.
  • In a large cast-iron skillet, melt the butter over medium-low heat. Add the peaches and fry on each side for 1 to 2 minutes, or until softened slightly. Pour the schnapps into the skillet and lightly stir the peaches around to absorb some of the flavor. Light the schnapps on fire. It should flame off quickly.
  • Remove from the heat. Place the peaches over ice cream and drizzle with the remaining sauce from the skillet. Serve immediately.

1/2 teaspoon pepper
4 boneless skinless chicken breast halves
2 tablespoons olive oil
2 ripe peaches or 2 nectarines
1 small onion, chopped
1 garlic clove, smashed
3/4 cup chicken stock
1 tablespoon lemon juice
1/4 cup fresh basil, chopped

Steps:

  • In a shallow dish, combine flour and half of the salt and pepper, set aside 2 teaspoons for sauce.
  • In remaining flour mixture, coat chicken well; shake of excess.
  • In a large frypan, heat oil over medium heat; cook chicken, turning once, for 15 to 20 minutes or until no longer pink inside.
  • Transfer to plate and keep warm.
  • Meanwhile, peel and pit peaches; cut into wedges.
  • Add onion, garlic and reserved flour mixture to skillet; cook, stirring for 3 minutes.
  • Pour in stock and lemon juice; bring to boil, stirring to scrape up any brown bits from bottom of pan.
