1 shallot, thinly sliced
1 cup grape tomatoes, halved
Juice of 1 lemon
1 head red-leaf lettuce, torn
1 head romaine lettuce, torn
1/2 cup crumbled blue cheese

Steps:

  • Preheat the oven to 425 degrees F. Make the croutons: Toss the bread cubes with 1 tablespoon olive oil on a rimmed baking sheet; season with salt and pepper. Bake until golden, about 8 minutes.
  • Meanwhile, make the dressing: Heat the remaining 1/3 cup olive oil in a medium skillet over medium heat. Add the shallot and tomatoes and cook until softened, about 5 minutes. Stir in the lemon juice and season with salt and pepper.
  • Toss the lettuce in a large bowl. Pour the warm dressing on top, add the croutons and gently toss. Top with the blue cheese.

10 ounces (1-pint container) grape or cherry tomatoes
3 garlic cloves, crushed
2/3 cup dry red wine
1/4 cup balsamic vinegar
1 tablespoon sugar
1/4 teaspoon salt
1 teaspoon red-wine vinegar

Steps:

  • Heat oil in a medium skillet on medium heat. Add tomatoes, and cook, swirling pan often, until skins are blistered, about 5 minutes.
  • Stir in garlic, red wine, and balsamic vinegar, and cook until liquid reduces by half and tomatoes are soft, about 5 minutes. Stir in sugar, salt, and red-wine vinegar, and cook for 1 minute. Serve immediately, or cover, and refrigerate for up to 2 days. (Warm over low heat before using.)

1/2 cup white balsamic vinegar (reduced by 1/3)
3 cloves garlic, sliced
2 large tomatoes, peeled, chopped and divided
3 tablespoons chopped fresh tarragon, divided

Tomato slices, for serving

Steps:

  • In a non-reactive bowl, whisk together the oil and vinegar until completely combined. Add the garlic, half the tomatoes and half the tarragon. Season with salt and pepper and stir to coat. Cover and chill 6 hours.

1 large sweet onion, 1/2 coarsely chopped, 1/2 thinly sliced
3 cloves garlic, minced (1 tablespoon)

1 pound tomatoes (about 3 medium) or 2 pints cherry tomatoes
1 shallot, peeled and minced
2 tablespoons sherry vinegar, plus more to taste
1/2 teaspoon red-pepper flakes (optional)
1/2 teaspoon kosher salt (Diamond Crystal), plus more to taste
1/4 teaspoon black pepper
1/4 cup extra-virgin olive oil

Steps:

  • Heat a broiler to high. Place the tomatoes on a sheet pan and broil until the skin is charred and peeling, about 6 minutes. Flip and char the other sides until the tomatoes are soft and begin to release some of their moisture, about 5 minutes. If using cherry tomatoes, blister without turning until the tomatoes char, collapse and release their moisture, about 10 minutes.
  • When the whole tomatoes are cool enough to handle, transfer them to a board and coarsely chop. (Skip this step if you used cherry tomatoes.) Transfer the tomatoes with their juices to a medium bowl. Add the shallot, sherry vinegar, red-pepper flakes, if using, and the salt and pepper. Stir in the olive oil. Taste and add more vinegar and salt if necessary.
  • Use immediately or refrigerate in an airtight container for up to 2 days. Serve as a dressing over cooked leafy greens, green salads, grain salads, roasted or grilled vegetables, meat and fish.

1 medium red onion, minced
1 pint water
4 ounces honey
4 ounces red wine vinegar
3 ounces tomato paste
2 tablespoons Dijon mustard
1 tablespoon cornstarch
1 teaspoon Worcestershire sauce
1 teaspoon lemon pepper
hot sauce (e.g. Tabasco)

Steps:

  • Fry the bacon until very crisp.
  • Reserve and measure the drippings - you will need 2 or 3 ounces of melted fat.
  • Set the bacon aside and crumble 3 rashers when it is cool.
  • In a medium saucepan over medium heat, sauté the onions, stirring often, until they are all quite brown or are turning black.
  • In the meantime, pour the water, honey and vinegar into a bowl.
  • Mix thoroughly with a whisk.
  • Add cornstarch and whisk thoroughly again.
  • Add tomato paste and whisk thoroughly again.
  • Add the mustard to the onions and gently but thoroughly mix together.

3 tablespoons extra-virgin olive oil
1 whole sea bass, about 2 1/4 pounds, gutted
Salt and freshly ground black pepper
1 large clove garlic, sliced
3 large sprigs fresh thyme or 3/4 teaspoon dried thyme
1 small onion, chopped fine
3 ripe plum tomatoes, chopped fine

Steps:

  • Preheat oven to 500 degrees. Spread two tablespoons of the oil in a shallow baking dish large enough to hold the fish.
  • Pat the fish dry on paper towels. Roll it in the oil in the dish to coat it on both sides. Season the fish inside and out with salt and pepper. Tuck a few slices of the garlic and two sprigs of the thyme in the cavity of the fish. If fresh thyme is unavailable, sprinkle in one-half teaspoon of the dried thyme.
  • Place the fish in the oven and roast uncovered about 25 minutes, until the flesh can be lifted from the bone with the point of a knife and has turned opaque. Transfer the fish to a serving platter.
  • Heat the remaining olive oil in a small saucepan until it is quite hot. Drop in the remaining garlic and remove from the heat. Add the onion, tomatoes and remaining thyme. Stir. Season sauce with salt and pepper.
  • Remove the skin from the top of the fish, lift off the top fillet and serve. Turn the fish over and remove the skin and the bottom fillet in the same manner. Spoon the warm sauce over each portion of the fish.
