WHEAT BERRY SALAD WITH CARAMELIZED ONIONS AND GRAPES
Steps:
- Cook the wheat berries in a pot of boiling, salted water until they are cooked but still quite crunchy, about 55 to 60 minutes. Drain and transfer to a large bowl. Meanwhile, heat 5 tablespoons of the oil in a large, heavy skillet over medium heat. Add the onions and cook, stirring frequently, until they are dark brown, about 25 to 30 minutes. Stir the onions into the drained wheat berries and cool slightly. Stir in the thyme, grapes and arugula.
- For the dressing: Using a chef's knife, mash and chop the garlic on a cutting board with the salt until it becomes a paste. Transfer to a bowl and add the vinegar, pepper and remaining tablespoon of oil. Blend well and pour over the salad. Mix well, sprinkle with feta and serve.
WHEATBERRY SALAD
Steps:
- Place the wheatberries and 3 cups of boiling salted water in a saucepan and cook, uncovered, over low heat for approximately 45 minutes, or until they are soft. Drain.
- Saute the red onion in 2 tablespoons of olive oil over medium-low heat until translucent, approximately 5 minutes. Turn off the heat and add the remaining 4 tablespoons (1/4 cup) of olive oil and the balsamic vinegar.
- In a large bowl, combine the warm wheatberries, sauteed onions, scallions, red bell pepper, carrot, 1/2 teaspoon salt, and the pepper. Allow the salad to sit for at least 30 minutes for the wheatberries to absorb the sauce. Season, to taste, and serve at room temperature.

- Bring large pot of salted water to boil. Add wheat berries, reduce heat to medium-low and simmer until tender, stirring occasionally, about 1 hour. Drain.
- Heat 2 tablespoons oil in heavy medium skillet over medium heat. Add red onion; sauté until tender, about 6 minutes. Remove from heat. Add 4 tablespoons oil, then vinegar; whisk to blend.
- Toss wheat berries, green onions, carrot and bell pepper in large bowl. Pour dressing over; toss to blend. Season to taste with salt and pepper. Cool completely. (Can be made 1 day ahead. Cover; chill.)

You can substitute wheat berries with farro, spelt, or any other grain. Optionally, you can pre-soak the wheat berries overnight.

- In 2-quart saucepan, heat water and wheat berries to boiling; reduce heat to low. Cover; simmer 60 to 70 minutes or until wheat berries are tender but still chewy. Drain.
- In small bowl, stir all dressing ingredients with whisk until blended. In medium bowl, toss wheat berries, tomatoes, sun-dried tomatoes and chopped basil. Pour dressing over mixture and mix well. Cover; refrigerate 1 to 3 hours to blend flavors.
- Divide salad evenly among 4 plates or bowls. Top each serving with 1 tablespoon cheese. Garnish with basil sprigs.

- Cover wheat berries with cold water by 2 inches in a large saucepan. Cover; bring to a boil. Uncover; reduce heat, and simmer until tender, about 40 minutes. Drain; transfer to a serving bowl.
- Whisk together lemon juice, mustard, honey, salt, and pepper. Pour in oil in a slow, steady stream, whisking until emulsified. Drizzle over wheat berries; toss.
- Add fennel, cucumbers, celery, scallions, and parsley; toss. Cover; refrigerate 8 hours. Bring to room temperature.
FETA, WHEAT BERRY SALAD
Another favorite wheat salad. Reminds me of a Greek salad. Everyone loves this. Have been asked MANY times for the recipe. Adapted from a recipe in "The Best of Gourmet 1994". Sometimes I'll add more dressing if it absorbs it all. Might be yummy with some marinated artichokes too. I like to use the basil and sun-dried tomato variety of Feta.

- Pick over the wheat berries and remove any foreign bits. Rinse and add the wheat berries to boiling salted water. Reduce to a simmer and cook for 1 hour or until tender. Drain and cool.
- Stir together the wheat berries, feta, onion, cucumber, roasted pepper, pepperocini, herbs, olives and garlic.
- In a separate bowl, mix together the olive oil, lemon juice and vinegar.
- Mix everything together and garnish with fresh herbs.

- Place the wheat berries or spelt in a sieve and rinse until the water runs clear. Place in a bowl with 2 cups of the water. Let stand for 8 hours or overnight. Drain.
- Place the remaining 1 1/2 cups water and broth in a medium saucepan and bring to a boil over high heat. Add the wheat berries or spelt and return to a boil. Reduce the heat to low, cover, and simmer for 45 minutes, or until tender, adding the broccoli during the last 5 minutes. Drain and place in a large bowl.
- Meanwhile, heat the oil in a skillet over medium-high heat. Add the garlic and herb and cook, stirring, for 1 minute. Add the tomatoes, corn, salt, and pepper and cook, stirring frequently, for 3 minutes, or until the tomatoes begin to collapse. Serve over the wheat berries or spelt.

WHEAT BERRY SALAD WITH WALNUTS AND DRIED CHERRIES
I love wheat berries and enjoy them in salads. I am posting a few wheat berry salads from different books and websites. This is my riff on an Ellie Krieger Wheat Berry Salad from the Food Network website. Plan ahead, wheat berries should be soaked overnight before cooking and this time is not included with the prep or cooking time.

- Cover the wheat berries with water and soak overnight.
- The next day place the wheat berries with 8 cups of water in a large saucepan.
- Bring to a boil, reduce heat and simmer for about 1 to 1 1/2 hours or until tender, uncovered
- Drain and refrigerate until completely cooled
- Add walnuts, celery, cherries, scallion and parsley to the wheat berries.
- Whisk together olive oil and lemon juice in a small bowl.
- Stir dressing into salad.
- Season with salt and pepper
- Serve.
