Steps:
- Cut the bread into desired shape (we made triangles).
- Whisk together the eggs, cream or milk, and vanilla in a shallow dish.
- One-by-one dip the bread into the egg mixture until it is evenly coated on both sides. Let the excess run off before transferring the pieces to a plate.
- If you have a griddle turn it to 325 degrees F. If you don't have a griddle don't fret...any old sauté pan will do. If using a pan place it over medium heat.
- Melt a teaspoon or two of butter in your pan/griddle then add the first batch of battered bread. The key is for the finished product to be cooked all the way through by the time the outside turns brown so the heat should not be too high.
- Cook until golden brown on both sides. Add a little more butter for a second batch if necessary. Serve warm with pure maple syrup and a side of fruit. Enjoy!

Steps:
- Preheat Griddler, fitted with the griddle plates, to 375°F (190°C), and grease with nonstick spray.
- Use a whisk to beat the eggs in a 9x13-inch (23x33-cm) casserole dish until smooth.
- Add the milk, maple syrup, vanilla, cinnamon, and salt, and whisk until smooth and well combined.
- Dunk the bread in the batter, 4 slices at a time, until just soaked. Do not let the bread soak in the wet ingredients too long or it will become too wet and fall apart when you attempt to pick it up.
- Transfer the soaked bread to the Griddler and cook for 10 minutes.
- Sprinkle with powdered sugar, drizzle with maple syrup, and serve.
- Enjoy!

WHOLE GRAIN FRENCH TOAST WITH FRESH PAPAYA
_**Editor's note:** The recipe and introductory text below are from_ [The Skinny: How to Fit Into Your Little Black Dress Forever](http://astore.amazon.com/epistore-20/detail/0696232421) _by Melissa Clark and Robin Aronson._ Use a soft whole grain loaf for this recipe - anything crusty or crunchy would distract from the smooth, custardy texture of the French toast. Papayas are an underappreciated fruit that deserve more play. We chose to pair them with this recipe because their juicy, bright flavor is a nice contrast to the fried bread, and, well, because we love them. But feel free to substitute whatever fruit you like.

Steps:
- 1. Peel the papaya and cut it in half lengthwise. Use a spoon to remove the seeds. Slice the papaya into cubes (you should have about 1 cup).
- 2. In a large shallow bowl whisk together the milk, egg, sugar, vanilla, and salt. Dip each slice of bread into the egg mixture, soaking both sides so that the bread is well coated and has absorbed the custard.
- 3. Melt the butter in a large pan over medium-high heat. Add the bread and cook, working in batches, if necessary, until golden brown, about 2 minutes per side. Add additional butter to the pan if the bread seems to be sticking.
- 4. Transfer the French toast to two serving plates and drizzle with maple syrup, if desired. Top with the chopped papaya and serve.

Steps:
- 1. In a wide-bottom bowl, toss eggs, vanilla, milk, and cinnamon lightly with a fork until scrambled. Preheat griddle to medium high. 2. Place blueberries in a microwave-safe bowl and cook on high for 4 minutes. (These will eventually cook down to about 1½ cups.) 3. Once the griddle is hot, coat with non-stick cooking spray. Dip bread in egg mixture, one by one, just until each side is completely coated and place on hot griddle. Cook until brown (about 1-2 minutes) then flip and cook 1 minute on second side. If your griddle only accommodates 4 slices at a time, repeat process with the remaining 4. 4. Meanwhile, stir cornstarch into the warm blueberry liquid. Cook 2 minutes more, until thick and bubbly. 5. Serve each person two slices of French Toast with approximately 1/3 cup blueberry topping. Add sliced fresh fruit of your choice like melons, oranges, peaches or pears. For added protein and staying power, add a 1/2 oz slice of reduced-fat cheese.
