I found this recipe in my early years of cooking, and it's been a favorite of my five children ever since. It's different, zesty and flavorful. I prefer to serve it warm.

Pastry for double-crust pie (9 inches)
1-1/2 cups sugar
5 teaspoons all-purpose flour
2 teaspoons grated orange zest
1 teaspoon grated lemon zest
1/4 cup orange juice
1 tablespoon lemon juice
4 cups shredded peeled tart apples (about 4 large)
2 large eggs, beaten

Steps:

  • Line a 9-in. pie plate with bottom pastry; trim pastry even with edge of plate. In a large bowl, combine the sugar, flour, and orange and lemon zest. Stir in juices. Add apples and toss to coat. Stir in eggs. Pour into crust., Roll out remaining pastry; make a lattice crust. Seal and flute edges. Cover edges loosely with foil. Bake at 450° for 15 minutes. Remove foil; reduce heat to 350°. Bake 30-35 minutes longer or until crust is golden brown and filling is bubbly. Cool on a wire rack.

4 pounds apples (about 8 medium apples) ((You can use Granny Smith, Golden Delicious, Jonagold, Honeycrisp, Braeburn, Mutsu, Winesap, Cortland, Empire, Red Rome, Fuji...use an apple you enjoy eating, except for Macintosh. Those are too soft. Tart apple=tart pie, sweet apple=sweet pie))
1 lemon (zested)
1 medium orange (zested)
2 tbsp lemon juice ((squeezed from the zested lemon))
1 tbsp orange juice ((squeezed from the zested orange))
½ cup sugar
¼ cup all-purpose flour
1 teaspoon kosher salt
¾ teaspoon ground cinnamon ((I prefer Ceylon Cinnamon))
½ teaspoon ground nutmeg
⅛ teaspoon ground allspice
12 tbsp unsalted butter ((very cold, place in the freezer 30 minutes before using))
3 c all purpose flour
1 tsp kosher salt
1 tbsp granulated sugar
⅓ c vegetable shortening ((very cold, place in the freezer 30 minutes before using))
6 to 8 tbsp ice water
1 egg, beaten with 1 tablespoon water ((for the egg wash))
1 spoonful/tbsp granulated sugar ((for dusting on the top))
1 c heavy whipping cream
2 tbsp granulated sugar
1 tsp vanilla bean paste
1 pinch salt
¼ tsp ground cinnamon

Steps:

  • In a food processor, add the flour, salt and sugar. Pulse a few times to thoroughly mix.
  • Pull the butter and shortening from the freezer and dice into smaller pieces. Add the butter and shortening into the processor. Pulse several times, until the butter & shortening are mixed in, but are still large, crumbly pieces. The mixture should be very dry and crumbly.
  • While pulsing the food processor, pour ice water down the tube, one tablespoon at a time until the dough begins to form into a ball. As soon as it pulls together, stop the processor.
  • Put the dough on a floured board and gently mold into a ball. Avoid handling the dough too much. The heat of your hands will soften the butter and we don't want that! Wrap in plastic wrap and pop into the refrigerator for 30 minutes or even overnight.
  • Preheat the oven to 400 degrees F.
  • Remove your dough from the fridge and set aside.
  • Set up your prep station with a cutting board and two bowls. Use a vegetable peeler to peel each apple. Cut into four pieces around the core. Slice into about ½ inch slices. Put the slices into one bowl and the scraps into another.
  • After the apples are slices, add in the zests, juices, sugar, flour, salt and spices.
  • Roll out half the pie dough on a floured surface to about a 12 inch disc, or until it reaches a size larger than the pie pan.
  • Gently drape the dough into the pie pan and carefully guide it into the sides of the pan. Do not stretch the dough as it will shrink when it bakes in the oven. If the dough is too small, you can always go back to the rolling board to roll it a bit thinner.
  • Fill the pie pan with the apple mixture. There are a lot of apples to fit in so don't be alarmed if it seems like too much! Trim the excess crust but leave a little bit of overhang (about 1 inch).
  • Brush the edge of the bottom pie crust with the egg wash so that the top crust will stick. Drape the top crust over, covering the apples. Trim any excess to ensure that the top and bottoms match.
  • Crimp and/or tuck the edge of the top crust under the edge of the bottom crust. Brush the entire top crust with the egg wash, sprinkle with spoonful/1tbsp of granulated sugar. Cut some slits into the center of the top crust to allow the steam to escape.
  • Place the pie on a sheet pan and bake for 45 minutes. At this point, check on the the pie. If the top crust is browning too much, take some aluminum foil and cover the top crust for the remainder of the bake time. Continue baking until juices begin to bubble out the top or sides. You can also insert a knife into the slits to check if the apples are fully soft. My pie took about 90 minutes to bake.
  • Once done baking, allow to cool a bit. Prepare the cinnamon whipped cream (optional)
  • In a large bowl, pour in the cream, vanilla bean paste, sugar and salt.
  • Using a hand mixer or stand mixer, whisk until semi-soft peaks form.
  • Add in the cinnamon. Whisk until stiffer peaks form.
  • Add generously to a warm slice of Citrus Apple Pie!

1 cup all-purpose flour
1/3 cup packed light brown sugar

1 stick unsalted butter, cut into 1/2-inch pieces, at room temperature
3 pounds mixed apples (such as Golden Delicious, Granny Smith and Gala), peeled and sliced 1/4 inch thick
4 tablespoons unsalted butter, melted
1/3 cup granulated sugar
1/4 cup packed light brown sugar
2 tablespoons all-purpose flour
1 tablespoon fresh lemon juice
1 teaspoon ground cinnamon
1/8 teaspoon salt

Steps:

  • Make the crust: Whisk the flour, granulated sugar and salt in a large bowl. Rub the butter pieces into the flour using your fingers until pea-size pieces form. Drizzle in the vinegar and ice water; stir gently with a fork to combine. If the dough doesn't hold together when you squeeze it, add more ice water, 1 tablespoon at a time. Turn out the dough onto a piece of plastic wrap and form into a disk; wrap tightly. Refrigerate until firm, at least 1 hour or overnight.
  • Roll out the dough on a lightly floured surface into a 13-inch round. Ease into a 9-inch pie plate. Trim the edges, leaving a 1-inch overhang, then tuck the overhanging dough under itself; crimp the edges with a fork. Refrigerate until firm, at least 1 hour or overnight.
  • Meanwhile, make the crumb topping: Mix the flour, brown sugar, cinnamon and salt in a medium bowl. Rub the butter into the mixture with your fingers until no longer floury and crumbs form. Freeze until ready to use.
  • Make the filling: Place a foil-lined baking sheet on the lowest oven rack; preheat to 400˚. Mix the apples, melted butter, both sugars, flour, lemon juice, cinnamon and salt in a large bowl. Spoon the filling into the chilled pie crust. Pat the crumb mixture on top.
  • Bake the pie on the hot baking sheet until lightly browned, about 30 minutes. Reduce the oven temperature to 350˚ and bake until the apples are completely soft when pierced with a paring knife, 60 to 80 more minutes. (If the topping is getting too dark, cover loosely with foil.) Transfer the pie to a rack to cool completely.

1 double crust ready-to-use pie crust (such as Pillsbury®)
3 cups water
1 cup honey
5 seedless oranges, thinly sliced
½ cup packed brown sugar
¼ teaspoon ground cinnamon
⅛ teaspoon ground ginger
4 Macintosh apples - peeled, cored, and thinly sliced
3 tablespoons melted butter, divided
2 tablespoons confectioners' sugar

Steps:

  • Line a 9 inch pie pan with one of the pie crusts, and chill at least 20 minutes before baking to prevent shrinkage. Preheat oven to 400 degrees F (205 degrees C). Line pastry with a double layer of aluminum foil and a layer of pie weights or dried beans. Bake in the preheated oven until edge of crust is golden, about 10 minutes. Carefully remove the foil and weights and bake until the crust has set, about 5 minutes more. Let cool.
  • Bring the water and honey to a boil in a saucepan over high heat. Stir in the orange slices, then reduce heat to medium-low. Cover and simmer 30 minutes, then drain, reserving the orange slices. Combine the brown sugar, cinnamon, and ginger in a mixing bowl. Toss the apples with the sugar mixture; set aside.
  • Spread 1/3 of the orange slices into the bottom of the pie crust, then top with 1/3 of the sweetened apples. Form 4 more layers with the apples and oranges, then place the second pie crust on top of the pie. Crimp the edges, then cut 3 slits into the top of the pie. Brush the crust with half of the melted butter.
  • Bake in the preheated oven until the top crust is flaky and golden, about 1 hour. Remove the pie from the oven, and brush with the remaining butter; sprinkle with confectioners' sugar.

In this very classic, cinnamon-scented pie, the apples are sautéed in butter before they're piled in the crust, ensuring that they're tender but not mushy. Use firm, crisp apples here, preferably all one kind so the slices cook evenly. Honeycrisp, Golden Delicious, Ginger Gold and Granny Smith apples are good options. (Honeycrisps will give you the sweetest pie, while Granny Smiths the most tart.) If using a glass or ceramic pie pan, consider parbaking the bottom crust. Glass doesn't conduct heat as well as metal, so the crust may not cook through if you don't parbake.

Steps:

  • Melt butter in a large skillet set over medium-high heat and add apples to the pan. Stir to coat with butter and cook, stirring occasionally, until the butter is evenly distributed, about 1 minute.
  • In a small bowl, whisk together sugars, spices and salt. Sprinkle over the apples and toss to combine.
  • Lower heat to medium and cook until apples have softened completely but still hold their shape, about 17 to 25 minutes. (Some varieties cook more quickly than others.)
  • Sprinkle cornstarch evenly over the apples and continue to cook, stirring occasionally, until the apple mixture comes to a simmer and thickens slightly, about 2 minutes. Remove pan from heat, and stir in lemon juice and zest. Allow apples to cool completely (spreading them onto a rimmed baking sheet speeds this up). Apples can be prepared up to 24 hours ahead and refrigerated.
  • On a lightly floured surface, roll half of the pie dough into a 12-inch circle. Transfer dough to a 9- or 10-inch metal pie plate, trimming it to leave a 1/2-inch overhang. Place crust in the freezer for 30 minutes or up to 24 hours.
  • When ready to bake, place a rimmed baking sheet on the middle oven rack and heat oven to 425 degrees.
  • Roll out the remaining dough on a lightly floured surface to a 10- to 11-inch circle. Remove pie crust from freezer and add the cooled filling in an even layer. Cover apples with remaining dough. Press the edges together, trim the excess dough, and crimp the edges with your fingers or a press down with the tines of a fork. (Using a fork might be easier if the bottom crust is too cold to crimp.) Brush the top of the pie with cream, milk, or some beaten egg, then sprinkle lightly with sugar if you like. Using a sharp knife, cut some steam vents in the top of the crust.
  • Place pie on the hot sheet pan and bake for 20 minutes. Reduce heat to 375 degrees and bake for another 30 to 40 minutes, until the filling bubbles in the steam vents, and the crust is golden brown. Transfer pie to a wire cooling rack and allow to cool for at least 2 hours before serving. The pie can be baked up to 24 hours ahead of serving; do not refrigerate before serving.

This is my family's favourite apple pie. I lost the recipe and it's taken me five years before I found it again. This time I'm determined to share it! It's English (UK), so I hope the instructions are clear.

4 tablespoons water, as required
1 large cooking apple
1 lemon
1 egg

  • Make pastry.
  • Line a 7 inch flan ring.
  • Peel and grate the apple, add the sugar and then the grated rind and juice of the lemon.
  • Beat the egg.
  • Add to the apple mixture and mix- this will curdle- not to worry.
  • Pour into tart case and bake for about 35 minutes at 350F/ 170°C.

  • Place the apples in a medium bowl. Add the lemon juice and toss with a spatula until the apples are well coated.
  • Place the granulated sugar, brown sugar, tapioca starch, cornstarch, Chinese five-spice powder, and salt in a small bowl and whisk to combine. Pour the dry ingredients into the bowl of apples and mix until the apples are again well coated. Set aside to macerate for at least 25 minutes.
  • Place a colander over a medium bowl and transfer the macerated apples to the colander, making sure to scrape down the side of the bowl to get all the juices, sugars, and starches. Let the apples drain for 25 minutes.
  • Pour the drained juice into a small saucepan, scraping down the side and bottom of the bowl to get every drop. Bring the apple juice to a boil over medium-high heat, stirring constantly. Reduce heat and continue to boil the apple juice gently until it thickens, about 2 minutes. Remove from the heat and set aside to cool. Once it is room temperature, chill the saucepan in the refrigerator for about 20 minutes.
  • Sprinkle Crust Dust into the empty pie shell. Pour in the apples, making sure to scrape out any dry ingredients or juices that stick to the side of the bowl. Make a well in the middle of the apples and pour in the thickened apple juice. Gently smooth the pie filling with a spatula and dot with the butter. Finish the pie with the second crust, following Epi's double-crust pie instructions, then freeze for at least 20 minutes.
  • Preheat the oven to 400°F (200°C).
  • Brush the top of pie with Pie Wash and bake for 45 minutes to 1 hour, rotating 180 degrees every 20 minutes, until the crust is dark golden brown and the juices are bubbling thickly through the vents. Cool for at least 2 hours before slicing.

1 teaspoon salt
1 ½ sticks butter, 1 1/2 sticks, cold, cubed
8 tablespoons ice water, or as needed
2 ½ lb granny smith apple, cored, sliced, peeled
¾ cup sugar
2 tablespoons flour
½ teaspoon salt
1 teaspoon cinnamon
¼ teaspoon nutmeg
½ lemon
1 egg, beaten
1 tablespoon sugar
1 scoop vanilla ice cream

Steps:

  • In a medium-sized bowl, add the flour and salt. Mix with fork until combined.
  • Add in cubed butter and break up into flour with a fork. Mixture will still have lumps about the size of small peas.
  • Gradually add the ice water and continue to mix until the dough starts to come together. You may not need all of the water, but if the dough is too dry then add more. The dough should not be very tacky or sticky.
  • Work the dough together with your hands and turn out onto a surface. Work into a ball and cover with cling wrap. Refrigerate.
  • Peel the apples, then core and slice.
  • In a bowl, add the sliced apples, sugar, flour, salt, cinnamon, nutmeg, and juice from the lemon.
  • Mix until combined and all apples are coated. Refrigerate.
  • Preheat the oven to 375°F (200°C).
  • On a floured surface, cut the pie dough in half and roll out both halves until round and about ⅛-inch (3 mm) thick.
  • Roll the dough around the rolling pin and unroll onto a pie dish making sure the dough reaches all edges. Trim extra if necessary.
  • Pour in apple filling mixture and pat down.
  • Roll the other half of the dough on top.
  • Trim the extra dough from the edges and pinch the edges to create a crimp. Make sure edges are sealed together.
  • Brush the pie with the beaten egg and sprinkle with the sugar.
  • Cut four slits in the top of the pie to create a vent.
  • Bake pie for 50-60 minutes or until the crust is golden brown and no greyish or undercooked pastry remains.
  • Allow to cool completely before slicing.
  • Top with ice cream and serve.
  • Enjoy!
