This is a beautiful salad to eat and in presentation. The flavors just burst in your mouth. Hibiscus salt gives it a tangy dimension that is unbeatable.

1 large grapefruit, peeled and sectioned
6 mint leaves
½ sprig fresh dill, stemmed
½ teaspoon Chinese rice vinegar
1 ½ tablespoons avocado oil
1 large ripe avocado, cut into 1-inch pieces
¼ cup Belgian endive, thinly sliced
2 teaspoons minced fresh jalapeno pepper
¼ teaspoon coarse ground black pepper
⅛ teaspoon hibiscus salt

Steps:

  • Place 1 grapefruit segment, mint leaves, dill, vinegar, and oil into a mini electric blender. Pulse a few times to create a vinaigrette.
  • Place remaining grapefruit sections into a large bowl. Add avocado and endive. Pour vinaigrette over the salad and toss to coat. Let rest in the refrigerator for 1 hour. Top with jalapeno, black pepper, and hibiscus salt before serving.

3 ripe medium avocados, halved, seeded, and peeled
3/4 cup sour cream
Juice of 2 large limes
3 tablespoons honey
1/2 teaspoon salt

Mint leaves for garnish

Steps:

  • Slice ends off grapefruits and stand upright on a counter. Cut away skin and membrane, exposing fruit. Working over a bowl to catch the juice, separate sections by slicing with a serrated knife between membranes. Remove and discard the seeds. Slice avocado halves lengthwise in 1/2-inch slices. Arrange alternating grapefruit sections and avocados slices on 6 salad plates.
  • Whisk together sour cream, lime juice, honey, salt, and pepper in a small bowl. Just before serving, spoon about 2 tablespoons dressing in a stripe over each salad. Garnish with mint leaves and serve

1 tablespoon Dijon mustard
1/4 cup freshly squeezed lemon juice
1 1/2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1/2 cup good olive oil
4 ripe Hass avocados
2 large red grapefruits

Steps:

  • Place the mustard, lemon juice, salt, and pepper in a small bowl. Slowly whisk in the olive oil until the vinaigrette is emulsified.
  • Before serving, cut the avocados in 1/2, remove the seeds, and carefully peel off the skin. Cut each half into 4 thick slices. Toss the avocado slices in the vinaigrette to prevent them from turning brown. Use a large, sharp knife to slice the peel off the grapefruits (be sure to remove all the white pith), then cut between the membranes to release the grapefruit segments.
  • Arrange the avocado slices around the edge of a large platter. Arrange the grapefruit segments in the center. Spoon the vinaigrette on top, sprinkle with salt and pepper, and serve.

1 medium grapefruit, peeled
1 medium ripe avocado, peeled and sliced
1 tablespoon canola oil
1-1/2 teaspoons white wine vinegar
1/2 teaspoon honey
1/8 teaspoon salt

Steps:

  • Place lettuce on two salad plates. Section the grapefruit over a bowl to reserve juice. Arrange grapefruit sections and avocado slices on lettuce. , In a small bowl, whisk the oil, vinegar, honey, salt and 1-1/2 teaspoons reserved grapefruit juice. Drizzle over salads; serve immediately.

3 tablespoons sugar
1/2 cup vegetable oil

Steps:

  • Salad: Distribute the lettuce, avocado and grapefruit amoungst 6 salad plates.
  • Dressing: Combine the lime juice, honey, red pepper flakes, dry mustard, sugar and vegetable oil.
  • To serve: sprinkle a little of the dressing over the salad and serve.

This is a wonderful salad from Ocean Spray! The tang of the grapefruit and the earthiness od the cumin makes for a wonderful combination! Feel free to add in other veggies or nuts. I like to put in bean sprouts and alfalfa sprouts (I lived in Calif. most of my life! lol).Another good addition would be mushrooms! A touch of Cayenne will liven this salad right up! The dressing goes with a lot of different salads too. Note**Some people who take cholesterol meds aren't supposed to eat grapefruit, so check with your doctor before trying this.
