A rustic salad for one - contrast peas and caramelised onion with salty, streaky bacon and mustard dressing

1 red onion , cut into 8 wedges, root left intact
2 tbsp olive oil , plus extra for drizzling (optional)
handful of peas (fresh or frozen)
1 tsp sherry vinegar
1 tsp Dijon mustard
2 slices smoked streaky bacon
1 slice of bread , cut into cubes
1 Baby Gem lettuce , leaves torn

Steps:

  • Heat oven to 220C/200C fan/gas 7. Arrange the onion wedges on one side of a baking tray. Drizzle with ½ tbsp of the olive oil and season. Put in the oven and roast for 15 mins.
  • Meanwhile, cook the peas in boiling water for 2 mins, drain and rinse in very cold water. Set aside.
  • Make the dressing by mixing together another ½ tbsp of the oil, the vinegar, mustard and seasoning. Turn the onions, and put the bacon slices and bread next to them on the baking tray. Drizzle the remaining oil over the bread. Return the tray to the oven for 12 mins more, until the bacon and bread are golden.
  • Put the lettuce and peas in a bowl, add the dressing and toss to combine. Arrange the onion and bread on top. Break up the bacon slightly and scatter over. Drizzle with a little more olive oil, if you like, and eat straight away.

1 pound asparagus, trimmed and cut on the bias into 1/2-inch pieces
1 pound assorted-color new potatoes (about 4), cut into 1/4-inch dice
1 cup artichoke hearts, roughly chopped
1 sweet yellow onion, cut into 1/4-inch dice
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
Bacon Vinaigrette, recipe follows
2 tablespoons fresh basil, thinly sliced into chiffonade
1/2 pound extra-thick-cut bacon, cut into 1/4-inch strips (lardons)
Juice of 1 lemon
1 tablespoon honey
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F. Toss the asparagus, potatoes, artichokes and onion together in a large bowl along with the olive oil, 1 teaspoon salt and 1/2 teaspoon pepper so that all the ingredients are well mixed.
  • Divide the vegetables evenly between 2 sheet pans, and give the pans a shake so that the veggies spread into an even layer. Roast the vegetables, rotating the pans halfway through cooking, for 15 minutes.
  • Transfer the roasted vegetables to a large mixing bowl and toss with the Bacon Vinaigrette and chiffonaded basil. Season to taste with additional salt and pepper.
  • Cook the bacon in a 10-inch saute pan over medium heat, stirring occasionally, until the bacon is browned and crisp at the edges, 6 to 8 minutes. Remove the bacon from the pan and place on a plate lined with a paper towel. Pat the bacon pieces dry with a paper towel to remove excess grease. Reserve 3 tablespoons of the rendered bacon fat from the pan.
  • In a small mixing bowl, whisk together the lemon juice, honey and reserved bacon fat, along with 1/2 teaspoon salt and a pinch of pepper until smooth. Taste and add additional salt and pepper as desired.

2 tablespoons cider vinegar

4 stalks celery, halved lengthwise and sliced thinly
1/2 lb bacon, cooked until crisp and crumbled
1 bunch Italian parsley, finely chopped
1 cup mayonnaise
1 teaspoon sugar
1 bunch green onion, thinly sliced

Steps:

  • Steam potatoes in a steamer basket for 15-20 minutes until they are tender. Remove from the heat and set aside until they are cool to handle.
  • Slice potatoes thickly and transfer to bowl. Sprinkle the potatoes with vinegar, salt and pepper. Add the celery, cooked and crumbled bacon, and parsley.
  • In another bowl, combine the mayo, sugar, salt and pepper to taste. Pour dressing over potatoes. Add the green onions and toss gently.
  • Taste for seasonings and add salt and pepper if needed.
  • Refrigerate for several hours before serving.

2 tablespoons white wine vinegar
2 shallots, quartered
1/4 cup minced fresh parsley

The tzatziki dip as dressing certainly did the trick! The tarragon in the onions gives that hint of 'what is that?' to this recipe! Can be served warm or chilled.

30 small small potatoes, or more as needed
1 large red onion, sliced into 1/8-inch pieces
1 teaspoon dried tarragon
3 fluid ounces white wine
4 slices bacon, cut into 1/2-inch pieces
½ cup tzatziki sauce, or more to taste
5 tablespoons chopped fresh chives
salt and ground black pepper to taste

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 10 to 15 minutes. Drain and cool. Cut potatoes in half.
  • Heat a skillet over medium heat; cook and stir onions until softened and golden brown, about 20 minutes. Add tarragon; pour in white wine to deglaze pan. Simmer until wine evaporates, 2 to 3 minutes.

1 medium butternut squash, halved lengthwise and seeded
1 tablespoon olive oil, or as needed
aluminum foil
6 slices bacon
1 cup sliced onion
8 cups chopped romaine lettuce
⅓ cup pecans, toasted and chopped
⅓ cup raisins
2 tablespoons maple syrup, or to taste

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Brush cut sides of butternut squash with olive oil. Wrap each squash half tightly in aluminum foil.
  • Roast squash halves in the preheated oven until they begin to soften, about 20 minutes. Remove squash from the oven and let sit until cool enough to handle. Remove foil and slice into 3/4-inch thick slices. Remove skin from each slice and cut into 3/4-inch cubes. Set aside 8 cups of the cubed squash, reserving any remaining squash for another use.
