BACON-WRAPPED SHRIMP

Juice of 1 lemon
1 clove garlic, grated
1 teaspoon paprika
1 teaspoon fresh thyme
3 tablespoons extra-virgin olive oil
Kosher salt
1 pound (about 24) large shrimp, peeled and deveined, tails intact
12 slices bacon, halved

Steps:

  • Position a rack 3 to 4 inches from the heat source and preheat the broiler. Whisk the lemon juice, garlic, paprika, thyme, olive oil and 1/2 teaspoon salt in a shallow baking dish. Add the shrimp and toss to coat; marinate in the refrigerator, 20 minutes.
  • Turn the shrimp in the marinade to coat well. One at a time, remove each shrimp and wrap with a piece of bacon; secure with a toothpick if desired. Place seam-side down on a baking sheet. Spoon any remaining marinade over the shrimp. Broil, turning the shrimp once, until the bacon is slightly crisp and the shrimp are cooked through, about 5 minutes.

1 mango (about 1 pound), peeled, pitted and sliced
16 extra-large shrimp (about 1 pound), peeled and deveined
6 slices bacon, cut into thirds
2 tablespoons vegetable oil
Salt and pepper

Steps:

  • Heat broiler or non-stick grill pan to high.
  • Halve mango slices and place one piece inside curve of shrimp.
  • Tightly wrap shrimp and mango with bacon piece, and secure through skewer, repeat with three more shrimp.
  • Repeat process with remaining shrimp and skewers.
  • Brush shrimp with oil and season with salt and pepper.
  • Broil or grill until bacon is crisp and shrimp is cooked through, 3 to 5 minutes per side.
  • Suggestion: Add fresh jalapeño slices to mango and shrimp before wrapping with bacon.

4 tsp canola oil
1/2 cup chopped red onion
2 cloves garlic, minced
1 tbsp fresh ginger, peeled and minced
3/4 tsp salt
1/4 tsp allspice
1/4 tsp ground cumin
1/8 tsp cinnamon
1 mango, peeled, pitted and cut into 1/2-inch pieces
1/3 cup cider vinegar
2 tbsp fresh lime juice
1 tbsp brown sugar
1 lb large shrimp, peeled, tails on
1/4 tsp red pepper flakes
1/4 tsp garlic powder

Steps:

  • Heat 2 tsp oil in a 3-quart saucepan over medium-high heat. Cook onion, garlic, ginger, 1/4 tsp salt, allspice, cumin and cinnamon about 3 minutes. Add mango, vinegar, lime juice and sugar and gently boil, stirring occasionally, until sauce is thick; refrigerate in a bowl. Toss shrimp with red pepper, garlic powder and remaining 1/2 tsp salt. Heat remaining 2 tsp oil in a large nonstick skillet over medium-high heat. Cook shrimp until no longer translucent, about 2 minutes on each side. Let cool; serve with sauce.

1/4 cup mango juice
2 Tbsp. olive oil
2 Tbsp. water
24 uncooked cleaned (with tails left on) extra-large shrimp (1 lb.)
12 slices OSCAR MAYER Fully Cooked Bacon, cut in half
1/4 cup KRAFT Sweet & Spicy Barbecue Sauce

Steps:

  • Whisk first 4 ingredients until blended; pour over shrimp in shallow dish. Turn to evenly coat both sides of each shrimp. Refrigerate 30 min. to marinate, turning after 15 min.
  • Heat broiler. Remove shrimp from marinade; discard marinade. Wrap bacon around shrimp; place on rack of broiler pan.
  • Broil, 4 inches from heat, 8 min. or until shrimp turn pink, turning and brushing with barbecue sauce after 4 min.
