MOIST AND DELICIOUS BANANA BREAD
This is the best banana bread I have ever had. I buy really ripe bananas just so I can make this :-) Got the recipe years ago from my friend Rachel. We used to beg her to make this for us in college! I think the moistness is due to the 1/2 cup of oil - I didn't say it was the healthiest banana bread around, but it is worth the extra time on the treadmill!

Steps:
- Combine the oil, eggs, sugar, milk, vanilla, and mashed bananas.
- Add the baking soda and flour.
- Combine well for 2-3 minutes.
- Pour into a greased loaf pan and bake in a preheated 325 degree F oven for 1 hour and 20 minutes.

Steps:
- Mix together with a spatula or wooden spoon (all ingredients) banana, baking soda, oil, sugar, eggs, salt and flour in a large mixing bowl.
- Fold in the chopped walnuts if using.
- Pour in a greased 9x5 loaf pan. Bake in preheated oven at 350 degrees for 35 to 40 minutes or until toothpick comes out clean.

- Preheat the oven to 350°F (175°C), and butter a 4x8-inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Stir the melted butter into the mashed bananas.
- Mix in the baking soda and salt. Stir in the sugar, beaten egg, and vanilla extract. Mix in the flour.
- Pour the batter into your prepared loaf pan. Bake for 50 minutes to 1 hour at 350°F (175°C), or until a tester inserted into the center comes out clean.
- Remove from oven and cool completely on a rack. Remove the banana bread from the pan. Slice and serve.

SIMPLE BANANA BREAD FROM SCRATCH

- Whisk the egg is a bowl.
- Add the sugar to the whisked egg and mix well and keep aside.
- Add the melted butter and vanilla extract to the egg sugar mixture and mix everything well.
- Mash the bananas in another bowl, little chunks of bananas are fine as they taste nice in the loaf.
- Add the butter, sugar egg mixture to the mashed bananas and mix well.
- In another bowl, mix together the remaining dry ingredients - flour, baking soda and salt. Make sure you have mixed the dry ingredients evenly.
- Pour the banana egg mixture ( that also contains melted butter and sugar) to the bowl of dry ingredients, and mix gently so that no lumps are formed.You don't have to mix too much, but mix everything together in the bowl very gently so that the perfect batter for banana bread is formed.
- Grease your baking pan, I used a 9 inch loaf pan, and pour the banana bread batter into it.
- Preheat the oven to 350 degree Fahrenheit and bake for 45 minutes.
- Check if the center of the loaf is cooked by inserting a toothpick to the center, if it comes out clean the bread is done! If not, cook for few more minutes and check in between to see if it is cooked.
- Slice and serve the warm banana bread with evening coffee, or you can make it in the night and save for the morning breakfast.

- In a large saucepan, cook and stir the milk, butter and sugar over medium heat until butter is melted; cool to 120°-130°. RIDICULOUSLY EASY BANANA BREAD
Your bananas need to be ripe for the best, most flavorful homemade banana bread. It is even better if they are overripe, brown, and speckled. A note on pan size: We use an 8 ½-inch by 4 ½-inch loaf pan; if you only have a 9-inch by 5-inch pan, check for doneness 5 to 10 minutes earlier.

- Center a rack in the oven and heat to 350° Fahrenheit. Butter and flour an 8 ½-inch by 4 ½-inch loaf pan. Alternatively, grease the pan, and then line with a sheet of parchment paper (as shown in the video).
- Place the pan on an insulated baking sheet or two regular baking sheets stacked on the other. This is optional but helps with even baking.
- Whisk the flour, baking soda, salt, and cinnamon together, and set aside.
- In the bottom of a medium bowl, mash bananas into a chunky paste.
- Whisk the melted butter, brown sugar, eggs, and vanilla into the bananas until well blended.
- Switch to a large rubber spatula, scrape the sides and bottom of the bowl, and then add the dry ingredients in three parts, stirring until the flour disappears and the batter is smooth. Fold in the nuts and chocolate chips.
- Pour batter into the prepared pan and smooth the top. Bake 55 to 75 minutes, or until a knife inserted into the center of the bread comes out clean.
- After 30 minutes in the oven, check the bread for color. If it looks like it is browning too quickly, loosely cover with aluminum foil.
- Transfer to a wire rack to cool for 5 minutes. Unmold the bread cool completely.
