2 cups all-purpose flour, plus more if needed and for dusting
1 1/2 teaspoons salt
1/2 cup boiling water
1 pound ground chicken
1/3 cup chicken broth
2 teaspoons sugar
2 teaspoons soy sauce
2 teaspoons rice vinegar
1 teaspoon freshly grated ginger
1/4 teaspoon salt
2 scallions, finely chopped
Freshly ground black pepper
Flavorless oil, for frying
2 tablespoons soy sauce
1 tablespoon rice vinegar
2 teaspoons sesame oil
1 scallion, finely chopped
A pinch of crushed dried red pepper

Steps:

  • For the dough: Combine the flour and salt in a large heatsafe bowl. Slowly pour in the boiling water while stirring, until you have a coarse meal mixture. Stir in 1/2 cup cold water to form a dough.
  • Knead the dough on a lightly floured surface for 10 minutes, adding more flour as necessary, until the dough is smooth and slightly sticky. Cover the dough with a damp towel and let sit for 20 minutes.
  • For the filling: In a large bowl, combine the ground chicken, chicken broth, sugar, soy sauce, vinegar, ginger, salt, scallions and a bunch of turns of pepper.
  • To assemble the dumplings, divide the dough into 24 balls. Roll them out into 4-inch circles, flouring the surface as needed. Place 1 tablespoon filling in the center of each and fold in half to make a half-moon shape, pleating the edges to seal well.
  • Bring a large pot of water to a boil. Heat a thin layer of oil in a large skillet over medium-high heat. Boil the dumplings in batches for 4 minutes. Remove them with a slotted spoon, allowing excess water to drip off, then transfer to the hot oil (be careful because this step can get spitty). Cook until the dumplings are browned, 2 to 3 minutes. Transfer to a plate lined with a paper towel and let cool slightly. Alternatively, to steam the dumplings, line a bamboo steamer with blanched cabbage and steam over boiling water until the filling is cooked through, 10 to 15 minutes.
  • For the dipping sauce: In a small bowl, combine the soy sauce, vinegar, sesame oil, scallion and red pepper.
  • Serve the dumplings with the dipping sauce

2 1/2 teaspoons ground ginger
3/4 teaspoon ground allspice
3/4 cup cider vinegar
1/2 cup tomato paste
1/3 cup light-brown sugar
1 small onion, finely chopped
6 garlic cloves, minced

Steps:

  • Preheat oven to 325 degrees. Rub beef with salt, pepper, ginger, and allspice. In a medium bowl, combine vinegar, tomato paste, brown sugar, onion, garlic, and 1/2 cup water.
  • Spoon half of the sauce into a 9-by-13-inch glass baking dish. Place brisket in dish, and spoon remaining sauce over the top. Cover tightly with heavy-duty aluminum foil (or a double layer of regular foil).
  • Bake until brisket is falling-apart tender, about 3 hours. Remove brisket from dish. Skim any fat from the surface of the sauce.
  • Transfer sauce to a medium saucepan; bring to a boil over high heat. Boil 5 minutes to reduce slightly. Slice brisket against the grain; serve with sauce.

6 mild yellow or red chiles or 3 yellow or red bell peppers
4 hot yellow chiles (such as banana or Hungarian wax peppers), seeds removed
4 medium-hot red chiles (such as Fresno or jalapeño), seeds removed
3/4 cup apple cider vinegar
1/4 cup (packed) light brown sugar
2 tablespoons Red Chile Hot Sauce
1 tablespoon vegetable oil
1 (4-pound) beef brisket, preferably from the point end
Kosher salt
2 teaspoons freshly ground black pepper
1 large red onion, cut through root end into 6 wedges
8 garlic cloves, peeled

Steps:

  • Preheat oven to 300°F. Arrange chiles on a wire rack on stovetop over a gas flame and roast, turning occasionally, until blistered and lightly charred. (Or roast one at a time using tongs, or use the broiler.)
  • Stir vinegar, brown sugar, and 2 Tbsp. hot sauce in a small bowl; set aside.
  • Heat oil in a large heavy pot over medium-high. Season brisket generously with salt and sprinkle with pepper; cook, fat side down, until bottom side is deep golden brown, 6-8 minutes. Turn and cook until other side is golden brown, about 4 minutes. Transfer to a rimmed baking sheet. Add onion and garlic to pot and cook, reducing heat if needed, until lightly browned, 6-8 minutes. Transfer to baking sheet with brisket.
  • Remove pot from heat and place brisket in pot, fat side up. Pour reserved vinegar mixture over and arrange garlic and blistered chiles around. Place onion on top of chiles. Cover pot and transfer to oven. Braise until brisket is fork-tender and shreds easily, 3-3 1/2 hours. Transfer brisket, onion, chiles, and garlic to a platter and let cool 15 minutes.
  • Meanwhile, place pot over medium-high heat and bring braising liquid to a boil. Cook until thick and syrupy, 10-15 minutes. Taste pan sauce and season with more hot sauce and salt, if needed.
  • Serve brisket, onion, chiles, and garlic with pan sauce drizzled over.
  • Brisket can be braised 3 days ahead. Let cool in juices in pot; cover and chill.

1 large yellow onion, peeled and cut lengthwise into six wedges
10 garlic cloves, peeled
4 inches piece ginger, peeled and thinly sliced on bias
1 jalapeno, sliced lengthwise
1 cinnamon stick
3 tablespoons light brown sugar (or dark)
2/3 cup rice wine vinegar
2/3 cup soy sauce
1 1/2 cups low sodium beef broth
1 cup coconut milk, from a well-shaken can
freshly squeezed lime juice, from 1-2 limes, to taste, plus additional lime wedges, for serving
steamed rice, for serving
roughly chopped cilantro, for serving

Steps:

  • Preheat Instant Pot to saute setting.
  • Dry brisket and season generously with salt. Add grapeseed oil to pot and swirl to coat. When smoking, add brisket, in batches if necessary, and saute until deeply golden brown, about 5 minutes per side. Remove brisket to a plate as it finishes and replenish or drain oil as necessary to maintain approximately 2 tablespoons per batch. Add onion, garlic, ginger, jalapeno, cinnamon stick, and brown sugar, again replenishing pot if necessary with additional 1 tablespoon oil, and season generously with salt. Saute until onions are softened and golden in spots and brown sugar is caramelized, about 6 minutes more. Return brisket to pot, nestling meat beneath vegetables. Add vinegar, soy sauce, and beef broth, scraping bottom of pot to deglaze. (This can also be done in a skillet over high heat. Saute timing will be reduced. Transfer brisket, vegetables, and pan sauce to Instant Pot before proceeding.).
  • Top with lid and place on high pressure. Cook 45 minutes and then allow pressure to release naturally for 30 minutes. Uncover and remove brisket and vegetables with a slotted spoon. Cover with foil to keep warm. Transfer cooking liquid to a fat separator or measuring cup and skim fat. Return sauce to Instant Pot and place on saute setting. Bring to a boil and cook until reduced, 10 minutes. Add coconut milk and continue to reduce, 5 minutes more. Season to taste (the broth) with salt and lime juice. Return the meat and vegetables to the sauce and serve with rice, cilantro, and additional lime wedges.

1 (3 1/2- to 4-pound) beef brisket
2 1/2 teaspoons kosher salt, plus more to taste
1 teaspoon black pepper
4 teaspoons finely grated garlic (from about 5 large cloves)
1 tablespoon chopped thyme leaves
1 teaspoon chopped rosemary leaves
6 tablespoons extra-virgin olive oil, plus more for serving
2 large white onions, halved and thinly sliced
1 teaspoon finely grated lemon zest
1/2 teaspoon finely grated orange zest
Juice from 2 lemons
Juice from 2 oranges
1 cup dry white wine
1 garlic clove, finely grated or minced
1/2 teaspoon kosher salt, plus more to taste

2 cups sliced endive (from 2 to 3 endives)

Steps:

  • Season the brisket all over with salt and pepper, then rub the meat with 2 teaspoons grated garlic, thyme and rosemary. Place brisket in a large bowl, cover tightly with plastic wrap, and refrigerate for at least 2 hours and up to overnight.
  • When you are ready to cook the brisket, heat the oven to 325 degrees.
  • Heat 2 tablespoons oil in a 6 1/2-quart Dutch oven over medium-high. Sear the brisket in the oil until browned on both sides, about 3 minutes per side. Transfer meat to a plate.
  • Add remaining 4 tablespoons oil and onions to pot, and sauté until lightly browned on the edges and very tender, about 8 minutes. Return brisket and any juices to the pot with the onions.

  • Cover pot, transfer to the oven, and cook for 1 1/2 hours. Turn the meat over in the pot and stir in remaining 2 teaspoons garlic. Cover pot and continue to cook until the meat shreds easily with a fork, about 1 to 1 1/2 hours longer.
  • Uncover pot, stir in the reserved lemon and orange zests, and continue to cook, uncovered, 15 minutes more.
  • Just before serving, prepare the salad: In a large bowl, whisk together reserved 2 tablespoons lemon juice, garlic and salt. Let it sit for 1 minute, then whisk in oil. Toss with greens, endive, radicchio and herbs. Taste and add more salt or olive oil, if needed.
  • Slice meat and serve, with pan juices spooned over and some of the salad piled on top. Serve the rest of the salad in a bowl on the side.

Kosher salt and freshly ground pepper
2 tablespoons safflower oil
1 large white onion, cut into 8 wedges
6 cloves garlic, smashed and peeled
1 tablespoon coriander seeds
5 sprigs oregano
1/2 cup triple sec or other orange-flavored liqueur

Steps:

  • Preheat oven to 325 degrees. Season brisket generously with salt and pepper. Heat a large, heavy-bottomed pot over medium-high; swirl in 1 tablespoon oil. 1 tsp dried tarragon
2 tsp cracked black pepper
2kg rolled beef brisket
1 tbsp sunflower oil
500-550ml bottle of dark ale
2 tbsp beef extract
1 tbsp muscovado sugar
2 tbsp dried onion flakes
500ml beef stock
long-stem broccoli , to serve (optional)

Steps:

  • Heat the oven to 150C/130C fan/gas 2. Mix the stock cube with the tarragon and pepper in a small bowl. Rub over the brisket and season. Heat the oil in a large flameproof casserole dish or roasting tin over a medium-high heat, add the brisket and brown well on all sides.
  • Stir in the ale and beef extract, then tip in the sugar and onion flakes and add enough of the beef stock to come two-thirds of the way up the sides of the brisket. Bring to the boil, cover and roast in the oven for 3 hrs, checking every 30 mins to see if the brisket is tender (but you may need to roast it for up to 5 hrs). Transfer the brisket to a board and leave to rest for 15 mins. Slice and serve with the stock spooned over and some steamed long stem broccoli on the side, if you like.

Braised Brisket With Plums, Star Anise and Port image

For this recipe, I added plums to the onions in the sauce for brightness, and port for sweetness. Star anise and bay leaf add depth, but you could leave them out without anyone missing them, or substitute a cinnamon stick and orange zest. And if you don't want to use port, regular red wine spiked with a few tablespoons of honey or brown sugar is a nice substitute. If you can, track down a second cut, or deckle, brisket for this dish. For lovers of fatty meat, this is brisket nirvana. It's juicy, it's succulent, it falls apart under the fork with barely a nudge. It's also as tasty as short ribs but less expensive, which is what you want when you're cooking for a large family dinner. You can't find the second cut in many supermarkets, but butchers have it if you ask.

1 brisket (6 to 7 pounds), preferably second cut
2 tablespoons kosher salt
1 1/2 tablespoons black pepper
3 garlic cloves, thinly sliced
1 bunch lemon thyme or regular thyme
2 tablespoons extra virgin olive oil
3 white onions, thinly sliced
1 cup ruby port
1/2 cup dry white wine
4 whole star anise (or 2 whole cloves)
4 whole bay leaves
2 1/2 pounds ripe but firm plums, halved and pitted
Thyme leaves, for garnish (optional)

Steps:

  • Season brisket all over with salt and pepper. Place it in a large container and cover with garlic and half the thyme sprigs. Cover and refrigerate overnight or for at least 4 hours. Let meat stand at room temperature for 30 minutes before cooking. Wipe off garlic and thyme.
  • Heat oven to 325 degrees. On the stovetop, place a very large Dutch oven over high heat. Add oil. Place brisket in pot and cook, without moving, until browned, about 7 minutes per side. (Cut meat into two chunks and sear in batches if it doesn't fit in a single layer.) Transfer to a plate.
  • Add onions to pot and reduce heat to medium-high. Cook onions, tossing occasionally, until golden brown around the edges and very tender, 15 to 20 minutes. Pour in port and wine and scrape up any browned bits from the bottom of the pot. Stir in star anise, bay leaves and remaining thyme. Scatter half the plums over the bottom of the pot and nestle brisket on top. Scatter remaining plums over meat. Cover pot and transfer to oven. Cook, turning every 30 minutes, until meat is completely fork tender, about 5 hours. After 4 hours, uncover the pot so some of the liquid can evaporate and sauce can thicken.
  • If you have time, let brisket cool completely in the pot, then refrigerate, covered, overnight. (This makes it easier to remove the fat from the top with a slotted spoon.) Reheat meat in a 300-degree oven for about 45 minutes before serving, if necessary. If sauce seems thin, remove meat from the pot and bring liquid to a simmer. Let cook until it's reduced to taste. Slice meat and serve with the plum sauce, garnished with thyme leaves if you like.

This beautiful beef brisket dish is based on the Tuscan braise - beef in Barolo wine, but you can use any full-bodied red that suits your budget

2.2kg piece of rolled beef brisket
1 bottle full-bodied red wine
3 tbsp olive oil
8 celery sticks , cut into little-finger-length pieces
2 carrots , roughly chopped
1 onion , sliced
3 garlic cloves , roughly chopped
4 thyme sprigs
4 bay leaves
small pack parsley , roughly chopped

Steps:

  • If you have time, up to 24 hrs before, sit the beef in a snug plastic container and pour over the wine. Cover and leave to marinate in the fridge, turning the beef as and when you can.
  • Heat oven to 170C/150C fan/gas 3½. Drain the wine from the beef (if you've marinated), but keep the wine. Heat the oil in a flameproof casserole dish that will fit the beef and all the vegetables - don't worry if the beef is too tall for the dish. Season the beef and spend a good 15 mins browning it on all sides, then remove from the dish. Add the celery, carrots and onion to the dish, sizzle in the beef fat for 5 mins, then add the garlic and herbs. Nestle the beef among the vegetables, pour over the wine and bring to a simmer. Cover the dish with its lid (or foil if the beef is too tall) and braise in the oven for 4-4½ hrs until very tender, turning the beef once.
  • Once cooked, leave to rest for 10 mins, then lift the beef onto a carving board. Drain the vegetables (reserving the braising juices), toss with the parsley and tip into a dish. Spoon the fat off the braising juices and pour into a bowl for spooning over. The sauce can be chilled in the fridge - the fat will solidify and can be lifted off the sauce before it's reheated.

1/2 pound medium or small shrimp, peeled and chopped
1/2 pound ground pork
1 medium onion, grated
1 large carrot, peeled and grated
1/2 cup thinly sliced scallions (about 1/2 bunch)
1 cup thinly sliced green cabbage (1/4 head)
2 garlic cloves, minced
1 tablespoon grated or minced fresh ginger
1/4 cup chopped cilantro (leaves and tender stems)
2 tablespoons soy sauce
1 egg
1 teaspoon red chile paste
1 teaspoon salt
36 (1 package) round gyoza or wonton wrappers (widely available in the refrigerated produce or freezer section of grocery stores)
Cornstarch, for dusting
Peanut or canola oil, for frying
Water, or chicken or vegetable broth, for steaming
Chile-Soy Dipping Sauce
1/2 cup soy sauce
2 tablespoons Chinese black vinegar or balsamic vinegar
1 teaspoon sesame oil
1/2 teaspoon red chile paste
1 tablespoon lime juice
2 scallions, thinly sliced

Steps:

  • Mix all the filling ingredients in a large bowl. Take 1 teaspoon and bake or steam it, to taste for adjusting the seasoning. Set a large pot of lightly salted water over high heat, ready for boiling.
  • To make the pot stickers, lay down about 4 gyoza or wonton wrappers and brush the edge halfway around with cornstarch mixed with a little water. Place about a teaspoon of filling in the center of each wrapper and fold over into a half moon, being careful to keep filling away from the edge. Using your fingers, crimp to seal. As you become more adept, you can pleat one side against the other. Press each pot sticker onto the table to flatten the bottom, and place on a tray lightly dusted with cornstarch. Pot stickers can sit there until ready to cook.
  • When all the pot stickers have been shaped, boil them in batches in the lightly salted water for about 2 minutes, until the dough is cooked through (it will become slightly translucent). Drain and cool until ready to fry.
  • Heat about 1 tablespoon oil in a nonstick skillet over medium-high heat until almost smoking. Place pot stickers in the skillet in batches, to avoid crowding, and lower the heat. When they're golden brown and crispy on the bottom, carefully pour in a little hot water or broth to just cover the bottom of the pan. Watch out for steam! Cover the pan tightly and steam 3-4 minutes, until almost all the liquid is absorbed. Remove from the heat, and repeat with the remaining dumplings. Serve with Chile-Soy Dipping Sauce.
  • Chile-Soy Dipping Sauce
  • Mix all the ingredients together in a small bowl. The sauce will keep in the refrigerator for up to a week.
