BROILED TOMATOES

Broiled Tomatoes image

An easy recipe for wonderfully flavorful broiled tomatoes with Parmesan cheese. Great as an appetizer, as a side dish, or for breakfast.

Provided by Vered DeLeeuw

Categories     Side Dish

Time 25m

Number Of Ingredients 7

2 tomatoes (large and firm)
Olive oil spray
1/2 teaspoon Diamond Crystal kosher salt (or 1/4 teaspoon of fine salt)
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme
1/2 cup dry-grated Parmesan

Steps:

  • Preheat your broiler on high. Position an oven rack 6 inches below the heating element (not directly below).
  • Cut the tomatoes in half. Cut a tiny sliver from the bottom of each half, so that the tomatoes can stand upright without wobbling.
  • Spray the tomatoes all over with olive oil. Place them on a broiler-safe rimmed baking dish, cut side up.
  • Sprinkle the tomatoes with salt, pepper, garlic powder, and thyme. Top with Parmesan, 2 tablespoons for each tomato half.
  • Broil until the cheese is golden brown, 3-5 minutes.

ROMA TOMATOES WITH ASPARAGUS AND HOLLANDAISE

Roma Tomatoes with Asparagus and Hollandaise image

Hot and cheesy asparagus-filled roma tomato halves broiled for an easy side dish in just 30 minutes!

Provided by By Betty Crocker Kitchens

Categories     Side Dish

Time 30m

Yield 12

Number Of Ingredients 6

6 medium plum (Roma) tomatoes (2 1/2 to 3 inches long)
36 thin asparagus spears (1/4 inch diameter)
1 cup milk
1 package (0.9 oz) hollandaise sauce mix
1/4 cup butter or margarine
1/2 cup shredded Parmesan cheese (2 oz)

Steps:

  • Cut tomatoes in half lengthwise. Seed tomatoes, using teaspoon; remove flesh, leaving 1/4-inch-thick shell. Cut thin slice from rounded side of tomato halves, if necessary, so they'll rest level in pan. Drain tomatoes, hollow sides down, on paper towels.
  • Break off tough ends of asparagus. From tip end, cut off top 3 inches of each spear (reserve remaining portions of spear for another use). In 1-quart saucepan, heat 1 inch water to boiling. Add asparagus pieces. Heat to boiling and boil 2 minutes; drain and set aside.
  • In same 1-quart saucepan, beat milk and sauce mix with wire whisk until smooth. Add butter. Heat to boiling over medium heat, stirring constantly. Reduce heat to low. Cook 1 minute, stirring constantly, until thickened and smooth.
  • Set oven control to broil. In 13x9-inch pan, place tomato halves. In each tomato half, arrange 3 asparagus pieces lengthwise with tips extended over stem end of tomato. Spoon 1 tablespoon sauce over asparagus-filled tomato halves, allowing some sauce to fill tomato hollow. Sprinkle with cheese.
  • Broil with tops 4 to 6 inches from heat 2 to 4 minutes or until tomatoes are hot and cheese just begins to brown. If desired, heat remaining sauce until hot; serve with tomatoes.

Baked Mac and Cheese with Broiled Tomatoes image

Blistered tomatoes and a crunchy panko topping elevate this three-cheese mac.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Pasta and Grains

Time 1h10m

Number Of Ingredients 12

3 Roma tomatoes
Extra-virgin olive oil
Kosher salt and freshly ground pepper
12 ounces cavatappi
3 tablespoons butter, plus 2 tablespoons melted
1/4 cup flour
2 teaspoons mustard powder
3 cups warm whole milk, warmed
1 cup (4 ounces) chopped American cheese
2 1/4 cups (9 ounces) grated sharp cheddar
1 1/4 cups (2 1/2 ounces) grated Parmesan
1 cup panko

Steps:

  • Preheat broiler. Slice tomatoes into thick rounds, drizzle with oil, and season with salt and pepper. Broil until tomatoes start to brown, about 8 minutes; let cool slightly. Store, covered, in the refrigerator up to 1 day.
  • Preheat oven to 350 degrees. Boil pasta in a medium pot of boiling salted water until al dente, about 2 minutes less than per package instructions. Drain, reserving 1/4 cup pasta water.
  • Return empty pot to medium heat and add butter. When butter melts and foams, add flour and whisk until darkened slightly, 1 to 2 minutes. Add mustard powder and whisk to combine. Slowly whisk in milk. Bring to a boil, then reduce heat to medium and cook, stirring often, until thick enough to coat the back of a spoon, 3 to 4 minutes.
  • Reduce heat to low and add cheese in 3 batches, starting with American. Follow with 2 cups cheddar and 1 cup Parmesan. Whisk to fully combine after adding each cheese. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Toss pasta with cheese sauce and reserved pasta water. Transfer to an 8-inch baking dish.
  • In a bowl, mix panko with melted butter and remaining 1/4 cup Parmesan and 1/4 cup cheddar. Top pasta with broiled tomatoes and panko mixture. Bake until bubbly, about 30 minutes.
