2 tablespoons olive oil, turning to coat

Steps:

  • Heat broiler. Place four 6-ounce salmon steaks on a broilerproof baking sheet. Drizzle with 2 tablespoons olive oil, turning to coat; season with salt and pepper. Broil until cooked through but still slightly translucent in the center, 5-7 minutes.
  • Serve with Roasted Poblano and Caper Salsa.

4 small salmon steaks (5 to 7 oz. each)
1/4 cup Worcestershire sauce
1 tablespoon Dijon mustard
1 dash Tabasco sauce
2 tablespoons minced parsley, for garnish

Steps:

  • Rinse the salmon steaks and pat dry with paper towels.
  • In a shallow dish, combine the worcestershire sauce, mustard, tabasco, salt and pepper and stir with a fork to combine.
  • Set the salmon steaks in the dish and turn so that they are evenly coated with the mixture.
  • Let stand for 15 minutes.
  • Set the oven rack 3 to 4 inches below the element and preheat the broiler.
  • Line the broiler pan or baking sheet with a piece of foil and lightly oil the foil.
  • Using tongs, take the salmon steaks from the marinade, allowing excess to drip off, and arrange them on the foil with at least an inch between them; reserve the marinade.
  • Broil the salmon until lightly browned, 3 to 5 minutes.
  • Take the pan from the oven, turn the steaks and spoon on some of the reserved marinade.
  • Continue broiling until the salmon is just barely opaque through the thickest part (cut to test), 3 to 5 minutes longer.
  • Transfer the salmon steaks to individual plates, sprinkle with the minced parsley and serve.

1 salmon steak, about 1/2 pound
Salt to taste if desired
Freshly ground pepper to taste
2 teaspoons finely chopped shallots
2 tablespoons dry white wine
1/4 teaspoon white-wine vinegar
2 teaspoons heavy cream
3 tablespoons cold butter, cut into small cubes
1 tablespoon capers

Steps:

  • Bring water to boil in bottom of a steamer.
  • Sprinkle salmon steak with salt and pepper and arrange it on a steamer rack. Place rack over the boiling water and cover closely. Steam salmon until it is cooked through, about 8 minutes.
  • Meanwhile, combine shallots, wine and vinegar in a small saucepan and bring to a boil. Cook until the liquid is reduced almost by half. Add cream and stir to blend. Start stirring with a wire whisk while adding butter cubes gradually, adding more as cubes melt.
  • Squeeze capers to extract excess liquid and add the capers to butter sauce
  • Remove salmon from steamer and peel away the skin. Serve the salmon with the sauce over it.

2 tablespoons sugar
1 tablespoon dill weed
3/4 teaspoon salt
1/8 to 1/4 teaspoon pepper, optional
4 salmon steaks (1-inch thick and 6 ounces each)
MUSTARD DILL SAUCE:
3 tablespoons mayonnaise
3 tablespoons Dijon mustard
3 tablespoons dill weed
1 tablespoon sugar
4 teaspoons white wine vinegar
1/4 teaspoon pepper, optional

Steps:

  • In a large resealable plastic bag, combine the first five ingredients. Add salmon; seal bag and turn to coat. Refrigerate for 1 hour, turning occasionally. , In a small bowl, combine the sauce ingredients; cover and refrigerate until chilled., Discard marinade. Coarse salt and freshly ground pepper to taste
4 tablespoons extra-virgin olive oil (basil-flavored if available)
2 ripe tomatoes, peeled, seeded and chopped
1/2 red onion, chopped fine
1 1/2 tablespoons balsamic vinegar
1 tablespoon peanut or vegetable oil
1 1/2 pounds okra, trimmed
1 to 1 1/2 tablespoons ground cumin
1/2 cup basil leaves
Basil sprigs to garnish

Steps:

  • Season the salmon steaks with salt and pepper, and sprinkle them with two tablespoons olive oil.
  • In a small bowl, combine the tomatoes, red onion, vinegar and peanut oil. Season to taste with salt and pepper. Set aside.
  • Preheat grill. Heat the peanut oil in a large heavy skillet and add the okra. Sprinkle with the cumin, salt and pepper, and cook over moderate heat, turning frequently, until the okra is golden-brown and somewhat crusty (about 15 minutes).
  • Grill the salmon steak for three to four minutes on each side for medium rare. Snip the basil leaves and add them to the salsa. Spoon the salsa over the salmon, and garnish with basil sprigs. Serve immediately, passing the okra separately.

1/2 cup butter, melted
salt and pepper
1/4 cup of chopped parsley
1/4 cup chopped capers

Steps:

  • Rub the salmon steaks with lemon juice and brush them with melted butter.
  • Season with salt and pepper to taste.
  • Arrange in a baking dish and bake in preheated hot oven (425°F) for about 20 minutes, basting with a combination of melted butter and lemon juice every 5 minutes.
  • Do not turn.
  • Arrange the cooked salmon steaks on a hot platter.
  • Mix the pan juices with the chopped parsley and capers, and pour over the steaks.
  • If additional liquid is needed, add a little dry vermouth or white wine.
  • Good with new potatoes, dressed with butter and parsley, and a cucumber salad.
