This appetizer or side dish makes a crispy complement to any Italian entree. I just started with my grandmother's bruschetta recipe and added fresh tomatoes! It's one of the yummiest bruschetta recipes I've found. -Jean Franzoni, Rutland, Vermont

1/4 cup olive oil
3 tablespoons chopped fresh basil
3 to 4 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon pepper
4 medium tomatoes, diced
2 tablespoons grated Parmesan cheese
1 loaf (1 pound) unsliced French bread

Steps:

  • In a large bowl, combine oil, basil, garlic, salt and pepper. Add tomatoes and toss gently. Sprinkle with cheese. Refrigerate at least 1 hour. , Bring to room temperature before serving. Cut bread into 24 slices; toast under broiler until lightly browned. Top with tomato mixture. Serve immediately.

1 large red bell pepper

Steps:

  • Preheat oven to 375°F. Char bell pepper over gas flame or under broiler until blackened on all sides. Enclose in paper bag 10 minutes. Peel and seed pepper; cut into 1/2-inch-wide strips.
  • Spread goat cheese on toasts. Top with red pepper strips. Place bruschetta on baking sheet. Bake until warm, about 5 minutes. Top each toast with 2 basil leaves and serve.

4 heads garlic
6 ounces extra-virgin olive oil
16 plum tomatoes
1 cup fresh basil
1 cup fresh oregano
1 baguette
Salt and pepper
8 (1-inch) slices goat cheese
4 fresh basil sprigs

Steps:

  • Preheat oven to 350 degrees F.
  • Separate the cloves of garlic from the heads and place in an ovenproof dish. Drizzle 1 ounce of olive oil over the unpeeled cloves and roast for 25 minutes until soft. Remove from oven and allow to cool.
  • Quarter the tomatoes, remove the seeds, and dice. Finely chop the basil and oregano.
  • Halve the baguette lengthwise and toast until golden. Peel the skin off of the garlic cloves. Mash the softened garlic and spread on toasted bread. Cut the baguette into diagonal pieces.
  • Mix the diced tomatoes, chopped basil, oregano, salt, pepper, and another ounce of olive oil together. Spoon the tomato mixture evenly over the garlic baguette pieces. Top each piece with one slice of goat cheese and drizzle the remaining olive oil over the goat cheese and tomatoes.
  • To serve, garnish with sprigs of fresh basil and serve immediately.

1 (14 ounce) can black olives, pitted, finely chopped
2 ounces sun-dried tomatoes packed in oil, chopped
2 tablespoons capers, chopped
1 tablespoon green peppercorn, in juice, crushed
2 garlic cloves, crushed
3 tablespoons fresh basil, chopped
3 -4 tablespoons olive oil
1 dash salt
1 dash pepper
12 slices ciabatta
1/4 cup olive oil, for brushing
2 garlic cloves, halved
1/2 cup soft fresh goat cheese

Steps:

  • FOR THE TAPENADE ~ Mix first 7 tapenade ingredients together, then check seasoning. It shouldn't need too much. Allow to marinate overnight, if possible.
  • FOR THE BASES ~ broil both sides of bread until lightly brown.
  • Brush one side with oil & then rub with a cut clove of garlic. Set aside until ready to serve.
  • Spread bread slices with cheese, roughing it up with a fork, then spoon tapenade on top, & serve.

3 tablespoons olive oil
1 large garlic clove, halved
6 plum tomatoes, seeded, chopped
1 teaspoon fresh lemon juice
4 ounces soft fresh goat cheese (such as Montrachet)
3 tablespoons chopped fresh mint

Steps:

  • Preheat oven to 325°F. Arrange bread slices on baking sheet. Brush olive oil over both sides of bread. Bake bread until golden, about 6 minutes per side. Remove toasts from oven. Rub cut sides of garlic over toasts.
  • Combine seeded plum tomatoes and fresh lemon juice in medium bowl. Season with generous amount of salt and pepper. Toss tomatoes to combine. (Toasts and tomatoes can be prepared 1 hour ahead. Cover separately and keep at room temperature.)
  • Preheat oven to 350°F. Spread goat cheese over toasts; arrange on baking sheet. Mound tomatoes on toasts, dividing equally. Bake until heated through, about 8 minutes. Transfer bruschetta to platter. Sprinkle with mint.

1 French baguette (the staler the better)
tomatoes
garlic
goat cheese
red pepper (optional)
olive oil
fresh basil
salt and pepper

Steps:

  • Cut the french stick into slices widthways (about as wide as 2 fingers).
  • If you are using peppers, cut them into pieces the size of the slices of bread, grill them until the skins are burnt.
  • Once the skins are burnt, let the peppers cool and remove the skins.
  • Chop the tomatoes into small pieces and mix with a drizzle of olive oil, shredded basil, garlic and salt and pepper to taste Brush the slices of french stick with olive oil and grill briefly until golden Once grilled, remove the bread from the grill and top with the tomato/garlic/basil mixture.
  • Add peppers if using.
  • Dollop small pieces of goats cheese on top and again grill briefly.
