EASY CHERRY JAM
Celebrate cherries with this homemade cherry jam. Perfect in cakes or slathered over fresh bread, it also makes a lovely gift for family and friends

Steps:
- Put two saucers in the freezer for testing the jam later on. Tip the cherries, sugar and lemon juice into a large, heavy-based saucepan and simmer uncovered over a medium-high heat for 35-50 mins, stirring frequently until thick and glossy.
- After 35 mins, spoon a little of the jam onto one of the chilled saucers. Leave for 1 min, press a fingertip into the jam. If it starts the wrinkle, it's ready. If it slides away, continue to boil the jam for 10 mins, then test again on the other saucer.
- Spoon the jam into sterilised jars and seal. Will keep for six months unopened (when stored in a dark, cool place), or opened in the fridge for three months.

- Prepare and sterilize your jars and lids. See instructions here for help! This recipe yields about 5 cups, give or take a bit, so you'll want to have enough jars ready to go.
- Measure your prepared fruit (including the habaneros) into a deep jam pot (remember it will bubble and foam and expand in size greatly as it boils!) with the lime juice and calcium water. Stir it well. Bring the fruit to a boil, stirring frequently to prevent sticking or scorching.
- While the fruit is coming to a boil, measure the sugar and pectin powder in a clean, dry bowl and whisk it together. Set aside.
- When the fruit comes to a full boil, stir the sugar/pectin mixture in all at once and stir HARD for 1 to 2 minutes to dissolve the sugar and pectin. Return the mixture to a boil and immediately remove from heat then stir in the lime zest.
