GARLIC AND HERB TOMATOES

Steps:
- Heat the olive oil in a saute pan large enough to hold all the tomatoes in one layer. Add the garlic to the oil and cook over medium heat for 30 seconds. Add the tomatoes, basil, parsley, thyme, salt, and pepper. Reduce the heat to low and cook for 5 to 7 minutes, tossing occasionally, until the tomatoes begin to loose their firm round shape. Sprinkle with a little fresh chopped basil and parsley and serve hot or at room temperature.
ROASTED CHERRY TOMATO AND FRESH HERB BREAD

- Preheat oven to 375°F. Mix tomatoes, 1/4 cup oil, shallots, vinegar, and crushed red pepper in 13x9x2-inch glass baking dish. Roast uncovered until tomatoes are very tender and juicy, stirring occasionally, about 45 minutes. Stir in 2 tablespoons marjoram. Season with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate.)
- Brush cut surface of each bread half lightly with additional oil. Arrange bread, cut side up, on baking sheet. Distribute about 1 cup tomato mixture over each bread half. Bake until bread is crusty, about 10 minutes. Transfer to cutting board. Sprinkle with additional marjoram and freshly ground black pepper. Cut bread into squares and serve.

- Place tomatoes in a large bowl; set aside. In a small bowl, combine oil and vinegar. Add parsley, basil, oregano, salt and sugar. Pour over tomatoes. , Cover and refrigerate for at least 3 hours. Drain; serve on lettuce if desired.

- Blanch tomatoes in medium pot of boiling water 30 seconds. Drain. Rinse under cold water. Drain. Peel tomatoes. (Can be made 4 hours ahead. Cover and chill).
- Heat oil in heavy large skillet over high heat. Add herbs and tomatoes and stir until tomatoes are coated with herbs, about 1 minute. Remove from heat. Season to taste with salt and pepper. Transfer to bowl and serve.

- Heat 1 Tb. olive oil in a 12-inch skillet over medium-high flame until it just starts to smoke. Add tomatoes, and season with salt and pepper. Saute, shaking pan frequently, until tomatoes soften and skins just begin to wrinkle, about 2 minutes. Stir in the garlic and continue to shake the pan until garlic is fragrant. Off heat, stir in the basil and remaining 1 Tb. olive oil, then serve.

CHERRY TOMATOES WITH HERBS, BALSAMIC, AND MOZZARELLA
I think I got the original idea for this recipe from a South Beach diet cook book, but have modified it throughout the years. This is a good snack to bring with you to work. When I don't have cherry tomatoes on hand, I sub two or three sliced roma tomatoes (with a bit of shredded mozzarella sprinkled on top instead of the chopped cheese stick). This makes a lot of "juice" if let sit for 30 mins or longer, so sometimes I'll serve this over a bed of romaine (it's my boyfriend's favorite "salad dressing"). I use dried herbs, but I'm sure fresh would be amazing! (I've tried starting several herb gardens over the years, but now that I am finally in a house and settled in one place, hopefully I'll be more successful!) Prep time includes 30 minutes for marinating.

- Make the vinaigrette by combining the olive oil, seasoned rice vinegar, red wine vinegar, minced garlic, sea salt & freshly cracked pepper, to taste, and a pinch of crushed red pepper flakes together in a small jar; seal with a lid and shake until well combined. Set aside until needed. Side Note: We like a tangy vinaigrette, if you don’t, add more olive oil, to taste.
- Make the salad by combining the halved cherry tomatoes, fresh basil, and fresh parsley in a bowl.
- Shake the vinaigrette well then drizzle some on the salad, to taste. Toss to coat evenly then season with freshly cracked pepper, to taste.
