1/3 cup fat-free milk or unsweetened almond milk
1/4 cup old-fashioned oats
1/4 cup reduced-fat plain Greek yogurt
1 tablespoon orange marmalade spreadable fruit
1-1/2 teaspoons chia seeds
1/4 teaspoon vanilla extract
1/3 cup orange segments, chopped

Steps:

  • In a jar with a tight-fitting lid, combine the milk, oats, yogurt, marmalade, chia seeds and vanilla. Cover and shake to combine. Stir in orange segments. Cover and refrigerate for 8 hours or overnight.

1 quart plain low-fat yogurt
1/4 cup raisins
1/4 cup chopped walnuts
1 1/2 teaspoons pure vanilla extract
1/4 cup good honey
1 orange, zest grated
1/2 to 1 cup freshly squeezed orange juice
Orange, orange zest, raisins and walnuts, for garnish (optional)

Steps:

  • Line a sieve with cheesecloth or paper towels and suspend it over a bowl. Pour the yogurt into the sieve and allow it to drain, refrigerated, for 3 hours or overnight.
  • Place the thickened yogurt into a medium bowl and stir in the raisins, walnuts, vanilla, honey, and orange zest. Thin with orange juice until it is a desirable consistency. Garnish with sections of orange, orange zest, raisins, or walnuts and serve.

1 pound fresh strawberries, hulled and roughly chopped
2 tablespoons freshly squeezed orange juice
2 tablespoons white sugar
¼ teaspoon grated orange zest
2 tablespoons chia seeds
1 (8 ounce) jar with lid

Steps:

  • Place strawberries in a medium saucepan over medium heat. Add orange juice, sugar, and orange zest. Stir to combine and bring to a boil. Reduce heat to medium-low and simmer, stirring occasionally, for 10 minutes.
  • Add chia seeds and stir to combine. Simmer until jam starts to thicken, about 5 minutes more. Use a potato masher to break up large pieces for a smoother texture. Cool completely; jam will continue to thicken as it cools. Pour into the jar and refrigerate.

4 tsp chia seeds
1/2 cup (4 fl oz/125ml) blood orange juice
1 tbsp agave syrup or acacia honey
2 blood oranges, peeled
1/2 cup (4 oz/125g) soy or plain (natural) yogurt

Steps:

  • Put the chia seeds, blood orange juice and agave syrup into a bowl and mix together. Put the bowl in the refrigerator for at least 30 minutes, or until the chia seeds have absorbed all the liquid.
  • Using a sharp knife, segment the oranges by cutting away the pith and membrane so that only the flesh remains.
  • Divide the chia mixture between 2 bowls, add the blood orange segments and top each portion with half the yogurt. Serve immediately.

1/4 teaspoon orange-flower water
1 pinch kosher salt
2 tablespoons honey, plus more for serving
1/4 cup chia seeds
2 blood oranges
Chopped pistachios (for serving)

Steps:

  • Whisk yogurt, blood orange juice, orange-flower water, salt, and 2 Tbsp. honey in a medium bowl. Whisk in chia seeds, cover, and chill at least 8 hours and up to 1 day.
  • Cut peel and white pith from oranges. Cut along sides of membranes to release segments into a medium bowl.
  • Give pudding a good stir and divide between small bowls, layering with some orange segments. Top with pistachios and remaining segments; drizzle with honey.
