8 oz. (225 g) fresh cranberries
1 cup (240 ml) water
1 cup (200 g) granulated sugar
20 fresh mint leaves
3 tablespoons lime juice
4 oz. (120 ml) cranberry simple syrup
4 oz. (120 ml) white rum
ice cubes
4 oz. (120 ml) sparkling water
Garnish (optional) : fresh mint leaves, fresh cranberries, lime slices

Steps:

  • In a small saucepan combine the cranberries, water and sugar and bring to a simmer over medium heat.
  • Reduce the heat to low and continue to cook for about 10 minutes, until the sugar is completely dissolved and the cranberries burst and soften. Set aside and allow to cool.
  • Once the mixture has cooled, strain it, pressing on the cranberries to extract as much liquid as possible. Discard the cranberries or save them for another use.
  • Place 10 mint leaves and 1 ½ tablespoon of lime juice into a glass. Muddle the mint in the juice by pressing the mint leaves with the end of a wooden spoon.
  • Add in 2 ounces (60 ml) of cranberry simple syrup, 2 ounces (60 ml) of white rum and stir.
  • Top with ice cubes, and 2 ounces (60 ml) of sparkling water.
  • Garnish with a few mint leaves, fresh cranberries and a slice of lime.
  • Enjoy!

mint leaves and lime wedges, (for garnish)

Steps:

  • In a small saucepan, combine the sugar and water. Heat and stir until sugar dissolves. Let the syrup cool completely. It's best to make it ahead and let it chill in the fridge. Make double if you think you'll need more mojitos!
  • Using a wooden spoon, mash mint with the simple syrup in the bottom of a large pitcher. Add the rum and lime juice; stir.
  • Mix in thawed cranberry juice concentrate and sparkling water. Stir in 6 cups of ice, or serve individual cocktails over ice. Garnish with fresh mint leaves.

  • Put about 10 mint leaves and 1/2 oz lime juice in each glass. With the back of a wooden spoon or a muddler mash the mint up.

  • Cut the lime into at least 6 thin slices. Set aside.
  • Place 4-5 mint leaves and a lime slice in the bottom of each glass. With a muddler or wooden spoon handle, muddle the lime and mint to release the mint juices.
  • Pour 1/2 cup rum, 1/4 cup sweet and sour mix, and 1/2 cup cranberry juice into each glass and stir.

2 sprigs of fresh rosemary
6 large mint leaves
1/4 cup lime juice
1/4 cup 100% cranberry juice
3 oz. white rum
2 cups of ice
1/4 cup plain sparkling water
fresh cranberries
fresh rosemary

Steps:

  • First, prepare rosemary simple syrup. Place honey, water, and rosemary in a small saucepan. Turn heat to medium/high and bring to a boil.
  • Once boiling, turn down to low and let simmer for 10 minutes. Set aside.
  • Next, place mint leaves and lime juice in a mason jar and muddle mint leaves in the lime juice to release flavors.
  • Then, add the rosemary simple syrup, cranberry juice, rum, and a handful of ice. Put the top on and shake, mixing everything together.
  • Fill 2 glasses with ice and then pour cranberry mojito equally into the glasses.
  • Top off both drinks with sparkling water.
