Steps:
- In a small saucepan combine the cranberries, water and sugar and bring to a simmer over medium heat.
- Reduce the heat to low and continue to cook for about 10 minutes, until the sugar is completely dissolved and the cranberries burst and soften. Set aside and allow to cool.
- Once the mixture has cooled, strain it, pressing on the cranberries to extract as much liquid as possible. Discard the cranberries or save them for another use.
- Place 10 mint leaves and 1 ½ tablespoon of lime juice into a glass. Muddle the mint in the juice by pressing the mint leaves with the end of a wooden spoon.
- Add in 2 ounces (60 ml) of cranberry simple syrup, 2 ounces (60 ml) of white rum and stir.
- Top with ice cubes, and 2 ounces (60 ml) of sparkling water.
- Garnish with a few mint leaves, fresh cranberries and a slice of lime.
- Enjoy!

- In a small saucepan, combine the sugar and water. Heat and stir until sugar dissolves. Let the syrup cool completely. It's best to make it ahead and let it chill in the fridge. Make double if you think you'll need more mojitos!

- Put about 10 mint leaves and 1/2 oz lime juice in each glass. With the back of a wooden spoon or a muddler mash the mint up.
- Put ice in each glass and pour 2 oz. of the cranberry syrup and 2 oz. rum into each glass.
- Top off each glass with soda water (1 1/2-2 oz). Sprinkle some fresh cranberries in and add a lime wedge for garnish.
CRANBERRY MOJITO COCKTAIL RECIPE
Steps:
- Cut the lime into at least 6 thin slices. Set aside.
- Place 4-5 mint leaves and a lime slice in the bottom of each glass. With a muddler or wooden spoon handle, muddle the lime and mint to release the mint juices.
- Pour 1/2 cup rum, 1/4 cup sweet and sour mix, and 1/2 cup cranberry juice into each glass and stir.
- Add 2 lime slices into each glass and add ice. Top off the glass with about 1/4 cup lemon-lime soda and stir.
- If desired, garnish with lime wedges, frozen cranberries and a mint sprig.
THE REAL MOJITO
This is an authentic recipe for mojito. I sized the recipe for one serving, but you can adjust it accordingly and make a pitcher full. It's a very refreshing drink for hot summer days. Be careful when drinking it, however. If you make a pitcher you might be tempted to drink the whole thing yourself, and you just might find yourself talking Spanish in no time! Tonic water can be substituted instead of the soda water but the taste is different and somewhat bitter.

- First, prepare rosemary simple syrup. Place honey, water, and rosemary in a small saucepan. Turn heat to medium/high and bring to a boil.
- Once boiling, turn down to low and let simmer for 10 minutes. Set aside.
- Next, place mint leaves and lime juice in a mason jar and muddle mint leaves in the lime juice to release flavors.
- Then, add the rosemary simple syrup, cranberry juice, rum, and a handful of ice. Put the top on and shake, mixing everything together.

- Put the cranberries, sugar and water in a medium saucepan and bring to a simmer. Lower the heat to low and continue to cook for about 10 minutes, remove from heat before the berries start bursting. Should you have some of the cransberries burst, don't fret over it. Cool completely.
