EASY OLD SCHOOL TAMALE PIE (WITHOUT JIFFY!)



Easy Old School Tamale Pie (Without Jiffy!) image

Made from scratch, yet quick and easy, Tamale Pie is an old school casserole with layers of seasoned beef or chicken, cornbread, and melted cheese.

3/4 cup cornmeal
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 egg
4 tablespoons melted butter, (cooled)
1/3 cup milk
14.75 ounce can cream style corn
1 pound lean ground beef, (such as sirloin)
10 ounce can enchilada sauce, ((read label to make sure it's gluten free))
1 cup salsa
1 teaspoon chili powder
1 1/2 cups shredded colby jack cheese

Steps:

  • Preheat oven to 400ºF. Grease a cast iron skillet with butter or spray a pie plate, 11X7 pan, or 9X9 pan with cooking spray.
  • Whisk together cornmeal, sugar, baking powder, and salt. Add egg, melted butter, milk, and cream style corn. Whisk to combine. Pour into prepared baking dish and bake for 20 minutes, or until toothpick comes out clean and edges are golden brown. Remove from oven and decrease oven temperature to 375ºF.
  • Use the handle of a wooden spoon to poke holes all over the cornbread surface. Pour 1/2 can enchilada sauce on top and spread evenly over cornbread. Set aside.
  • While cornbread is baking, begin to make filling. In a large skillet brown beef over medium high heat and drain, if necessary. To the browned beef stir in remaining enchilada sauce, salsa, and chili powder. Bring to a boil and simmer, uncovered, for 5 minutes until thickened.
  • Spread beef filling over cornbread. Top with cheese and return to 375ºF oven for 15 minutes, or until cheese is bubbly. Let sit for 5-10 minutes before cutting. Serve with additional salsa, cilantro, sour cream, and sliced avocado.

1 cup chopped onion
½ cup chopped green bell pepper
1 (14.5 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
1 cup frozen corn
1 (2.25 ounce) can sliced black olives, drained
1 tablespoon chili powder
1 teaspoon minced garlic
1 teaspoon ground cumin
1 teaspoon salt
¼ teaspoon red pepper flakes, or to taste
¼ teaspoon ground black pepper
1 cup shredded Cheddar cheese
1 ½ cups milk
2 tablespoons butter
1 tablespoon white sugar
½ teaspoon salt
½ cup cornmeal
1 cup shredded Cheddar cheese
2 eggs, lightly beaten
1 tablespoon sour cream, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef, onion, and bell pepper in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Stir tomatoes, tomato sauce, corn, olives, chili powder, garlic, cumin, salt, red pepper flakes, and black pepper into the skillet. Bring to a low boil, about 5 minutes. Reduce heat to medium-low and let simmer for 5 minutes. Stir in 1 cup Cheddar cheese and continue to simmer until melted, 3 to 5 minutes. Remove from heat and transfer mixture to the prepared baking dish.
  • Heat milk, butter, sugar, and salt for topping in a large saucepan over medium heat until butter has melted, 2 to 3 minutes. Reduce heat to low and stir in cornmeal a little at a time, stirring vigorously with each addition, until smooth and thickened. Remove from heat and stir in 1 cup Cheddar cheese. Drizzle in beaten eggs slowly, stirring vigorously until combined. Pour mixture over filling in the prepared dish, smoothing evenly over the surface.
  • Bake in the preheated oven until top is golden brown and filling is bubbly, 30 to 40 minutes. Allow pie to rest for 10 to 15 minutes before serving.

1 tablespoon corn oil
1 1/2 pounds ground beef (85 percent lean)
1 medium onion, finely chopped
1 clove garlic, minced
Kosher salt
2 tablespoons tomato paste
1 1/2 tablespoons chili powder
1/2 teaspoon ground cumin
1 1/2 cups green or red enchilada sauce
1 cup canned black beans, rinsed and drained
1 cup frozen corn kernels, thawed
1/4 cup chopped fresh cilantro
1 1/2 cups shredded Monterey Jack cheese
3 cups self-rising cornmeal
2 1/2 to 3 cups buttermilk
2 tablespoons corn oil
4 scallions, chopped

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the oil in a 10-inch cast-iron skillet over medium-high heat. Add the beef, onions, garlic and 1 teaspoon salt and cook, stirring and breaking up any clumps with a wooden spoon, until the meat is brown and the onions are softened, about 6 minutes. Add the tomato paste, chili powder and cumin and cook, stirring, about 1 minute. Stir in the enchilada sauce, beans, corn and cilantro and season with salt. Bring to a simmer. Remove from the heat and sprinkle with the cheese.
  • Add the cornmeal to a mixing bowl. Mix in the buttermilk and oil. You want the mixture to be thick but pourable. Stir in the scallions. Pour on top of the meat mixture in the skillet and spread in an even layer. Bake until the meat is bubbling and the cornbread is golden brown, 20 to 25 minutes.

CORNBREAD TAMALE PIE

This recipe came to The Times in a 2006 magazine article about the 75th anniversary edition of The Joy of Cooking, the soup-to-nuts cookbook found on practically every home cook's shelf since its first publication in 1931. Like many of the book's beloved recipes, this dish is a crowd-pleasing, homespun classic that is incredibly simple to put together. First, make a quick chili of beef, black beans, corn, green pepper and onion seasoned with chile power and cumin. Spread that in a baking dish, top with a simple cornbread batter and pop it into the oven. In about a half hour: tamale pie. Serve with hot sauce, a dollop of sour cream and a few slices of avocado. If you're trying to eat less red meat, ground turkey or chicken would make a fine substitute for the beef.

Then add the beans, corn, tomato sauce, broth, bell pepper (if using), chili powder, cumin, 1 teaspoon salt and 1/4 teaspoon black pepper. Simmer for 15 minutes. Set aside.
  • In a medium bowl, whisk together the cornmeal, flour, sugar, baking powder and teaspoon salt. In a small bowl whisk together the egg, milk and oil until combined. Whisk the milk mixture into the flour mixture until combined. Spread the meat mixture into the casserole dish and cover with the corn bread topping. The topping will disappear into the meat mixture but will rise during baking and form a layer of corn bread. Bake until the corn bread is brown, 20 to 25 minutes.

5 ounces extra lean ground beef
1/4 cup onion, small dice
2 tablespoons green peppers, small dice
1 small garlic clove, minced
1/2 cup diced tomato, canned with juice

3 tablespoons yellow cornmeal (divided)
1 pinch salt
1/2 cup nonfat milk or 1/2 cup low-fat milk
1 egg white

Steps:

  • Pre-heat oven to 350 degrees.
  • In a non stick skillet, brown the ground beef and break it apart using a spoon. Add the onions and green peppers and garlic. Once the meat is cooked, drain off any excess fat. Alternately, transfer the contents of the pan to a plate lined with two paper towels, wipe skillet and return beef to pan.
  • After draining excess fat using either method, add the tomatoes, corn, chili powder and 1/2 tablespoon of cornmeal. Bring the mixture to a simmer. Transfer to a one quart casserole.
  • Place the milk, cornmeal and salt in a small saucepan and bring to a light boil. Reduce to a simmer and stir frequently until thickened. Alternately, you can cook the ingredients in a microwave and cook for 2 and 1/2 minutes, stirring every 30 seconds.
  • In a small bowl beat the egg whites by hand until foamy. Slowly add in the cornmeal, stirring to make sure it does not scramble the egg. Add the soy cheese/cheese if using.
  • Top the casserole filling with the cornmeal mush.
  • Bake for 25 to 30 minutes the top should be puffed and lightly browned.

1 cup of chunky salsa verde (the green kind!)
1 (10 ounce) can rotel, drained
1 cup cream-style corn
1 (8 ounce) box Jiffy cornbread mix or 1 (8 ounce) box other sweet cornbread mix
sliced black olives
shredded cheese

Steps:

  • preheat oven to 350.
  • brown the meat breaking up all large crumbles.
  • drain the fat from the meat.
  • add the rotel and the salsa verde and stir well making sure everything is mixed.
  • in a small bowl mix the cornbread mix and the cream corn just until moist and mixed.
  • spoon the meat mixture into a 1 1/2 quart baking dish.
  • top with the cornbread mixture, spreading it evenly over the meat.
  • sprinkle the top with sliced black olives.
  • bake for 40-50 minutes.
  • during the last five minutes of cooking add the shredded cheese, and return to oven until cheese is melted.

1 lb 93% lean ground beef
1 medium onion, chopped
1 large green pepper, chopped
4 teaspoons canola oil
3 teaspoons chili powder
2 garlic cloves, chopped
1 teaspoon salt
1 dash pepper
1 (6 ounce) can tomato paste
1 (10 ounce) can Mexican-style tomatoes (Ro-tel brand works)
1 (16 ounce) can whole no-sugar-added kernel corn (with juice)
1 (16 ounce) can dark no-sugar-added kidney beans
1 cup shredded fat-free cheddar cheese

Steps:

  • Preheat oven to 350*.
  • Combine cornmeal, water and chicken bouillon in a medium saucepan; whisk or stir constantly over medium heat until slightly thickened.

  • Preheat oven to 325°. In a large skillet, cook beef, onion and green pepper over medium heat until meat is no longer pink; drain. After wondering how Recipe #224699 would work with chicken, I began experimenting and came up with this dish. This is serious comfort food with a Tex-Mex twang. Small serving cooking means grabbing bits of leftovers in the fridge, so I've included a couple of ingredient options.

cooking spray
1/4 cup onion, small dice
2 tablespoons green peppers or 2 tablespoons red peppers, small dice
1 small garlic clove, minced
1 tablespoon fat free chicken broth
3 ounces cooked boneless skinless chicken breasts (comes to a loose 3/4 cup) or 3 ounces cooked boneless skinless chicken thighs, shredded or diced small (comes to a loose 3/4 cup)
1/4 cup fat free chicken broth
1 teaspoon chili powder
1/4 teaspoon cumin
1/3 cup red beans or 1/3 cup kidney bean, rinsed and drained
1/2 cup canned diced tomato, measure with juice
1/2 cup frozen corn
3 tablespoons yellow cornmeal (divided)
1 pinch salt
1/2 cup nonfat milk or 1/2 cup low-fat milk
1 egg white
2 tablespoons soy cheddar cheese (optional) or 2 tablespoons cheddar cheese, shredded (optional)

Steps:

  • Pre-heat oven to 350 degrees.
  • Prepare a non-stick skillet, with a light coating of cooking spray. Add the onions and green peppers and cook for a minute. Add 1 tablespoon of broth and cook an additional 2 minutes until the vegetables have softened.
  • Add the shredded chicken, chili powder, cumin and broth and stir until the broth is heated. Now add the tomatoes, corn, beans and 1/2 tablespoon of corn meal. Bring the mixture to a simmer. Transfer to a one quart casserole.
  • Place the milk, cornmeal and salt in a small saucepan and bring to a light boil. Reduce to a simmer and stir frequently until you have a thickened mush. Alternately, you can cook the ingredients in a microwave and cook for 2 and 1/2 minutes, stirring every 30 seconds.
  • In a small bowl beat the egg whites by hand until foamy. Slowly add in the corn meal, stirring to make sure it does not scramble the egg. Add the soy cheese/cheese if using.
  • Top the casserole with the cornmeal mush.
  • Place the casserole on a cookie sheet to catch drips and place in the oven. Bake for 25 to 30 minutes the top should be puffed and lightly browned.

1 (16 ounce) package sweet cornbread mix (such as Martha White®)
½ cup milk
1 egg
2 pounds extra-lean ground beef
1 small onion, diced
1 jalapeno pepper, minced, or more to taste
1 (8 ounce) can enchilada sauce
1 cup chunky salsa
1 cup frozen corn
¼ teaspoon ground chipotle pepper
½ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix cornbread mix, milk, and egg together in a bowl until smooth.
  • Combine ground beef, onion, and jalapeno pepper in a large oven-proof skillet; cook and stir until beef is browned, about 5 minutes. Stir in enchilada sauce, salsa, corn, and chipotle pepper until heated through, about 5 minutes. Pour cornbread batter on top.
  • Bake in the preheated oven until top is golden brown, about 40 minutes. Sprinkle Cheddar cheese over the top. Continue baking until cheese is melted, about 5 minutes more. Let stand 10 to 15 minutes before serving.

1 cup yellow cornmeal
2 1/4 cups cold water
1 chicken bouillon cube
1 lb lean ground turkey
1 onion, chopped
1 green pepper, chopped
4 teaspoons chili powder
4 garlic cloves
1 teaspoon salt
1 dash pepper
1 (6 ounce) can tomato paste
14 1/2 ounces Ro-Tel tomatoes
1 cup whole kernel corn
14 1/2 ounces dark red kidney beans, rinsed
2 cups low-fat cheese

Steps:

  • Preheat oven to 350*. Spray a 9 x 13" casserole pan with Pam.
  • Bring 2-1/4 cups water plus bouillon cube to a boil.
  • Stir in polenta, and whisk until fairly thick and most lumps are gone (just a few minutes). Spread into bottom of casserole pan and set aside.
  • Brown beef, onion, and green pepper.
  • Add chili powder, garlic, salt and pepper, and mix well. Add tomato paste, Ro-Tel, corn (with juice; do not drain), and kidney beans.
  • Spread over the cornmeal crust and top evenly with cheese. Bake 20-25 minutes at 350*.

2 cans (14-1/2 ounces each) stewed tomatoes
1 medium onion, chopped
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/4 teaspoon salt

10 flour tortillas (6 inches)
3 cups (12 ounces each) shredded cheddar-Monterey Jack cheese or Colby-Jack cheese
1 can (2-1/4 ounces) sliced ripe olives, drained

Steps:

  • In a skillet, brown ground beef; drain. Add tomatoes, onion and spices. Simmer, uncovered, for 20 minutes. , Arrange 5 tortillas in the bottom of a 13x9-in. baking dish, tearing tortillas as needed. Cover with half of the meat mixture, then half of the cheese. Repeat layers, using remaining tortillas, meat mixture and cheese. Sprinkle with olives. , Bake at 350° for 30 minutes or until heated through. Let stand a few minutes before serving.
