HOLIDAY RECIPES: HEAVENLY HASH
An easy holiday fruit salad that comes from an old family recipes

Steps:
- Freeze the mixing bowl for 20 minutes before whipping the cream.
- Add 1 tablespoon of pineapple juice from the can to the whipping cream as you whip it.
- Stop when soft peaks form.
- Drain the juice for all the cans of fruit and combine in a large bowl.
- Add the bag of marshmallows.
- Then, fold in the whipped cream.
- Cover and put in the fridge until ready to serve.
CHICKEN-CRANBERRY HASH
This is great as is, but if you like, top the hash with a poached egg. Either way, have sautéed spinach and seeded breadsticks on the side and hot fudge sundaes afterward.

- Combine potatoes, diced chicken, green onions, cranberries, half and half and sage in large bowl and toss to blend well. Season with salt and pepper.
- Heat oil in heavy medium skillet over medium heat. Add hash mixture and spread to even thickness. Cover skillet and cook 15 minutes, stirring up bottom of hash every 5 minutes. Uncover skillet, increase heat to high and cook until hash is golden brown and crusty, stirring occasionally, about 10 minutes.
- Transfer hash to plates and serve.
HEAVENLY HASH CAKE
This quick and easy recipe makes a nutty chocolate cake with marshmallows and pecans.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8x12 inch pan.
- In a large bowl, cream 1 cup butter and sugar. Add eggs one at a time, mixing well with each addition. Add vanilla and mix to incorporate.
- In a separate bowl, mix flour and cocoa together, then add to the egg mixture and mix well to combine. Add nuts and combine.
- Pour into prepared 8x12 inch pan and bake at 350 degrees F (175 degrees C) for 40 minutes. While cake is still hot, cover with marshmallows.
- To Make Topping: In a small bowl, combine 4 tablespoons melted butter, confectioners' sugar, 4 tablespoons cocoa and evaporated milk. Spread evenly over top of cake.

This recipe is very easy to make. It's very delicious made with rice, pineapples, marshmallows and whipped cream. It has been a favorite in my house for years - you've got to try it!

- In a saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes. Cool completely.
- In a large bowl, combine rice, pineapple, marshmallows, cherries and about 1 tablespoon cherry juice. In a chilled bowl, whip the cream until peaks form. Fold in confectioners sugar. Fold whipped cream into rice mixture. Refrigerate for 2 hours.

- Sprinkle marshmallows and nuts in a greased 13-in. x 9-in. pan; set aside. In a small saucepan, melt chips and peanut butter over low heat, stirring constantly until smooth. GELATIN HEAVENLY HASH (JELL-O BRAND)
I bought a bunch of jello on sale and didn't know what to do with it. I discovered Favorite Recipes Jello Brand Fun and Fabulous Recipes, and oila! I used orange gelatin, but you can use whatever flavor you want. I also substituted blueberries for the crushed pineapple (I didn't have any). Next time I'd like to try this with real whipped cream. I used sour cream (I didn't try it with non-dairy whipped topping). Very tasty stuff and simple to make. Cook time excludes chill time.

- Complete dissolve gelatin in boiling water.
- Combine cold water and ice cubes to make 1 1/4 cups.
- Add to gelatin, stirring until slightly thickened.
- Remove any unmelted ice.
- Add whipped topping, blending until smooth.
- Stir in pineapple, mandarin oranges, marshmallows, and nuts.

HEAVENLY CRANBERRY HASH
This is a family recipe that was at every Thanksgiving and Christmas dinner table while I was growing up. A sweet alternative to Cranberry Sauce.

- Seperate cranberries to cull out bad ones. Rinse remaining cranberries and put in food proccessor. Proccess using short bursts and scraping side of bowl till cranberrries are finely chopped. Put in glass bowl and cover with 1/2 cup of granulated sugar. Cover bowl with plastic wrap and refrigerate overnight at least 8 hours.
- After cranberries have been refrigerated they will soak up sugar. Add chopped pecans and grapes. Mix well with wooden spoon. Cover and put back in refrigerator.
- In a large bowl add heavy whipping cream, remaining sugar and vanilla. Beat on high till stiff peaks form. Fold in cranberry mixture and marshmallows. Cover and refrigerate for 2 or more hours. Then serve as a side dish or dessert.
- Great side for those who are finicky about cranberries. Kids love it.
