Creamed Collards Recipe

  1. collard greens
  2. bacon
  3. butter
  4. onions
  5. chicken broth
  6. apple cider vinegar
  7. salt
  8. pepper
  9. shallots
  10. garlic cloves
  11. flour
  12. milk
  13. nutmeg


  1. rinse collard greens
  2. trim and discard thick stems from bottom of greens and coarsely chop
  3. cook bacon , in batches , in a 8 quart stock pot over medium heat , 10 to 12 minutes or until crisp
  4. remove bacon with a slotted spoon and drain on paper towels , reserving drippings in stock pot
  5. reserve 1 / 4 cup bacon
  6. add butter and onions to hot drippings in skillet
  7. saute onion 8 minutes or until tender
  8. add collards , in batches , and cook stirring occasionally , 5 minutes or until wilted
  9. stir in chicken broth , next 3 ingredients and remaining bacon
  10. bring to a boil
  11. reduce heat to low , and cook , stirring occasionally , 15 minutes or to desired degree of tenderness
  12. drain collards , reserving 1 cup liquid
  13. stir in bechamel sauce
  14. stir in reserved cooking liquid , 1 / 4 cup at a time to desired consistency
  15. sprinkle with reserved bacon
  16. bechamel sauce: melt butter in heavy saucepan over low heat , add shallots and garlic and saute l minute
  17. whisk in flour until smooth
  18. cook 1 minute , whisking constantly
  19. increase heat to medium , gradually whisk in milk
  20. cook over medium heat , whisking constantly , 5 to 7 minutes or until mixture is thickened and bubbly
  21. stir in salt , pepper and nutmeg
