Egg yolk lends an attractive golden color to this pie pastry. The recipe makes enough for one double-crust pie or two single-crust pies.-Dolores Skrout, Summerhill, Pennsylvania

Yield Pastry for double-crust pie (9 inches).

Number Of Ingredients 7

2-1/2 cups all-purpose flour
2 teaspoons sugar
1/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cup shortening
1 egg yolk, lightly beaten
5 to 6 tablespoons cold water

Steps:

  • In a small bowl, combine the flour, sugar, baking powder and salt; cut in shortening until mixture is crumbly. Combine the egg yolk and water; gradually add to flour mixture, tossing with a fork until a ball forms. Cover and refrigerate for 30 minutes or until easy to handle., For a double crust, divide pastry in half so that one ball is slightly larger than the other. Roll out larger ball to fit a 9-in. pie plate. Transfer pastry to pie plate. Trim pastry even with edge of plate. Add filling. , Roll out remaining pastry to fit top of pie; place over filling. Trim, seal and flute edges. Cut slits in top. Bake according to recipe directions., For two single crust, divide pastry in half. Roll out each portion to fit a 9-in. pie plate. Transfer pastry to pie plate. Trim pastry to 1/2 in. beyond edge of plate; flute edges. Fill or bake shell according to recipe directions.

Here's what you need: puff pastry, water, eggs, egg wash, olive oil, orange bell pepper, red bell pepper, salt, pepper, bacon, shredded cheddar cheese, fresh chives

Number Of Ingredients 12

2 sheets puff pastry
¼ cup water
6 eggs
egg wash
1 tablespoon olive oil
1 orange bell pepper, diced
1 red bell pepper, diced
1 teaspoon salt
1 teaspoon pepper, divided
8 strips bacon, cooked and finely diced
1 cup shredded cheddar cheese
¼ cup fresh chives, finely chopped

Steps:

  • Preheat oven to 350°F (180°C).
  • Make three vertical cuts from top to bottom of each puff pastry sheet. The cuts should be about 2.5-inches (6-cm) apart. Repeat horizontally to make 18 squares.
  • Brush a square pastry lightly with water then place another square on top of it. Cut off any uneven edges. Repeat with the remaining squares.
  • Place the square pairs about 1-inch apart on a baking sheet, and brush the top of each with the egg wash.
  • Bake for 20 minutes or until pastry is a pale golden color. Remove from oven and let cool.
  • In a large pan, combine olive oil, peppers, salt and pepper. Cook for 8 minutes or until the peppers have softened.
  • Cut a rectangle in the middle of each square puff pastry and push it down. Fill the inside of the puff with a thin layer of bacon, cheddar cheese, and peppers. Use a small spoon or utensil to push the layers down. Carefully crack an egg on top.
  • Bake for an additional 20 minutes or until egg white is no longer translucent or runny.
  • Serve with pepper and chives.
  • Enjoy!

Yield Makes 6 individual pies

Number Of Ingredients 4

125g lard , chopped
125g butter , chopped
650g plain flour , plus extra for dusting
2 eggs , 1 beaten, 1 separated egg yolk for glazing (freeze the white for another recipe)

Steps:

  • Rub the lard and butter into the flour with a generous pinch of sea salt until completely combined. Add the beaten egg and 100ml ice-cold water and mix until you have a soft dough. Transfer to the fridge and chill for at least 1 hr, or until needed.
  • Divide the pastry into 12 equal pieces and roll out into rounds on a lightly floured surface. Use six of the rounds to line the bottoms of six individual pie dishes, leaving an overhang. Fill the pies with the mixture of your choice, brush the rims with some of the egg yolk, top with the remaining pastry rounds, then trim and crimp the edges. Decorate with the trimmings, if you like. Glaze with more egg yolk, or as indicated in the filling recipe, and chill until you're ready to cook.
  • Heat the oven to 220C/200C fan/gas 6 with a baking tray inside. Put the pies on the hot tray and bake for 30-35 mins until golden. Leave to rest as directed, then serve in the dishes or turn out onto plates.

2 1/2 cups flour
3/4 teaspoon salt
1/2 cup very cold butter
1/2 cup very cold margarine
2 teaspoons lemon juice or 2 teaspoons white vinegar
1 egg
ice cold water

Steps:

  • Put flour and salt in the bowl of a food processor and pulse a few times to mix well.
  • With the motor OFF, cut in the cold butter and margarine.
  • Pulse until the fats are in about 1/4 inch pieces.
  • Put the lemon juice OR vinegar and the egg, beaten into a measuring cup and add enough ice water to make 1/2 cup.
  • Start your processor and feed water in a slow stream through the tube.
  • Watch what your doing as you may not need all the liquid, because as soon as the dough begins to gather together stop the machine.
  • The dough does not have to form a ball but it should be soft and silken.
  • Turn dough out onto waxed paper, form into two balls, wrap and chill for 30 minutes.

Two picnic favourites in one - try them with piccalilli or brown sauce for an extra kick

9 medium eggs (it's important they're not large)
8 good-quality large pork sausages (from the meat counter if you can), meat squeezed out
6 spring onions , finely sliced
2 x 500g blocks frozen shortcrust pastry , defrosted
plain flour , for dusting
brown sauce or piccalilli, to serve

Steps:

  • Bring a pan of water to the boil and lower in 8 of the eggs. Bring back to the boil and simmer for 6 mins. Drain, then cool under cold water. Peel carefully as the yolks will still be quite soft. Meanwhile, mix the sausagemeat and onions together using your hands.
  • Roll out a block of pastry until large enough to cut 3 x 18cm circles (this is about the size of a large cereal bowl or a side plate). Re-roll the trimmings; you should get 4 circles from each block. Have 2 baking sheets ready, dusted with a little flour.
  • Using slightly wet hands, squash out an eighth of the sausage mix over each of the rounds of pastry, going almost right to the edges. Slightly wet the edges of the pastry. Sit a peeled egg in the middle of the sausage, grind over a little salt and pepper, then pull the sides up over the egg and seal. Crimp the edges and put onto the baking sheet.
  • Beat the final egg and brush over the pasties. Chill for 30 mins. Heat oven to 220C/200C fan/gas 7. Bake the pasties, one tray at a time, for 25 mins until golden. Bake them on the morning of the picnic and take them along warm, or bake them the day before, allow to cool, chill in the fridge, then pack up for your picnic with your sauce of choice.
