This rich and creamy blue cheese dressing is a bold topping for a simple green salad, and takes only seconds to make!

2 cups mayonnaise
1 ½ cups buttermilk
8 ounces Roquefort cheese, crumbled
2 tablespoons Worcestershire sauce
1 teaspoon garlic powder

Steps:

  • In a blender or food processor, combine mayonnaise, buttermilk, cheese, Worcestershire and garlic powder, and process until smooth. Store in tightly covered jar in the refrigerator until ready to serve. Serve over tossed salad greens.

1/2 lb Roquefort cheese, crumbled (or blue cheese)
1/2 cup finely chopped pecans
1 (8 ounce) package cream cheese, softened
1 cup cognac

Steps:

  • Combine all ingredients, blending well by hand or whip with an electric mixer until smooth and fluffy.
  • Makes about 1 1/2 cups.

Yield yields 2 cups

Number Of Ingredients 6

1/2 cup crumbled Roquefort cheese
One 3-ounce package cream cheese, softened
1/2 cup mayonnaise
1 tablespoon lemon juice
1 tablespoon wine vinegar
1/2 cup sour cream

Steps:

  • Blend Roquefort and cream cheese until smooth. Mix in remaining ingredients. Beat well. Chill for 2 hours. Serve with vegetable crudité.

ROQUEFORT DIP WITH APPLE, ENDIVE, AND CELERY HEARTS

Number Of Ingredients 9

4 ounces fromage blanc or softened cream cheese (about 1/2 cup)
3 tablespoons milk
2 teaspoons medium-dry Sherry
4 ounces Roquefort (about 1 cup crumbled)
2 Belgian endives
12 inner celery ribs with leaves
1 medium head white radicchio* (optional)
1 crisp red apple such as Gala or Fuji
*available at some specialty produce shops

Steps:

  • If using fromage blanc, in a bowl stir together with milk and Sherry until smooth. If using cream cheese, with an electric mixer beat together with milk and Sherry until smooth. Crumble Roquefort and gently stir into mixture (being careful not to break up lumps). Dip may be made 1 day ahead and chilled, covered.
  • Have ready a large bowl of ice and cold water. Trim root ends of endives and separate leaves. Trim celery to 4- to 6-inch lengths. Remove any discolored outer leaves from radicchio and trim root end slightly so radicchio stands upright. Put vegetables in bowl of ice water to crisp (and to help radicchio leaves open). Let vegetables stand at least 15 minutes and up to 2 hours.
  • In a colander drain radicchio and shake to remove water. Twist and pull out center leaves to form a "bowl" for dip. Spoon dip into radicchio or a small bowl.
  • In colander drain endive and celery and pat dry. Quarter apple and remove core. Cut quarters into thin wedges. Put several ice cubes in each of 2 wine glasses and stand endive, celery, and apple over ice.
  • Serve dip with apple, endive, and celery.

1 (3-ounce) package cream cheese softened
1 tablespoon butter or margarine, softened
1 tablespoon mayonnaise
1/2 teaspoon dry mustard
1 cup sour cream
1 (2-ounce) package roquefort cheese or blue cheese, crumbled (about 1/2 cup)
3 tablespoons Parmesan cheese grated (fresh if available)
3 tablespoons green onions minced, including some green
2 to 4 tablespoons milk
Additional grated Parmesan cheese
green onion Sliced
Crackers or chips, assorted raw vegetables, sliced pears or apples*

Steps:

  • In a medium bowl, stir cream cheese, butter, mayonnaise, and dry mustard until smooth. Stir in sour cream until blended. Stir in Roquefort cheese, 3 tablespoons Parmesan cheese, minced green onions, and 2 tablespoons of the milk until blended. (Mixture will be chunky.) Let stand 30 minutes to develop flavor.Just before serving, thin with additional milk to desired consistency. Garnish with Parmesan cheese and sliced green onions. Serve with crackers, chips, vegetables, or fruit.*Dip fruit in lemon juice to keep from turning brown.

1/4 lb cream cheese
2 tablespoons butter
3 tablespoons cognac

Steps:

  • Beat Roquefort cheese, cream cheese and butter until smooth.
  • Gradually add cognac beating steadily.
  • Serve with fruit and bread.

4 ounces cream cheese softened
2 ounces roquefort cheese or blue cheese, crumbled
2 ounces sharp cheddar cheese finely shredded ( 1/2 cup)
1 tablespoon green onions minced
1 tablespoon white wine or dry vermouth (optional)
1/4 teaspoon dry mustard
1/2 cup walnuts finely chopped
Fresh parsley sprigs

Steps:

  • 1. In a small mixer bowl at low speed, beat cheeses for 2 minutes. Add green onion, optional wine or vermouth and mustard. Beat at medium speed for 3 minutes or until fluffy. Cover and chill for 2 hours.2. With wet hands shape into a 3-inch ball and roll in nuts. Place on a cheese board or serving plate garnish with parsley.
