3/4 cup pearled farro
Salt
3 to 4 tablespoons olive oil
divided
1 bundle asparagus
tough ends trimmed
2 shallots
chopped
2 cloves garlic
chopped
1 lemon
3 to 4 tablespoons tarragon or parsley
chopped
Pepper

Steps:

  • Rinse farro and bring 6-7 cups of water to a boil
  • Salt water, add farro and cook to tender, 20-25 minutes, drain
  • Thinly slice asparagus
  • Heat 2 tablespoons olive oil, 2 turns of the pan and lightly brown 3-5 minutes
  • Add shallots and garlic, and toss 2-3 minutes more
  • Add farro to the pan and combine, remove from heat and dress with lemon juice, herbs and more olive oil to coat, about 2 tablespoons
  • Season with salt and pepper to taste
  • Serve alongside Petite Filet or Venison Loin with Pommery Mustard Cream Sauce

1 1/4 cups pearled farro
1 tablespoon olive oil
1 small onion, thinly sliced
1 tablespoon unsalted butter
1 medium turnip, cut into 1/2-inch pieces, plus the chopped greens
1 red apple, cored and cut into 3/4-inch pieces
1 pinch crushed red pepper flakes

Steps:

  • Bring a medium pot of salted water to a boil. Add the farro and cook, stirring occasionally, until al dente, about 25 minutes; drain.
  • Meanwhile, heat the oil in a large skillet over medium-high heat. Reduce the heat to medium, add the onion and a pinch of salt and cook, stirring often, until soft and pale golden, about 15 minutes. Increase the heat to medium-high and add the butter. When melted, add the turnip, greens and apple and cook, stirring, until everything is tender and golden brown in spots, 10 to 12 minutes more. Add the farro and crushed red pepper to the skillet and stir to combine. Season with salt and serve warm.

2 tablespoons coriander seeds
1 tablespoon mustard seeds
3/4 cup water
3 cups white balsamic vinegar
6 tablespoons coarse salt
6 tablespoons sugar
2 Vidalia onions, peeled and thinly sliced lengthwise
2 red onions, peeled and thinly sliced
3 fresh bay leaves
3 sprigs fresh thyme

Steps:

  • Wash one glass 1/2-gallon jar with a lid in hot, soapy water, and rinse well. Toast coriander in a small skillet over medium heat until fragrant, about 2 minutes. Add mustard seeds and toast for 30 seconds to 1 minute. Set aside.
  • Combine water, vinegar, salt, and sugar in a small saucepan, and bring to a boil. Cook until sugar and salt have dissolved. Add reserved coriander and mustard seeds; remove from heat, and set aside.
  • Fill jar halfway with either Vidalia or red onion slices. Add bay leaves and thyme; cover with remaining onion slices, packing them with the back of a clean spoon. Leave 3/4 inch of space beneath the rim. Pour hot liquid over onions covering them by 1/4-inch and leaving 1/2-inch of pace beneath the rim. Place lid on the jar, and let stand until cool. Store in the refrigerator, serve within a week.

Serve with Gruyere-topped crostini and a fresh sprig of thyme and we're talking swoon-city. For a vegan version, just omit the gruyere - still absolutely delicious!

1 tablespoon olive oil
2 medium yellow onions (halved and sliced thin)
3 medium cloves garlic (minced (about 1 tablespoon))
1/2 cup dry white wine (I like Pinot Gris for this recipe)
2 1/2 cups low-sodium vegetable broth (plus more if needed)
1 cup pearled farro* (rinsed under cold water)
1 teaspoon chopped fresh thyme (or 1/2 teaspoon dried)
1 tablespoon vegetarian Worcestershire sauce
1/2 teaspoon kosher salt (plus more to taste)
1/4 teaspoon freshly ground black pepper (plus more to taste)
2 tablespoons chopped parsley (optional)
Crostini (ingredients below)
1/2 small baguette (sliced thin (about 1/4-inch))
2 tablespoons extra-virgin olive oil
Pinch kosher salt
2 ounces Gruyere cheese (shredded (about 1/2 cup) (omit for vegan version))

Steps:

  • Set a large pot over low heat. Add the olive oil and the onions. Cook, stirring once every 5 minutes or so to scrape up the brown bits from the bottom, until softened and golden brown, about 40 minutes. If the onions start to burn, lower the heat until they're cooking well but not burning.
  • Once the onions are caramelized, add the garlic. Cook, stirring occasionally, for one minute.
  • Add the wine, stirring until all of the brown bits are scraped up from the bottom of the pan (deglazing). Add the broth, farro, thyme, Worcestershire sauce, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Stir. Increase heat to medium-high to bring to a boil, then reduce heat to a simmer. Cook uncovered, stirring occasionally, until thickened and the farro is tender, 20-30 minutes. If the liquid cooks off before the farro is cooked through, add more broth, 1/2 cup at a time, until cooked. Stir in or top with parsley if desired.
  • While the farro simmers, make the crostini. Set the slices of baguette on a baking sheet. In a small bowl, stir together the olive oil and salt. Using a pastry brush, brush both sides of the bread with the oil. Sprinkle individual crostini with Gruyere cheese, if using. Broil on high until toasted and golden brown, 2-5 minutes (the time really depends on your individual broiler. Watch carefully - they can burn fast!)
  • To serve, spoon farro into bowls or onto a plate. Top with crostini.

¾ pound fresh asparagus, trimmed
1 cup red and yellow cherry tomatoes, halved
¾ cup chopped walnuts
¾ cup dried cranberries
½ cup chopped fresh parsley
⅓ cup chopped fresh chives
¼ cup balsamic vinaigrette, or to taste
1 cup shaved Parmesan cheese, divided

Steps:

  • Soak farro in a large bowl of water for at least 12 hours. Drain.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the drained farro, and return to a boil. Reduce heat to medium, then cook the farro uncovered, stirring occasionally for 20 minutes. Reduce heat to low, cover, and continue simmering until tender, about 30 more minutes. Drain and allow to cool.
  • Bring a large pot of lightly salted water to a boil. Add the asparagus, and cook uncovered until tender, about 3 minutes. Drain in a colander, then immediately immerse in ice water for several minutes until cold to stop the cooking process. Once the asparagus is cold, drain well, and chop. Set aside.
  • Place farro, asparagus, tomatoes, walnuts, cranberries, parsley, and chives in a large bowl. Drizzle the balsamic vinaigrette over and sprinkle about 3/4 cups Parmesan cheese, then toss. Top with the remaining 1/4 cup of Parmesan cheese. Serve at room temperature.

Here is an Italian-inspired recipe that uses store-bought or homemade pesto to season farro, which is then tossed with fresh spinach, roasted tomatoes, red onions and mozzarella for a complete vegetarian meal. Make it with fresh-from-the-market cherry tomatoes when they're in season, but during the rest of the year, use grape tomatoes, as they tend to be more flavorful than cherry during the colder months. If you'd like, substitute arugula, or cooked broccoli rabe or kale, for the spinach. It tastes delicious warm or cold the next day - and topping it with shrimp, chicken or scallops can make it feel new again. Before reheating, add a bit more spinach, drizzle it with a little olive oil and give it a good stir.

Red-pepper flakes add heat, and lemon peel provides floral sweetness; you could also add whole spices, capers or other additions, if you like. Accessorize with hearty greens, soft herbs, eggs, smoked fish or leftover roasted vegetables.

2/3 cup olive oil
2 large yellow onions, coarsely chopped

  • Bring a medium saucepan of water to a boil. Using a vegetable peeler, peel 1-inch-wide strips of zest from the lemon. In a large Dutch oven or skillet, heat the olive oil, onions, lemon peel and red-pepper flakes over medium. Season with salt and pepper, and cover. When you hear sizzling, uncover, reduce heat, and gently simmer, stirring occasionally, until the onions are very soft and golden at the edges, 20 to 25 minutes. If at any point the onions risk burning, reduce heat and add 1 or 2 teaspoons of water. Remove from heat.
  • Once the water's boiling, add the lentils and farro and simmer, uncovered, until al dente, 15 to 20 minutes. Drain in a colander, rinse under cold water until cool, shake very dry, and season with salt.
  • Pluck out the lemon peel from the onions and coarsely chop. Add the chopped peel, farro and lentils to the onions. Stir to combine, then add lemon juice, to taste, about 2 to 4 tablespoons. Season to taste with salt and pepper.
