This Fresh Tomato Soup recipe uses garden-ripe tomatoes and fresh ingredients (no cans or pastes here)! It's such an easy homemade tomato soup that's perfect for using up those tomatoes.

7 cups chopped tomato (about 1kg)
1 Tbsp olive oil (15 mL)
1/2 cup chopped sweet onion (about 1/2 onion)
4 cloves garlic (minced)
2 cups vegetable broth (divided)
1 large sprig fresh basil
1 tsp honey (5 g)
1/2 tsp each smoked paprika, salt, and pepper

Steps:

  • Cook Tomatoes: Dice your tomatoes and set aside. Heat oil in a medium pot over medium/high heat. Add onion and garlic, cooking until onion softens and is fragrant. Stir in chopped tomatoes and continue cooking, uncovered, until tomatoes have mostly broken down, about 10 minutes.
  • Blend: Add 1 cup of the broth then blend the mixture until smooth (using either a handheld immersion blender or by carefully transferring the mixture to a countertop blender). Return soup to the pot and add more broth, as needed, to reach a consistency to your liking.
  • Flavor: Stir in basil, (stem and all) honey, and seasonings, cover, and cook for 5 more minutes. Fish out the basil before serving.
  • Serve: Serve warm, optionally topped with croutons* and drizzled with cream.

You overbought fresh tomatoes at the farmers' market and now you're left with a pile of overly-soft, rapidly-ripening fruit. What to do? Make a hearty, vegetable-based soup with those mushy tomatoes puréed into satiny sweetness. To mimic the creaminess of many tomato soup recipes, I often blend softly stewed tomatoes with a grain, in this case, farro. It adds an earthy flavor, and body, to make a tomato soup with bona fide stick-to-your ribs inclinations.

1 1/2 tablespoons plus 1/2 teaspoon kosher salt, more as needed
1 1/2 cups farro
3 large sprigs basil, stems and leaves separated
3 tablespoons extra virgin olive oil, more for drizzling
4 garlic cloves, smashed and peeled
1 large leek, white and light green parts only, halved lengthwise and thinly sliced
3 1/4 pounds ripe tomatoes, cored and cut into wedges
Black pepper, to taste

Steps:

  • Pour 8 cups cold water and 1 1/2 tablespoons salt into a pot and bring to a boil over high heat. Lower heat to medium, add the farro and basil stems, and cook until grains are tender but still a little chewy, about 25 minutes. Drain, reserving the liquid.
  • Heat the oil in a large pot over medium-high heat. Add the garlic and cook until fragrant and golden, about 2 minutes. Stir in the leek and a pinch of salt. Reduce the heat to medium and cook leeks until soft, about 5 minutes.
  • Stir in the tomatoes, 1/2 teaspoon salt and 1 cup reserved cooking liquid. Bring to a simmer. Cook until the tomatoes have completely fallen apart, about 30 minutes.
  • Using an immersion blender, blender or food processor, purée the tomato mixture until smooth (you may have to do this in batches). Add half the farro and pulse until the grains are broken down and the soup is a chunky purée. Stir in the remaining farro. If the soup seems thick, add more cooking liquid. Taste and add more salt if needed. Ladle the soup into serving bowls. Drizzle with oil; top generously with black pepper and torn basil leaves.

8 ripe plum tomatoes (drained) or 1 (16 ounce) can tomatoes (drained)
1 medium onion, chopped
1 tablespoon olive oil
2 garlic cloves, crushed or 1/4 teaspoon garlic powder
1 pinch ground red pepper
1 tablespoon chopped fresh basil or 1 teaspoon dried basil
2 cups 1% low-fat milk (for Vegan version) or 2 cups soymilk (for Vegan version)

Steps:

  • In a large pot of boiling water, blanch the ripe tomatoes for 10 seconds.
  • Transfer to colander; cool slightly and peel off skin.
  • Cut tomatoes in half; remove seeds and chop.
  • In a medium saucepan, cook the onion in olive oil over medium heat, stirring frequently, until golden brown, about 4 minutes.
  • Add the garlic and cook 1 minute longer.
  • Add the chopped tomatoes and cook uncovered over medium heat for 20 minutes (If using canned tomatoes, decrease cooking time to 10 minutes).
  • Spoon 3/4 of mixture into food processor or blender container; puree until smooth.
  • Return to saucepan, and add red pepper, basil and milk to the soup.
  • Heat until hot but do not boil.
  • Season to taste with salt and pepper.
  • Divide the soup into two warm bowls and serve immediately.
  • Garnish with fresh basil leaves, if desired.
  • As stated use only the soy milk for the Vegan version.

1 medium onion, roughly chopped
1 medium potato, cubed
1 garlic clove, crushed

  • Heat the butter or olive oil in a thick saucepan, and add in the chopped onion, garlic and potato and soften them gently without browning for about 10-15 minutes.
  • Add the tomatoes, if you are using dried basil then add it in now alongwith the worcestershire sauce, stir well and let them cook for a minute.
  • Pour in the stock and give it a good stir and season with salt and pepper and cover and simmer for 30 minutes.
  • Blitz the soup and then pass it through a sieve to extract the skins and pips.
  • Check seasoning, add in the fresh basil then return the pan to heat and bring to boil again.

I learned to make this soup years ago when I lived in France. If there are no fresh tomatoes at hand, use canned. The soup is delicious and silky if you thicken it with tapioca.

1 tablespoon extra virgin olive oil
1 small onion, chopped
4 to 6 garlic cloves (to taste), minced
Salt to taste
2 pounds tomatoes, cored and diced, or 1 28-ounce can chopped tomatoes with juice
Pinch of sugar
2 large sprigs basil, or about 16 leaves, plus 2 tablespoons slivered basil for garnish
1 quart water
1 Parmesan rind (optional)
Freshly ground pepper to taste
1/4 cup rice or tapioca
Garlic croutons (thin slices of baguette, lightly toasted and rubbed with a cut garlic clove)
Grated or shaved Parmesan

Steps:

  • Heat the oil over medium heat in a large, heavy soup pot or Dutch oven. Add the onion. Cook, stirring often, until tender, about five minutes. Stir in half the garlic and a generous pinch of salt. Cook, stirring, until fragrant, about 30 seconds to a minute. Add the tomatoes, sugar, basil sprigs or leaves and remaining garlic. Cook, stirring often, until the tomatoes have cooked down and smell fragrant, 15 to 20 minutes.
  • Add the water, Parmesan rind and salt to taste. Bring to a simmer, cover and reduce the heat to low. Simmer 15 minutes. Add the tapioca or rice, and simmer for another 15 minutes until the tapioca is tender and the soup fragrant. Remove the basil sprigs and Parmesan rind. Puree in a blender in small batches, taking care to place a towel over the top of the blender and hold it down tightly. If you used fresh unpeeled tomatoes and want a silkier soup, put through a strainer, using a spatula or the back of a ladle to push the soup through. Return to the pot, add pepper to taste and adjust salt. Serve garnished with garlic croutons and/or Parmesan, if desired, and slivered basil leaves. If serving cold, refrigerate until chilled.

1 tablespoon olive oil
2 tablespoons butter
1 medium onion, finely chopped
2 lbs ripe Italian plum tomatoes, roughly chopped
1 clove garlic, roughly chopped
3 cups vegetable stock
1/2 cup dry white wine
2 tablespoons sun-dried tomato paste
2 tablespoons shredded fresh basil
2/3 cup heavy cream (*see note.)
salt & freshly ground black pepper
1 whole basil leaves, to garnish

Steps:

  • (Note: I totally omit the cream. After cooking and then processing, the soup has a nice thick consistency that doesn't really need to be thickened more- or the added calories. Simply omit the pressing of the soup through the sieve and the addition of the c) Heat the oil and butter in a large saucepan until foaming.
  • Add the onion and cook gently for about 5 minutes, stirring, until the onion is softened but not brown.
  • Stir in the chopped tomatoes and garlic, then add the stock, white wine and sun-dred tomato paste, with salt and pepper to taste.
  • Bring to a boil, then lower the heat, half cover the pan, and simmer gently for 20 minutes, shirring occcasionally to keep the tomatoes from sticking to the bottom of the pan.
  • Process the soup with the shredded basil in a blender or food processor, then press through a sieve into a clean pan.
  • Add the cream and heat through, stirring.
  • Do not allow the soup to approach the boiling point.
  • Check the consistency and add more stock if necessary, then season with salt and pepper.
  • Pour into heated bowls and garnish with basil.
  • Serve at once.
  • (Can also be frozen and served later.).

1 large russet potato (about 14 ounces), peeled, cut into 1-inch pieces

1 cup (loosely packed) fresh basil leaves plus 4 teaspoons chopped fresh basil

Steps:

  • Heat oil in heavy large pot over medium heat. Add onions and sauté until golden, about 15 minutes. Add potato and sauté until light brown, about 10 minutes. Add tomatoes and stir until juices form, about 5 minutes. Add 3 cups water; bring to boil. Reduce heat to low, cover and simmer until potato is tender, about 25 minutes.

2 tablespoons olive oil
1/4 cup chopped celery
1/2 cup chopped onion
1/4 cup chopped carrot
coarse salt & freshly ground black pepper
4 cups tomatoes, peeled, seeded and chopped (juices reserved, 4 to 6 tomatoes)
bouquet garni (4 sprigs fresh parsley, 2 sprigs fresh thyme and 1 bay leaf-tied together)
2 cups chicken stock or 2 cups vegetable stock
2 teaspoons balsamic vinegar
1/2 cup fresh basil leaf
1/2 cup olive oil

Steps:

  • For the soup, heat the olive oil in a medium non-reactive saucepan over medium-high heat. Add the celery, onion and carrot with a pinch of salt. Cook, stirring often, until the vegetables begin to soften, 10 to 15 minutes. Add the tomatoes with their juices, bouquet garni, stock and balsamic vinegar and cook 15-20 minutes more, until the tomatoes have broken down and the vegetables are very soft. Remove and discard the bouquet garni. Transfer the soup, in batches if necessary, to a blender and puree until smooth. Strain the soup into a clean saucepan and place over low heat. Stir in a generous pinch each of salt and pepper and cook 5 minutes more.
  • For the basil oil, heat a small pot of water over high heat. When the water comes to a boil, drop in the leaves and cook for 30 seconds. Immediately plunge the leaves into a bowl of ice water and let rest for 1 minute. Drain the leaves in a colander and remove any excess moisture from the leaves by squeezing them between two plates over the sink. Place the leaves in a blender with the 1/2 cup of olive oil and a pinch each of salt and pepper. Blend until smooth. Strain through a very fine strainer and place in a small zip-top bag.
  • When ready to serve the soup, place it in a warm soup bowl. Cut a very tiny piece out of the bottom corner of the zip-top bag and use this to decoratively drizzle a bit of basil oil over each bowl of soup. Place a few of the diced green or yellow tomatoes on top and serve.
