4 Cornish game hens, about 1 pound each, with giblets
1/4 pound shelled walnut meats, about 1 1/4 cups
6 tablespoons butter at room temperature
1 tablespoon Dijon-style mustard
1 tablespoon Cognac
Salt to taste if desired
Freshly ground pepper to taste
1/4 cup corn, peanut or vegetable oil

Steps:

  • Preheat the oven to 450 degrees.
  • Using the fingers, separate the skin from the breast meat to make a cavity for stuffing.
  • Combine the walnuts, butter, mustard and Cognac in the container of a food processor or electric blender. Blend to make a paste. Fill the cavities with equal portions of the mixture. Tie up the birds or truss them neatly with string. Sprinkle with salt and pepper and rub them all over with oil.
  • Arrange the birds breast side up in a shallow, heatproof roasting pan and scatter the necks, gizzards and hearts around the birds. Set the livers aside. Place the pan on the stove and heat until the oil sizzles. Put the birds into the oven and bake, basting often, about 20 minutes.
  • Turn each hen on its side and continue baking, basting often, about 10 minutes. Turn each again and bake 5 minutes. Add the livers and cook 10 minutes longer. To test for doneness, lift one of the birds; the liquid from the inside should run clear.
  • Untruss the hens and serve.

2 tablespoons lemon-pepper
1 tablespoon dried basil
1 tablespoon poultry seasoning
2 tablespoons olive oil
6 Cornish game hens, about 1 1/2 pounds each, rinsed and dried thoroughly
1 green bell pepper, large dice
2 stalks celery, large dice
1 onion, large dice

Steps:

  • Preheat oven to 375 degrees F.
  • In a small mixing bowl, stir together salt, lemon pepper, dried basil and poultry seasoning. Rub olive oil all over the hens and season each with the salt mixture. Place the hens on a baking sheet pan with plenty of space between them. You may need to use 2 pans. Loosely stuff the cavities of each hen with some green bell pepper, celery and onion. Roast the hens in the preheated oven for about 1 hour or until an instant-read thermometer inserted into the thickest part of the thigh registers 165 degrees F and the juices run clear. Remove the hens from the oven, loosely tent with foil and let rest 10 minutes before carving or serving.

6 Cornish game hens (20 to 24 ounces each)
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup butter, melted
1/4 cup orange juice
1/4 cup honey
SAUCE:
1/2 cup orange juice
2 tablespoons honey
1/2 teaspoon cider vinegar
1 tablespoon cornstarch
1 tablespoon cold water

Steps:

  • Place hens on a rack in a shallow baking pan. Tie legs with kitchen string if desired. Sprinkle with salt and pepper. Combine the butter, orange juice and honey; spoon over hens. Bake, uncovered, at 350° for 1 hour or until a thermometer reads 165° and juices run clear, basting every 15 minutes., In a small saucepan, combine the orange juice, honey and vinegar. Combine cornstarch and water until smooth; stir into orange juice mixture. Bring to a boil; cook and stir for 1 minute or until thickened. Serve with hens.

Backbones and wing tips from 3 Cornish hens
6 cups cold water
3 cups chopped reserved leek greens (see below)
1 medium carrot, finely chopped
1 celery rib, finely chopped
2 garlic cloves, crushed
3 large thyme sprigs
1 whole clove
1 Turkish or 1/2 California bay leaf
1/8 teaspoon black peppercorns
For fricassee
3 Cornish hens, quartered, backbones and wing tips removed with kitchen shears
2 tablespoons vegetable oil
6 leeks (about 3 lb), greens reserved for stock
1/2 cup dry white wine
2/3 cup heavy cream
1/4 cup vadouvan (Indian spice blend)

Steps:

  • Make stock: Heat oil in a heavy medium pot over medium-high heat until it shimmers. Cook backbones and wing tips until well browned on all sides. Add water and bring to a boil, skimming froth occasionally. Add remaining ingredients and boil, uncovered, 30 minutes. Strain through a fine-mesh sieve into a clean saucepan, pressing on and then discarding solids. Boil stock until reduced to about 2 cups.Make fricassee: Pat hens dry and season with 1 tsp salt and 1/2 tsp pepper. Heat oil in a deep 12-inch heavy skillet over medium-high heat until it shimmers. Brown hens in batches (without crowding), turning once, about 8 minutes per batch. Transfer to a plate. Halve white and pale green parts of leeks lengthwise, then cut into 1-inch pieces and wash. 2 Cornish game hens
½ cup melted butter
½ onion, chopped
½ stalk celery, chopped
¼ green bell pepper, chopped
1 (4.5 ounce) can mushrooms, drained and chopped
2 cloves garlic, minced
1 tablespoon dried basil
1 teaspoon dried oregano
1 tablespoon chopped fresh parsley
¼ cup melted butter

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a small bowl combine the 1/2 cup melted butter, onion, celery, bell pepper, mushrooms, garlic, basil, oregano and parsley.
  • Season hens inside and out with salt and pepper to taste, then stuff with equal amounts butter/vegetable mixture. Place stuffed birds in a 9x13 inch baking dish, breast side up. Drizzle with 1/4 cup melted butter.
  • Cover dish and bake in the preheated oven for 1 1/2 hours. Remove cover and brown at 500 degrees F (260 degrees C).

1 large onion, minced
2 tablespoons butter or 2 tablespoons margarine, melted
2 cups fresh mushrooms, sliced
1/2 cup diced cooked ham
1 1/2 cups cooked wild rice
2 -4 tablespoons brandy
1/4 teaspoon dried marjoram
1/4 teaspoon dried whole thyme
6 (1 lb) Cornish hens
fresh coarse ground black pepper
2 -4 tablespoons dry sherry
1/4 cup chicken broth
1/4 cup brandy

Steps:

  • Sauté onion in butter until tender; add the mushroom and ham and cook 3 to 5 more minutes or until the mushrooms are tender. Combine the mushroom mixture, rice, 2 to 4 tablespoons brandy, marjoram, and thyme.
  • Remove the giblets from hens (reserve for another use). Rinse hens with cold water and pat dry. Sprinkle with salt and pepper. Stuff hens lightly with rice stuffing. Close cavity and secure with toothpicks. Truss and place the hens breast side up in baking pan large enough to fit them.
  • Bake hens at 350°F for 1 1/4 to 1 1/2 hours, depending on the hens' size.
  • Place hens on serving platter.
  • Combine the sherry and chicken broth; brush over hens. Heat 1/4 cup brandy in a small saucepan over medium heat (do NOT boil). Ignite with a long match and pour over hens after the flame dies down. Serve immediately.

1/2 cup oil
2 lemons, juice of, large
1/4 cup of firmly packed light brown sugar
1 tablespoon Worcestershire sauce
2 tablespoons ketchup (I prefer Heinz)

1 garlic clove, finely minced
3/4 cup sherry wine
1/2 teaspoon salt
2 teaspoons cornstarch
1 tablespoon flour
1/4 cup walnuts, chopped
8 pitted dates
1 teaspoon minced onion
1 cup herb seasoned stuffing mix
3/4 cup water

Steps:

  • Rinse Hens inside and out with cold water. Blot dry with paper towels. Prick skin of each Hen in several places with a fork. Place in a deep baking dish. Combine rest of the stuff except stuffing and corn starch and pour over Hens. Cover and put in the Ice Box for 12 to 24 hours. Turn the Hens many times. Drain and save the marinade. Stuff each bird with the stuffing and place in a shallow baking dish on a rack in the WOK over simmering water. Loosely cover Hens with foil. Cover WOK and steam for 1 hour check the water in the bottom from time to time. Remove from WOK. Strain the reserved marinade into saucepan. Place over medium heat, simmer until reduced by about half. Stir in cornstarch and cook till thickened. Spoon over Birds in baking dish. Again place dish in WOK on rack over simmering water and cover loosely with foil. Cover WOK and steam for 15 minutes. Baste a few times.
