BAKED TILAPIA
Steps:
- Baked Tilapia Directions: * Start by preheating the oven to 175° C / 350° F. * Prepare a medium sized baking dish by coating its bottom with roughly ¼ cup of the olive oil. * Pour the rest of the olive oil, ½ cup, into a small bowl and mix it with salt, pepper, oregano, garlic and tomato paste. * Place the tilapia fillets in the baking dish. The skin side should be up. * Use a spatula to gently spread the mix from the bowl over the fillets. A large part of the paste should be used to cover the centres of the fillets. * Slice one green bell pepper into thin slices * Slice one large onion into slices * Place the green bell pepper and the onion around the tilapia fillets * Place the baking dish in the oven and bake for 15 minutes. The baked tilapia is finished when you can easily flake it using a fork. * Remove the baked tilapia from the oven and place 1 tablespoon of butter on top of each fillet. * Set the oven to broil and broil the baked tilapia during 5-7 minutes. The butter should be fully melted and just turning slightly brown when you remove the dish from the oven.
PAN-SEARED TILAPIA WITH CHILE LIME BUTTER

- Make chile lime butter:
- Stir together butter, shallot, zest, lime juice, chile, and salt in a bowl.
- Prepare fish:
- If using striped bass, score skin in 3 or 4 places with a thin sharp knife to prevent fish from curling (do not cut through flesh). Pat fish dry and sprinkle with salt. Heat 1 tablespoon oil in a 12-inch nonstick skillet over moderately high heat until just smoking, then sauté 3 pieces of fish, turning over once with a spatula, until golden and just cooked through, 4 to 5 minutes, and transfer to a plate. Sauté remaining fish in remaining tablespoon oil in same manner.
- Serve each piece of fish with a dollop of chile lime butter.

- Preheat oven to 375 degrees. Place fillets on a rimmed baking sheet, flat side down; season generously with salt and pepper. Divide mayonnaise evenly over top of fillets; using a butter knife, spread, coating evenly.
- Sprinkle fish with parsley and dill. Bake until opaque throughout, about 15 minutes. Serve with lemon wedges.

LEMON BUTTER TILAPIA
This is my take on a James Beard recipe. So simple and quick, very few ingredients. This is the dish that turned me into a fish lover. Trick is to have everything ready to go when you start. It's fast from start to table.

Steps:
- Chop parsley and put aside. Juice lemon and put aside.
- Melt 2 tbs. butter and the olive oil in non-stick skillet
- Lightly dust fish fillets in flour, season if desired with salt and pepper.
- When butter stops bubbling, add fish and saute 3-4 min on first side.
- Turn and finish second side 3-4 min, until done and flaky. Remove to plate and keep warm.
- Add remaining 2tbs. butter to skillet and melt.
- Stir in lemon juice and parsley quickly and pour immediately over fish.
- Serve and enjoy.
