TOMATOES ROASTED WITH PESTO

Steps:
- Preheat the oven to 425 degrees.
- Core the tomatoes and then slice them across (not through the stem) in 1/2 inch-thick slices. Arrange the slices in a single layer on a sheet pan. Drizzle the tomatoes with the olive oil and sprinkle with the oregano, 1 1/2 teaspoons salt, and the pepper.
- Bake the tomatoes for 10 minutes. Remove them from the oven, spread each slice with Pesto, and sprinkle with the Parmesan cheese. Return the tomatoes to the oven and continue baking for 7 to 10 minutes, until the Parmesan is melted and begins to brown. Using a flat metal spatula, put the tomatoes on a serving platter, sprinkle with extra salt, and serve hot, warm, or at room temperature.
- Place the walnuts, pine nuts, and garlic in the bowl of a food processor fitted with the steel blade. Process for 30 seconds. Add the basil, salt, and pepper. With the processor running, slowly pour the olive oil into the bowl through the feed tube and process until the pesto is pureed. Add the Parmesan and puree for a minute. Use immediately or store the pesto in the refrigerator or freezer with a thin film of olive oil on top.
PASTA, GREEN BEANS AND POTATOES WITH PESTO
The most elegant pasta dish that Italian cooks have ever invented is astonishingly simple to make. Here, the magical green sauce is tossed with trenette (or any long pasta you can twirl around a fork), tender slices of potato and barely blanched green beans.

- Make pesto: In the bowl of food processor, add basil, pine nuts, salt and garlic. Pulse until mixture is coarse and grainy. With the motor running, add oil in slow, steady stream. Add cheese; process just enough to mix well. If sauce is too dry, add a little more oil. Taste; add more cheese or salt, if desired.
- Bring 6 quarts water to rolling boil. Add at least 2 tablespoons salt and the potato slices. Cook for about 5 minutes, or until potatoes have started to soften but are not cooked through. Add green beans, and continue boiling another 5 minutes.
- Add pasta, and stir. Start testing pasta at 5 minutes. When it is done, and when potatoes and beans are tender, drain and turn pasta and vegetables immediately into preheated bowl. Add pesto, and mix thoroughly. Serve immediately.

- Bring a large pot of salted water to a boil over medium heat and drop in the green beans; cook until slightly tender, but still crisp, 8 to 10 minutes. Immediately drain the green beans and plunge into ice water to stop the beans from cooking further. Drain the beans and place them in a shallow serving dish.
- Heat the olive oil in a skillet over medium heat. Cook garlic in the oil for about 30 seconds. Remove the skillet from the heat. Stir in the olives, tomatoes, vinegar, oregano, salt, and pepper. Pour mixture over green beans. Toss together until beans are evenly coated. Sprinkle feta cheese over the top and garnish with oregano sprigs. Chill at least 3 hours before serving.

GREEN BEANS WITH PESTO AND ROASTED TOMATOES

- Blanch green beans in boiling water for 3 minutes. Drain and rinse in cold water. Heat oil in a large skillet over medium heat. Add the onions sauté until tender, about 3minutes. Add the beans and sauté until tender, 5-6 minutes. Stir in the wine. Simmer 2 minutes longer. Add pesto and roasted tomatoes and reheat if needed. Season with salt and pepper, to taste. Serve.
GREEN BEANS AND TOMATOES IN A PESTO VINAIGRETTE
A wonderful and colorful veggie dish drizzled with a delicious pesto dressing. Can be served immediately or chilled up to 8 hours. Vinaigrette dressing is also great on other salads.

Steps:
- Cook beans in salted water until tender, about 15 minutes.
- While beans are cooking, make pesto vinaigrette by combining pesto, vinegar and lemon juice.
- Slowly stream in olive oil, whisking constantly until combined.
- Add salt and pepper to taste.
- When beans are done cooking, drain and rinse with cool water and pat dry.
- In a large bowl, combine green beans, tomatoes and 1/4 cup of pesto vinaigrette, adding additional, if desired.
- Season with salt and pepper to taste.
GREEN BEANS WITH BALSAMIC PESTO

- Making the Pesto:.
- Combine the basil and Parmigiano-Reggiano cheese in a blender or food processor and blend until the basil is finely chopped, but not pureed.
- Add the olive oil, and garlic and blend until almost smooth.
- Season with salt and pepper and set aside.
- Cooking the Beans:.
- Pour about 2 inches of water into a 6 quart pot.
- Place a collapsible steamer in the pot, cover, and bring to a full boil.
- Place beans in the steamer, cover the pot, and steam 6 minutes, or until tender crisp.
- Mix 4 tablespoons balsamic vinegar with 1/2 teaspoon dark brown sugar.
- Remove the beans to a shallow serving bowl.
- Add the pesto to the beans, stirring in the vinegar/sugar mixture.
- Toss to thoroughly coat the beans.
- Taste for seasoning and serve hot or at room temperature.
- Note: Refrigeration will alter the flavors so best served right after the pesto and beans are combined.

- Preheat oven to 450°F. Roast tomatoes on a rimmed baking sheet, turning once, until blistered and lightly charred, 15-20 minutes. Let cool slightly. Finely chop almonds in a food processor. Add garlic, olive oil, vinegar, paprika, cayenne, and half of tomatoes; pulse to a coarse pesto consistency. Season with salt and pepper.
- Heat 1 1/2 tsp. vegetable oil in a large skillet over medium-high. Add half of beans; cook, undisturbed, until beginning to blister, about 2 minutes. Toss and continue to cook, tossing occasionally, until tender, 7-9 minutes; season with salt and pepper. Spread beans out on a platter; let cool. Repeat with remaining vegetable oil and beans.
- Toss beans with pesto; season with salt and pepper if needed. Add remaining tomatoes and transfer to a platter.

- Preheat an oven to 225 degrees F (110 degrees C).
- Slice the cherry tomatoes in half, and arrange them, cut sides up, on a baking sheet. Sprinkle them with salt, pepper, and the bay leaf; drizzle with 1/4 cup olive oil.
- Bake the tomatoes until they are shriveled and dry on the outside, but a little moist inside, about 2 hours.
