- In 2-quart saucepan over high heat, heat crushed tomatoes, garlic, basil, salt and pepper. Over high heat, heat to boiling; reduce heat to low. Simmer uncovered, 10 minutes to blend flavors.
- Preheat oven to 375 degrees F. Grease 12" by 8" baking dish. In medium bowl combine ricotta cheese and egg until well mixed. Spoon some tomato sauce on bottom of dish to coat. Place 3 noodles lengthwise across the pan. Top with 1/3 of tomato sauce. With a spatula, spread 1/3 of ricotta mixture. Scatter 1/3 of carrots and spinach on ricotta and 1/3 of mozzarella cheese. Repeat with noodles, tomato sauce, ricotta, vegetables and mozzarella two more times. Sprinkle with Parmesan cheese.
- Cover dish with foil; bake 30 minutes. Uncover dish; bake 10 minutes longer. Let stand 15 minutes before cutting.

GREEN TOMATO LASAGNA
Bubbly with cheese and warm from the oven, this may become a family favorite! A great way to use green tomatoes. You may use the tomato sauce recipe provided or use your own or storebought. Feel free to add onion, garlic, peppers, etc. to get more veggies in. Adapted from Country Living magazine(August 1995).

- Prepare tomato sauce, set aside.
- In a small bowl combine milk, 1 egg, 1/4 teaspoons salt, and 1/4 teaspoons pepper. Place the flour in a pie plate or shallow bowl. and bread crumbs in another pie plate.
- Dip tomato slices in flour; then dip the floured slices in the milk/egg mixture and immediately into the bread crumbs to coat.
- In a large skillet, heat the oil. Fry the tomato slices in hot oil until browned; drain on paper towels.
- In a medium bowl, combine cottage cheese, Parmesan cheese, the remaining egg, the remaining 1/4 teaspoons slat, and 1/4 teaspoons pepper.
- Heat oven to 350*F.
- In a 9" square baking pan, spread a thin layer of tomato sauce to coat bottom.
- Place one third of lasagna noodles, side by side, in a single layer over sauce to cover bottom of pan.
- Place half of fried tomatoes in a single layer over noodles; cover with a layer of sauce.
- Top sauce with another layer of noodles then evenly spread the cheese mixture over the noodles.
- Top cheese layer with remaining noodles and remaining fried tomatoes.
- Spoon remaining sauce over tomatoes and sprinkle with the mozzarella cheese.
- Place the baking pan on a cookie sheet. Bake 30-35 minutes or until cheese melts and sauce is bubbly.
- Cool in pan on wire rack 5 minutes. Serve immediately. Enjoy!

GREEN VEGGIE LASAGNE
Super healthy veggie lasagne - customisable depending on what you have lying around in the fridge! The amounts for each vegetable can vary depending on how much you like them/if you have them available or can be substituted for your favourite. Dried mushrooms (porcini if you want to splash out and have them) work a treat in the white sauce for extra umami :)

- Soak the lasagne sheets in a water, taking care that they don't stick.
- Preheat the oven to 175 degrees if using a fan oven or 185 degrees if using a conventional one.
- Dry fry the alliums (spring onions, shallots, leeks and garlic) with the celery and herbs on a gentle heat for around 5 minutes, adding a little water if it looks like they might be catching. Transfer to a saucepan.
- Slake a couple of tablespoons of milk with the cornflour and add the remaining milk to the alliums, celery and herbs and heat through, stirring occasionally, until the vegetables are soft (approximately 10 minutes). Stir in marmite, if using.
- Meanwhile dry fry/griddle the little gem and any courgette greens and/or mushrooms, if using.
- Puree the milk, allium, celery and herb mixture using an immersion blender then add the cornflour/milk slake to the and heat through until the sauce reaches the desired consistency (it will thicken up a bit but remember that the lasagne sheets will absorb some liquid so don't thicken it too much!).
- Layer up the lasagne alternating between lasagne sheets, green sauce, griddled veg and handfuls of rocket. If using quark or cottage cheese, beans or lentils dot spoonfuls of them at the top of each layer. Finish with a layer of sauce and sprinkle with nutritional yeast.
- Transfer to the oven and bake until browned on top and the lasagne sheets are al dente.
VEGETARIAN GREEN ENCHILADA LASAGNA
My husband loves enchiladas, but I don't love all the work. I made this up with ingredients that we enjoy. I'm sure you could make many substitutions. It's very easy and my husband loved it. My 3 year old actually took a couple of bites!

- Preheat the oven to 400 degrees fahrenheit.
- Saute the onion until translucent.
- Add garlic salt and black pepper.
- Add mushrooms and cook until tender.
- Add corn and black beans to heat through.
- Add spinach and cook until wilted.
- Mix together the enchilada sauce and salsa.

- Heat olive oil in large cast-iron or other ovenproof skillet over medium-high heat. Add zucchini and mushrooms; cook until softened, 2-3 minutes. Add onion and garlic; cook until vegetables are tender, 2-3 minutes. Add pasta sauce, water and seasonings. Stir to combine; add broken noodles. Bring to a boil. Reduce heat; cover and simmer until noodles are tender, 15 minutes. Top with mozzarella and, if desired, Parmesan cheese. Broil until cheese melts and starts to brown. RED, WHITE, AND GREEN VEGETABLE "LASAGNE"
Steps:
- Preheat the oven to 425˚F. Bring a large pot of salted water to a boil. Have ready a large bowl filled halfway with ice water.
- In a large bowl, combine the beets, thyme, olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Spread the beet mixture on a baking sheet. Roast for 25 minutes, stirring once, or until the beets are tender.
- While the beets are roasting, remove the red stems from the reserved beet greens and discard. Blanch the leaves in the boiling water until they wilt and turn bright green, about 30 seconds. Transfer the greens to the bowl of ice water to cool. Drain the greens and squeeze them to remove any remaining moisture. Set aside.
- In a large saucepan over medium heat, melt the butter and whisk in the flour. Slowly add the milk, whisking constantly. Add the cayenne, garlic powder, 1/2 teaspoon salt, and a dash of black pepper. Cook until the sauce thickens, about 10 minutes, stirring frequently. Remove from the heat. Add the semihard and semisoft cheeses and continue whisking until the cheese is completely melted. Set aside.
- Remove the beets from the oven and set them aside. Reduce the oven heat to 375˚F. Butter a 9 × 13-inch baking dish.
- Sprinkle the bread crumbs over the bottom of the baking dish. Place half of the beets on top of the bread crumbs in one overlapping layer. Arrange half of the blue cheese in large chunks on top of the beets. Make a second layer with the remaining beets and blue cheese. Drizzle 1/4 cup of the cheese sauce on top. Sprinkle with salt and black pepper. Place the beet greens on top of the cheese sauce. Sprinkle with salt and pepper. Layer the cauliflower, 1/4 cup cheese sauce, and then the onion confit. Sprinkle with salt and pepper and top with the remaining cheese sauce, spreading it to the edges of the dish and covering any exposed confit.
- Bake, uncovered, for 40 minutes. Let the lasagne sit for at least 20 minutes before slicing and serving.
- Serve with a generous dollop of Green Bean Pesto.
- Five-Onion Confit
- Heat the oil in a large saucepan over medium heat. Add the onions, shallots, leek, garlic, vinegar, salt, pepper, and sugar and stir. Cook the onion mixture, stirring occasionally, for 45 minutes. Reduce the heat to low and continue cooking for 15 minutes, or until the onions are soft and brown and reduced to about 1 cup.
