- Layer the provolone, prosciutto and salami on six bread slices; top with remaining bread. Spread outsides of sandwiches with butter. , In a large skillet, toast sandwiches over medium heat for 2-3 minutes on each side or until golden brown and cheese is melted.

- Line a baking sheet with parchment paper. Wrap each mozzarella slice with prosciutto until mostly covered. Put on the prepared baking sheet and cover with plastic wrap. Freeze until firm, about 30 minutes.
- Preheat a grill to medium high. Grill the prosciutto-wrapped mozzarella until the prosciutto is crisp and the cheese just starts to melt, about 1 minute per side.
- Arrange the prosciutto-wrapped mozzarella and sliced tomatoes on a platter, overlapping slightly. Top with the cherry tomatoes. Drizzle with the olive oil and vinegar and season with salt and pepper. Top with the basil.
GRILLED CHEESE WITH DATES AND PROSCIUTTO

- Spread the butter on one side of each bread slice. Heat a large skillet over medium heat. Put 2 bread slices in the skillet, buttered-side down. Layer 2 slices of prosciutto, 1 slice of cheese, one-quarter each of the dates and basil, and another slice of cheese on each piece of bread. Close each with another piece of bread, buttered-side up.
- Cook, pressing the sandwiches occasionally with a spatula, until the cheese melts and the bread is golden, 3 to 4 minutes per side. Repeat to make 2 more sandwiches.
AIR FRYER PROSCIUTTO AND MOZZARELLA GRILLED CHEESE
So easy to make and no mess! My favorite Italian deli made a similar sandwich but unfortunately they closed down, so I decided to make a dupe in my air fryer. This makes a very filling lunch, or you can cut it in half and share if pairing with a bowl of soup.

- Heat oven to 350°F. In a small pot over medium heat, cook tomato, onion and garlic until tomato breaks down and resembles jam, 15 minutes.
- Add vinegar and honey; cook until jam thickens, 15 minutes. Season with salt and black pepper; remove from heat.
- On a cookie sheet, arrange bread in a single layer. Top each slice with 1/4 cup cheese and 1 slice prosciutto; bake until cheese melts, 3 minutes.
- Divide tomato jam among 4 sandwich halves; top with remaining sandwich halves.
- In a medium skillet over medium heat, heat 1 tablespoon oil. Cook one sandwich, flipping once, 3 minutes per side. Repeat with remaining oil and sandwiches.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Cut peaches in half and remove peach stones. Cut each half in half again.
- Wrap prosciutto around each peach section; secure with small bamboo skewers.
- Grill peaches, turning often, until prosciutto gets a little crisp around the edges and the peaches begin to caramelize, about 6 minutes.
- To serve, spoon burrata onto serving plates. Remove peaches from skewers; place several of the grilled peaches around the cheese. Drizzle with olive oil. Top with a sprinkle of sea salt and pepper; garnish with basil.

- First crisp up the prosciutto. Heat your oven to 350 degrees, spread the prosciutto out on a baking sheet, and bake it for 10-12 minutes until it is stiff and crisp. I recommend using a Silpat if you have one.
- Next spread the inside of the slices of bread with the mustard. Then add the MT Tam cheese on top of the mustard. MT Tam is very flavorful, and I didn't want it to overpower the mustard and prosciutto, so I just added a thin layer of cheese to each slice of bread. Adding cheese to each slice of bread holds the prosciutto in place. Lastly, sandwich the prosciutto between the two slices of bread, it will likely break up into smaller pieces at this point, but that is ok.
- Heat a skillet over medium heat and add the sandwich. Toast each side for 3-5 minutes until golden brown. Slice the grilled cheese in half and eat immediately.
