Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 12

Nonstick cooking spray
8 boneless skinless chicken breast halves, about 5 ounces each
Salt and freshly ground black pepper
Salt-free roasted garlic seasoning (recommended: McCormick)
1 tablespoon olive oil
1 cup thinly sliced onion
2 jalapeno or serrano peppers, seeded and minced
2 tablespoons sugar
1 cup reduced-sodium chicken broth, divided
2 bay leaves
2 teaspoons cornstarch
2 tablespoons chopped fresh parsley leaves

Steps:

  • Heat a stove-top grill pan or griddle to medium high heat and coat with cooking spray. Remove chicken from package and place on a plastic cutting board. Using tongs, discard the bay leaves and remove the pan from heat.
  • Serve 4 of the chicken breast halves with all of the onion sauce spooned over top and all of the rice on the side. Reserve remaining 4 chicken breast halves for sandwiches.

Categories     main-dish

Time 1h

Number Of Ingredients 9

2 tablespoons light brown sugar
1 teaspoon ground coriander
Kosher salt and freshly ground pepper
2 half chickens (about 3 pounds total)

Flip the chicken again and brush the skin with the jelly mixture. Continue cooking, brushing the skin every 10 minutes with the jelly mixture, reserving some for serving, until an instant-read thermometer inserted into the thigh but not touching the bone registers 165 degrees F, about 20 minutes more. Transfer the chicken to a cutting board and let rest for 5 minutes. Cut the chicken into serving pieces and serve with the extra glaze on the side.

GRILLED JALAPENO POPPERS

Grilled Jalapeno Poppers image

Best poppers you'll have off your grill! Any left over cheese mixture makes a good spread for crackers while you're waiting.

Provided by Philip Dally

Categories     Appetizers and Snacks     Vegetable     Jalapeno Popper Recipes

Time 1h

Yield 16

Number Of Ingredients 6

8 ounces cream cheese
2 tablespoons grated Parmesan cheese
1 ½ teaspoons garlic powder
1 ½ cups shredded Cheddar cheese
16 whole jalapeno peppers with stems
8 slices bacon, cut in half crosswise

Steps:

  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Mix together the cream cheese, Parmesan cheese, garlic powder, and Cheddar cheese in a bowl until the mixture is thoroughly blended.
  • Lay a jalapeno pepper onto a work surface, and cut a lengthwise sliver from the side of the pepper, exposing the seeds and white membrane. Stuff each pepper with cheese mixture, and wrap each stuffed pepper in a half bacon slice. Secure with toothpicks.
  • Grill the poppers on a less-hot part of the grill until the peppers are hot and juicy and the bacon is browned, 30 to 40 minutes.

WW GRILLED JALAPENO CHICKEN

Ww Grilled Jalapeno Chicken image

This is another great Jalapeno Chicken recipe by Weight Watchers. It's out of the 2000 "Day by Day" cookbook. It has 3 points per serving. I have done both blender and fine chopping and they are both great. I find the extra bits and pieces by chopping instead of blending adds a great crunch to the dish and makes it look outstanding. Hope you enjoy and happy eating!

JALAPENO-STUFFED CHICKEN BREAST

Jalapeno-Stuffed Chicken Breast image

Turn up the heat at your dinner table with grilled, stuffed chicken breasts filled with a mixture of jalapeno peppers and two types of cheese.

Provided by JGesq

Categories     Stuffed Chicken Breasts

Time 50m

Yield 4

Number Of Ingredients 9

3 medium jalapeno peppers
½ cup shredded Monterey Jack cheese
½ small onion, chopped
2 ounces cream cheese, softened
2 cloves garlic, crushed
¼ teaspoon ground cumin
4 (5 ounce) skinless, boneless chicken breast halves
cooking spray
salt to taste

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Place jalapeno peppers on a microwave-safe plate. Microwave on high power until soft but still plump, 1 to 2 minutes. Remove and discard seeds. Dice peppers.
  • Mix diced peppers, Monterey Jack cheese, onion, cream cheese, garlic, and cumin together in a bowl.
  • Make a pocket in each chicken breast, being careful not to cut through the sides or bottom, as follows: Make a vertical slice in the top center of each breast, starting about 1/2 inch in from each edge. Starting inside the vertical slit, cut horizontally into the chicken breast in both directions; this should leave you with a nice pocket.
  • Press 1/4 of the pepper-cheese mixture into each breast. Close and secure with toothpicks. Spray chicken breasts with cooking spray and season with salt.
  • Place chicken on the preheated grill with toothpicks facing upwards. Grill for 12 minutes, then turn and cook until no longer pink in the center and the juices run clear, 3 to 5 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove toothpicks before serving.
