GRILLED SHRIMP WITH CHILI COCKTAIL SAUCE

Steps:
- Combine the first 7 ingredients in a bowl, and season with pepper, to taste. Refrigerate until ready to use.
- Heat a grill pan or grill to medium-high.
- Dress the shrimp with extra-virgin olive oil, salt and pepper, to taste, and smoked paprika. Skewer the shrimp onto metal skewers, to ease in turning them, and grill until the shrimp are opaque and firm, about 7 to 8 minutes. Pile the shrimp on a serving platter, and drizzle with the sauce or pass the sauce at the table.
GRILLED SHRIMP COCKTAIL WITH MANGO BBQ SAUCE

Steps:
- Preheat your grill or grill pan over medium heat.
- Season the shrimp with the salt, garlic powder and pepper.
- Spray the grill with cooking spray and grill the shrimp for 2-3 minutes per side until pink.
- Remove from the grill and cover with foil to keep warm while you make the sauce.
- Add the BBQ sauce and mango to a blender and blend until smooth.
- Toss the grilled shrimp with 2 tablespoons of the mango BBQ sauce and then serve with extra sauce on the side.
GRILLED SHRIMP WITH MANGO SALSA
Steps:
- Toss together the cilantro, mangoes, lime juice, jalapeno and red onions in a medium bowl. Divide half of the mixture among 4 glasses with a wide mouth, reserving the remaining half to top with.
- Meanwhile, preheat a grill or grill pan to medium-high heat.
- Add the shrimp to a large bowl and toss with the oil, 1/2 teaspoon salt and 1/4 teaspoon pepper. Grill the shrimp on each side until opaque and slightly charred, 1 to 2 minutes.
- Add the shrimp to the 4 glasses with the salsa and top with the remaining salsa. Garnish with a plantain chip.
BBQ SHRIMP COCKTAILS

- For the shrimp: Preheat a grill or grill pan over medium-high heat.
- Toss the shrimp with the olive oil and BBQ rub seasoning until evenly coated; set aside.
- For the white BBQ sauce: Whisk together the mayonnaise, vinegar, horseradish, mustard, brown sugar, garlic powder and Worcestershire sauce. Stir in the chives and parsley. Season with salt and pepper.
- Grill the shrimp until just cooked through, 2 to 3 minutes per side.
- Divide the sauce among 4 martini glasses. Cut a small slit halfway through each lemon round and place 2 slices on the rim of each glass. Place 4 shrimp on the edge of each glass. Garnish with chives and parsley.
SHRIMP WITH MANGO SAUCE
Steps:
- Heat 2 tsp oil in a 3-quart saucepan over medium-high heat. Cook onion, garlic, ginger, 1/4 tsp salt, allspice, cumin and cinnamon about 3 minutes. Add mango, vinegar, lime juice and sugar and gently boil, stirring occasionally, until sauce is thick; refrigerate in a bowl. Toss shrimp with red pepper, garlic powder and remaining 1/2 tsp salt. Heat remaining 2 tsp oil in a large nonstick skillet over medium-high heat. Cook shrimp until no longer translucent, about 2 minutes on each side. Let cool; serve with sauce.

- When ready to cook, set Traeger temperature to 350 °F and preheat with the lid closed for 15 minutes. Grill: 350 ˚F.
- Rinse the shrimp in a colander and pat dry with paper towels. In a large bowl, combine shrimp with oil and Old Bay Seasoning. If not using seasoning, add 1 teaspoon salt and 1/2 teaspoon freshly ground black pepper.
- Place the baking sheet with the shrimp on the grill and cook until opaque, about 5 to 7 minutes. Grill: 350 ˚F.
- For the Cocktail Sauce: Mix together ketchup, horseradish and lemon juice. Season to taste with salt and pepper, adding hot sauce if desired. Ingredients.
