PEACH CHUTNEY GLAZED HAM



Peach Chutney Glazed Ham image

Makes 10 to 12 servings

Number Of Ingredients 5

1 (12-ounce) jar peach chutney*
¼ cup stone-ground mustard
1 (10- to 11-pound) smoked ham (shank portion)
½ cup water
Garnish: chopped fresh parsley, fresh celery leaves, fresh bay leaves

Steps:

  • Preheat oven to 325°. Line a roasting pan with foil; spray foil with cooking spray.
  • In the container of a blender, combine chutney and mustard; process until smooth.
  • Using a knife, lightly score outside of ham. Place ham in prepared pan; pour ½ cup water in pan. Loosely cover with foil.
  • Bake for 1 hour. Uncover and bake, brushing ham with chutney mixture every 15 minutes, until a meat thermometer inserted in center registers 148°, about 1½ hours more, loosely covering with foil to prevent excess browning, if necessary. Transfer to a serving platter. Garnish with parsley, celery leaves, and bay leaves, if desired.

This chutney closely resembles imported Indian chutneys and is good with all curry dishes. It is also great with cream cheese and crackers.

4 pounds sliced peeled peaches
1 cup raisins
2 cloves garlic, minced
½ cup chopped onion
5 ounces chopped preserved ginger
1 ½ tablespoons chili powder
1 tablespoon mustard seed
1 teaspoon curry powder
4 cups packed brown sugar
4 cups apple cider vinegar
¼ cup pickling spice

Steps:

  • In a large heavy pot, stir together the peaches, raisins, garlic, onion, preserved ginger, chili powder, mustard seed, curry powder, brown sugar and cider vinegar. Wrap the pickling spice in a cheesecloth bag, and place in the pot.
  • Bring to a boil, and cook over medium heat uncovered until the mixture reaches your desired consistency. It will take about 1 1/2 hours to get a good thick sauce. Stir frequently to prevent scorching on the bottom.
  • Remove the spice bag, and ladle into hot sterilized jars. Wipe the rims with a clean moist cloth. Seal with lids and rings, and process in a barely simmering water bath for 10 minutes, or the time recommended by your local extension for your area. The water should cover the jars completely.

3 cups peach nectar
1 (1-inch) piece ginger, smashed
1/2 lemon, juiced
4 cloves garlic, smashed
1/4 cup Dijon mustard
1 cup brown sugar
1 (14-pound) precooked ham
3 whole peaches

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium saucepan, simmer together peach nectar, ginger, lemon juice, and garlic cloves. Simmer for 20 minutes.
  • Strain out ginger and garlic.
  • Prepare ham for glaze. Rub Dijon mustard and then brown sugar on the ham.
  • Pour glaze on bottom of pan and throw in sliced peaches for additional peach flavor.
  • Place ham in oven for 1 1/2 hours. Every 10 to 20 minutes glaze ham with the glaze from bottom of pan to keep moist.

2 cups cubed pineapple (fresh or canned in juice)
1/2 cup chopped onion
1/2 cup pineapple juice
1/3 cup raisins
2 tablespoons brown sugar
1 tablespoon white wine vinegar
1 teaspoon ground cumin
2 tablespoons chopped fresh cilantro leaves
2 teaspoons olive oil
8 slices baked ham (each about 1/2-inch thick)

Steps:

  • In a medium saucepan, combine pineapple, onion, pineapple juice, raisins, brown sugar, vinegar, and cumin. Set pan over medium-high heat and bring to a simmer. Simmer 15 minutes, until mixture thickens and reduces. Remove from heat and stir in cilantro.
  • Meanwhile, heat oil in a large skillet over medium heat. Add ham slices and cook 2 minutes per side, until golden brown. Serve ham slices with pineapple chutney spooned over top.

1/2 cup cider vinegar
1/2 cup loosely packed brown sugar
1/2 cup white sugar
1 large sweet red pepper, seeded, diced 1/4 inch, about 1/2 cup
1 small white onion, peeled and diced, about 1/2 cup
1 small jalapeño pepper, seeded and diced, 2 tablespoons
1/3 cup white raisins
1 tablespoon finely chopped garlic
1 tablespoon grated ginger
1/2 teaspoon salt
1 1/2 pounds firm, fresh peaches, blanched to remove the skin, pit removed, sliced into wedges

Steps:

  • Put the vinegar and both sugars into a non-reactive pot, place over medium heat and bring to a boil. Add the red pepper, onion, jalapeño, raisins, garlic, ginger, salt and simmer 10 minutes. Add the peach segments and simmer an additional 5-10 minutes. If the peaches are still firm allow to cook several minutes more. If you would like the syrup thicker you may also allow to cook for a minute or two to reduce liquid.
  • Remove from the heat and allow to cool for 15 minutes in the pot. Serve at room temperature. Transfer all excess to a clean container and refrigerate, covered, for up to one week.

1/2 cup all-purpose flour
1/2 cup yellow cornmeal
3/4 teaspoon baking powder
1 teaspoon salt
1 cup grated Sharp Cheddar
1 large egg
2 tablespoons unsalted butter, melted and cooled
1/2 cup sour cream
1/4 cup milk
24 slices cured ham such as Westphalian or prosciutto, or cooked country ham such as Smithfield
about 1/2 cup fresh peach chutney
FRESH PEACH CHUTNEY
1 firm-ripe peach
1/4 cup golden raisins, chopped fine
1 fresh serrano or jalapeño chili, seeded and chopped fine (wear rubber gloves)
1 tablespoon finely chopped, peeled fresh gingerroot
1 1/2 teaspoons finely chopped shallot
1/4 teaspoon ground cumin
1 tablespoon sugar
1 tablespoon fresh orange juice
1 teaspoon fresh lemon juice

Steps:

  • To Make Corn Bread:
  • Preheat oven to 375°F. and generously butter a jelly-roll pan. 15 1/2 by 10 1/2 by 1 inch.
  • In a bowl, whisk together flour, cornmeal, baking powder, salt and Cheddar.
  • In a small bowl, whisk together egg, butter, sour cream and milk. Stir egg mixture into flour mixture until just combined and spread evenly in prepared pan. (It is important to spread batter evenly or corn bread will be too thin and crisp in places.) Bake corn bread in the middle of oven 15 to 20 minutes, or until sides pull away from pan and top is golden. While corn bread is hot, with a sharp knife, loosen corn bread edges and cut into twelve 2 1/2-inch squares, preferably with a square cutter. With a metal spatula carefully transfer corn bread to a cutting board to cool and trim.
  • Halve each square diagonally to form 24 triangles. Corn bread triangles may be made 2 days ahead and kept in a sealed plastic bag, chilled. Corn bread will soften slightly. If crisper corn bread is desired, reheat in a 350°F. oven until crisp before proceeding with recipe.
  • To Assemble Hors d'Oeuvres:
  • Top each corn bread triangle with a folded ham slice and 1 teaspoon chutney.
  • Halve and pit peach and cut into 1/8-inch dice (about 1 1/4 cups).
  • In a bowl, combine peach, raisins, chili, gingerroot, shallot and cumin. Chill chutney, covered, at least 1 hour and up to 2 hours.
  • About 1 hour before serving, stir in remaining ingredients and salt and pepper to taste. Serve chutney at room temperature. Makes about 1 1/2 cups.
  • Can be made in 45 minutes or less but requires additional unattended time.

1 fully cooked bone-in ham (6 pounds)

3 tablespoons cider vinegar
1/4 to 1/2 teaspoon ground cloves

Steps:

  • Drain peaches, reserving syrup (save peaches for another use). Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep; insert a clove in each diamond. Cover and bake at 325° for 2 hours., Meanwhile, in a small bowl, combine the brown sugar, vinegar, cloves and reserved syrup. , Brush ham with 1/2 cup brown sugar mixture. Bake, uncovered, 25-35 minutes longer or until a thermometer reads 140°. Let stand for 15 minutes before slicing. Serve with remaining brown sugar mixture.

1 fully cooked bone-in ham (8 to 10 pounds)
Whole cloves
1 can (12 ounces) lemon-lime soda
1-1/2 cups packed dark brown sugar, divided
1 cup water
1 jar (12 ounces) peach preserves
6 tablespoons butter, cubed
1/4 cup honey
1 teaspoon prepared mustard
1 teaspoon Liquid Smoke, optional
Dash ground cloves
1 can (8 ounces) sliced pineapple, drained
3 canned peach halves

Steps:

  • Score surface of the ham, making diamond shapes 1/2 in. deep; insert a clove into each diamond. Place on a rack in a well-greased foil-lined roasting pan. Pour soda over ham. Spread 1 cup brown sugar over ham. Add water to pan. Cover and bake at 325° for 1-1/2 to 2 hours., In a large saucepan, combine the preserves, butter, honey, mustard, Liquid Smoke if desired, ground cloves and remaining brown sugar. Cook and stir over low heat until butter is melted and sugar is dissolved. Uncover ham; brush with glaze. , Arrange the pineapple slices and peach halves over ham, securing with wooden toothpicks. Bake, uncovered, for 25-30 minutes or until a thermometer reads 140° and ham is heated through. Discard toothpicks before carving.

1 (10 lb) fully-cooked bone-in ham
2 teaspoons whole cloves
1/4 teaspoon ground cinnamon
2 tablespoons brown mustard
1/2 cup packed brown sugar
1/4 cup packed brown sugar
2 tablespoons apple cider vinegar
1 cup peach nectar
1 cup peach preserves
5 cups unsweetened frozen peach slices
2 teaspoons minced fresh gingerroot
1 hot cherry pepper, seeded and minced
1 (3 inch) cinnamon sticks

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Use a serrated knife to score the top of the ham in a diamond pattern.
  • Press whole cloves into the ham and place on a roasting rack in a roasting pan.
  • Bake for 1 1/2 to 2 hours in the pre-heated oven, or until the internal temperature of the ham has reached 140 degrees F (60 degrees C).
  • Cover with aluminum foil if the ham starts to look dry.
  • While the ham is baking, mix together the cinnamon, mustard and 1/2 cup of brown sugar in a cup or small bowl.
  • Set aside.
  • In a saucepan over medium heat, mix together the remaining brown sugar, cider vinegar, peach nectar and peach preserves.
  • Bring to a boil and then stir in the sliced peaches, ginger, cherry pepper and the cinnamon stick.
  • Simmer until the peaches are tender and the sauce has thickened, 25 to 30 minutes.
  • Remove the ham from the oven and brush liberally with the saved mustard glaze.
  • Increase the oven temperature to 350 degrees F (175 degrees C) and return the ham to the oven, uncovered.
  • Bake for an additional 20 to 30 minutes, or until glaze is bubbly.
  • Allow the ham to rest for 15 to 20 minutes before carving. Serve with hot Peach-Ginger sauce.
