HARISSA-CRUSTED SWORDFISH



Harissa-Crusted Swordfish image

This homemade take on harissa is bold enough to use on pork chops or chicken thighs, too. You can also toss it with broccoli or carrots before roasting.

2 red chiles (such as Fresno)
2 tablespoons coriander seeds
2 tablespoons cumin seeds
1/2 preserved lemon, flesh removed
2 garlic cloves
1 cup olive oil
2 tablespoons tomato paste
Kosher salt, freshly ground pepper
4 (8-ounce) swordfish fillets (about 1-inch thick)
2 tablespoons vegetable oil

Steps:

  • Heat broiler. Broil chiles on a foil-lined baking sheet, turning occasionally, until blackened all over, 6-8 minutes. Transfer to a bowl, cover with plastic wrap, and let sit 15 minutes. Peel and set aside.
  • Toast coriander and cumin seeds in a dry small skillet over medium heat, tossing until fragrant, about 2 minutes. Transfer spices to a blender and let cool. Add preserved lemon peel, garlic, olive oil, tomato paste, and reserved chiles and blend until smooth. Transfer harissa to a small bowl; season with salt and pepper. Set 1/4 cup harissa aside for serving.
  • Season swordfish with salt and pepper and place in a large baking dish. Coat with remaining harissa; cover and chill at least 1 hour and up to 1 day.
  • Heat vegetable oil in a large nonstick skillet over medium. Working in batches if needed, cook swordfish until cooked through (fish will feel firm when pressed), about 3 minutes per side. Transfer to a platter and serve with reserved harissa.

Harissa is that fiery paste used in Tunisian cuisine. You can get it in tubes, but the homemade version tastes much fresher. Make a note on the label to top up with olive oil whenever the harissa is used so that it will keep for a long time.

2 ounces dried guajillo chilies, or a combination of guajillos and other hot dried chilies, like Japanese chilies or chiles de arbol
2 ounces dried Anaheim or pasilla chilies
4 garlic cloves, green shoots removed
3/4 teaspoon caraway seeds, ground
1/2 teaspoon coriander seeds, ground
1 1/2 teaspoons salt
3 tablespoons olive oil, plus additional for topping

Steps:

  • Wear rubber gloves to seed the chilies. Take the stems off and remove the seeds. Place in a bowl and cover with hot or boiling water. Place a small plate or a lid over the chilies to keep them submerged in the water. Soak for 1 hour, and drain.
  • Turn on a food processor fitted with the steel blade and drop in the garlic. When it is all chopped and adhering to the sides of the bowl, stop the machine and scrape down. Add the drained chilies, the spices and the salt. Process until everything is chopped. Stop the machine and scrape down the sides. Turn on again, and with the machine running add 2 tablespoons water and the olive oil. Process until the mixture is smooth, stopping to scrape down the sides if necessary.
  • Transfer the sauce to a jar. Wipe the inside edges of the jar with a paper towel, then pour on a film of olive oil to cover the harissa. Top with a lid and refrigerate. The harissa will keep for 6 weeks in the refrigerator if you top it up with olive oil after each use.

Add harissa to fish pie and top with sweet potato for a twist on a classic. Nutritionally balanced and filling, it's ideal for a family meal

700g sweet potatoes (3-4 small ones or 2 large ones)
3 tbsp rapeseed oil
pinch of cumin
pinch of smoked paprika
1 onion, finely chopped
1 red pepper, finely chopped
350ml semi-skimmed milk
350g fish pie mix (make sure it contains smoked haddock)
225g frozen king prawns, defrosted
2½ tbsp harissa paste
2 tbsp cornflour
30ml double cream
200g spinach, roughly chopped
steamed green beans, to serve

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Prick the sweet potatoes with a fork and cook for 50 mins-1 hr or until the flesh is soft (or in the microwave on high for 5-7 mins). Remove the skin and mash the flesh with 2 tbsp of the oil, the cumin and paprika. Set aside and keep warm.
  • Meanwhile, heat a frying pan with the remaining 1 tbsp oil, and cook the onions and peppers over a medium heat until soft, about 7 mins. Warm the milk in a pan over a low-medium heat and add the fish pie mix and the prawns. Cook for 4 mins until the prawns have just turned pink, then scoop out the fish and prawns. Reserve the milk.
  • Add the harissa paste to the onions and peppers and cook for 2 mins. Stir through the cornflour, then add the reserved milk bit by bit, stirring as you go, followed by the cream. Add the spinach and cook for 2 mins until it softens, then add the fish and prawns, stirring carefully to avoid breaking them up.
  • Pour the fish mixture into an ovenproof dish, approximately 25 x 18cm. Carefully spoon the sweet potato on top, going from end- to-end and meeting in the middle. Carefully spread out with a knife, then go over it with a fork to make ridges. Bake for 20 mins, then grill for 10 mins on the hottest setting. Serve with the green beans.

5 cloves garlic, minced
4 tablespoons olive oil
1 tablespoon Mexican chili powder
1 teaspoon ground coriander

1 teaspoon dried lime granules
½ teaspoon sea salt
2 cups unbleached all-purpose flour
1 tablespoon hot chili powder
½ tablespoon ground cumin
¼ teaspoon sea salt
¼ cup cold butter
¼ cup shortening (such as Crisco®)
⅓ cup cold, flat beer
3 tablespoons olive oil
1 large onion, minced
6 large cloves garlic, minced
½ pound lean ground beef
½ teaspoon salt
½ teaspoon freshly ground black pepper
½ teaspoon ground cumin
½ teaspoon dried thyme
½ cup bread crumbs
¼ cup beef stock
3 teaspoons Mexican chili powder
2 teaspoons cayenne pepper
¼ cup cold, flat beer
1 egg, beaten

Steps:

  • Combine chile peppers, garlic, olive oil, chili powder, coriander, cumin, lime granules, and sea salt in the bowl of a food processor; pulse until blended. Set aside 1/2 cup harissa and store remainder in the refrigerator for another use.
  • Sift flour, chili powder, cumin, and sea salt for the pastry into the bowl of a food processor. Add butter and shortening and pulse until crumbly. Pour cold beer in a little at a time, with the processor running, until a ball of dough forms and pulls away from the sides.
  • Transfer dough to a lightly floured silicone pastry mat and roll to a thickness of about 1/8 inch. Cut dough into eight 8-inch circles and cover with waxed paper or a damp cloth while you prepare the meat filling. (If refrigerating dough overnight, let it rest on the counter for at least 15 minutes before using.)
  • Heat oil in a heavy skillet over medium heat; stir in onion and garlic. Cook and stir until onion has softened and turned translucent, about 5 minutes. Add ground beef, salt, pepper, cumin, and thyme. Cook and stir until beef is browned and crumbly, about 10 minutes. Stir in the reserved 1/2 cup harissa. Add bread crumbs, beef stock, chili powder, and cayenne pepper. Cover and simmer, stirring occasionally, until all liquid has been absorbed and filling is moist but not watery, 10 to 15 minutes. Remove from the stove and set aside to cool.
  • Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.
  • Mix beer and egg together in a small bowl.
  • Uncover the dough circles and place 2 to 3 tablespoons of the meat filling in the center of each circle, leaving a clean margin of dough all the way around. Moisten the edges of the circles with the beer-egg mixture. Fold dough in half, enclosing the filling, and pinch edges closed with a fork. Lightly brush each pastry with beer-egg mixture and transfer to the prepared baking sheet.
  • Bake in the preheated oven until pastries are golden brown, about 20 minutes.

2 lbs thick fish fillets (any white fish)
salt and pepper, to taste
flour (for dusting)
olive oil (for frying)
1 small onion, finely chopped
2 garlic cloves, minced
1 cup tomato sauce
1/2 teaspoon harissa
1 medium bay leaf
1 cup pitted kalamata olive
1 fresh lemon, juice of, about 1-2 tablespoons
fresh parsley, chopped (for garnish)

Steps:

  • Season fish with salt and pepper.
  • Dust with flour and fry in hot olive oil until golden brown on all sides.
  • Transfer fish to a side dish. Add onion and garlic to the skillet and cook for a few minutes.
  • Add tomato sauce, harissa, bay leaf and 1/2 cup water. Cook for 10 minutes.
  • Add olives and fish fillets and continue cooking, uncovered, until the fish is tender and the sauce thick.
  • Add lemon juice to taste. Discard the bay leaf.
  • Serve, sprinkled with parsley.
