3 sweet potatoes ((boiled and mashed, with skins off))
3/4 cup granulated sugar
2 eggs ((slightly beaten))
1 teaspoon vanilla extract
1/2 cup milk
1/2 teaspoon salt
1 cup light brown sugar
1 stick unsalted butter ((at room temperature))
1/3 cup flour
1 cup chopped pecans

Steps:

  • Preheat oven to 375 degrees.
  • In a large bowl, mix the mashed potatoes, granulated sugar, vanilla, milk, and salt.
  • Add in the eggs and mix until well blended.
  • Pour all the ingredients in a greased casserole dish.
  • In a separate bowl, mix the topping ingredients. Sprinkle all of the topping ingredients over the mixture in the casserole dish.
  • Bake for 30 minutes or until the topping is firm and brown.

7 cups chopped, one inch cubed yams ((equivalent to 3 big ones. scrubbed and skinned))
1/2 cup granulated sugar
1/8 cup granulated sugar
1 stick of unsalted butter ((chopped into pieces))
4 cups mini marshmallows
Ground Cinnamon to taste

Steps:

  • Preheat oven to 350 degrees.
  • In a big mixing bowl, mix the 1/2 cup and 1/8 cup of sugar with the chopped yams.
  • Place chopped yams in a greased 9x13 inch baking dish.
  • Take the chopped butter pieces and place them on top of the yams, making sure to spread out the pieces.
  • Take the ground cinnamon and sprinkle on top of the butter and yams.
  • Bake for 45 minutes.
  • Sprinkle the 4 cups of mini marshmallows on top.
  • Bake for another 10 minutes or until marshmallows start to brown.

1 cup whole milk
4 extra-large eggs
2 cups sugar
1 teaspoon nutmeg
1 teaspoon cinnamon
1/2 lb butter (not spread or tub product) or 1/2 lb margarine, room temperature (not spread or tub product)
2 cups corn flakes, crushed
2/3 cup brown sugar
1/2 cup pecans, roughly chopped
1/3 cup butter (not spread or tub product) or 1/3 cup margarine, melted (not spread or tub product)

Steps:

  • Preheat oven to 350F and grease or spray a casserole dish with cooking spray.
  • In a beater bowl, mash cooked sweet potatoes until smooth.
  • Add milk, eggs, sugar, nutmeg, cinnamon and margarine.
  • Whip until smooth and well blended.
  • Put into baking dish, cover with foil and bake for 25 minutes.
  • Remove foil.
  • Mix all topping ingredients together and spread over top of sweet potatoes.
  • Bake uncovered for eight to 10 more minutes.
  • Serve while hot.

●1 teaspoon freshly ground black pepper
●2 large eggs
●1/3 cup packed brown sugar
●3 tablespoons all-purpose flour
●1 tablespoon butter, melted
●Pinch of salt
●1/2 cup chopped pecans

Steps:

  • Preheat oven to 350° F.
  • Place potatoes on microwave-safe plate. Microwave on HIGH (100%) power for 15 minutes or until potatoes are tender. Cool slightly; place in large bowl. Add pumpkin, sugar, butter, salt and pepper. With potato masher, smash until lumpy (cut any large pieces of skin into smaller pieces). Add eggs; smash until incorporated. Spoon into 13 x 9-inch or 3-quart baking dish.
  • Combine sugar, flour, butter and salt in small bowl; stir until combined. Sprinkle evenly over casserole; top evenly with nuts.
  • Bake for 25 minutes or until golden and heated through. Remove from oven.
  • Preheat broiler. Broil casserole for 1 minute or until bubbly and nuts are toasted. Cool for 5 minutes before serving.

2 1/4 pounds sweet potatoes, peeled and cut into large even-sized chunks
1/4 pound butter, softened (one stick)
1/2 cup sugar
1/3 cup milk
2 eggs, lightly beaten
1 teaspoon vanilla
1/8 teaspoon nutmeg, ground for topping
6 (3/4 stick) tablespoons butter, melted
1 cup light brown sugar, firmly packed
1/2 cup flour
1 cup pecans, toasted and chopped

Steps:

  • Place the sweet potatoes in a large saucepan and cover with cold water by about 1 1/2 inches. Bring to a boil then cover and boil slowly over medium-high heat until tender, about 20 minutes.
  • Drain the potatoes thoroughly and mash. There should be about 3 cups.
  • Beat the butter, sugar, milk, eggs, vanilla and nutmeg into the potatoes until well blended.
  • Spoon the mixture into a shallow 3-quart baking dish that has been buttered or coated with nonstick vegetable spray. (May be made ahead up to this point).
  • Preheat the oven to 350 degrees.
  • To make the topping: mix the butter, brown sugar, and flour in a medium-sized bowl. Stir in the nuts and sprinkle evenly over the top of the potato mixture.
  • Bake for 35 to 40 minutes, or until the topping is lightly browned.

5 tablespoons butter, chopped and divided
¾ teaspoon salt, divided
½ cup packed brown sugar
¼ cup all-purpose flour
1 teaspoon dried rosemary, crushed
½ cup pecans, chopped
2 tablespoons maple syrup

Steps:

  • Preheat oven to 400 degrees F. Line a 2-quart rectangular baking dish with Reynolds Wrap® Pan Lining Paper, parchment side up. No need to grease dish.
  • Add parsnips and/or carrots to a large microwave-safe bowl. Add 1/4 cup water and cover with wax paper. Microwave on high for 5 minutes. Uncover and add sweet potatoes. Cover and microwave 15 minutes more or until tender, stirring once. Drain and return vegetables to bowl.

4 large sweet potatoes, peeled and sliced
3 tablespoons unsalted butter
4 cloves garlic, minced
1 tablespoon all-purpose flour
2 cups heavy cream
¼ cup dry bread crumbs

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Butter a casserole dish and fill with even layers of sweet potatoes.
  • Melt butter in a saucepan over medium heat. Add garlic and flour and stir until color deepens a bit. Add cream and simmer until the mixture thickens slightly. Pour over sweet potatoes.
