1/2 tsp. celery seed
1/2 tsp. sea salt
pinch black pepper

Steps:

  • Prep ingredients: Thinly slice cabbage and onion.Mince garlic.
  • Layer napa cabbage, onions, and blue cheese in serving bowl and chill until serving.
  • Whisk together garlic, olive oil, apple cider vinegar, dijon mustard, honey, celery seed, sea salt, and pepper until emulsified.
  • Toss dressing with cabbage and chill for 5-10 minutes before serving.

1 head napa cabbage, chopped
4 spring onions, diced
½ cup vinegar
½ cup vegetable oil

Steps:

  • Melt butter in a large skillet over medium heat; cook and stir sunflower kernels and ramen noodles in hot butter until sunflower kernels are lightly browned and fragrant, 3 to 5 minutes. Remove from heat and transfer into a bowl to cool.
  • Stir sunflower seeds and ramen noodles with napa cabbage and spring onions in a large salad bowl. Whisk vinegar, vegetable oil, sugar, and soy sauce together in a separate bowl until sugar has dissolved; pour dressing over salad and toss.

1 small jicama, peeled, julienned (matchstick-cut) 1x1/4x1/4 inch (2 cups)
3 tablespoons sliced fresh chives
3 tablespoons rice vinegar
3 tablespoons honey
2 tablespoons olive oil
1 teaspoon grated lemon peel
1 to 2 tablespoons fresh lemon juice

1/3 cup extra-virgin olive oil
1/2 head Napa cabbage, thinly sliced, about 6 cups
6 scallions (white and green parts), thinly sliced
1 orange or yellow bell pepper, stemmed, seeded, and thinly sliced
1 red apple
2 cups watercress leaves

Steps:

  • Whisk the vinegar with the mustard, salt and pepper, to taste, in a large bowl. Gradually whisk in the olive oil, starting with a few drops and then adding the rest in a steady stream to make a smooth, slightly thick dressing. Add the cabbage, scallions, and bell pepper and toss until the vegetables are coated. Serve now or cover and refrigerate for up to 4 hours.
  • Before serving, grate the apple (with the skin but not the seeds) directly into the slaw, add the watercress leaves, and toss again. Season, to taste, with salt and pepper.

1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 teaspoons Dijon-style mustard
1 tablespoon red-wine vinegar
1 tablespoon soy sauce
3 tablespoons canola oil
1 firm head Napa cabbage (about 1 pound)

Steps:

  • Put the garlic in a large salad bowl and mix in all the remaining ingredients except the cabbage.
  • Trim the cabbage, removing and discarding damaged or wilted leaves, and cut the head crosswise into 1-inch slices. You should have about 8 cups. Wash well and spin dry in a salad dryer (moisture would dilute the dressing). Ten or 15 minutes before serving, add the cabbage to the dressing, toss well and set aside, so the dressing can penetrate the cabbage and soften it slightly.

2 tablespoons rice-wine vinegar
2 teaspoons soy sauce
1/4 cup chile oil

3 cups (1/2 small head) Napa cabbage, very thinly sliced
1/2 red, yellow, or orange bell pepper, stem and seeds removed, very thinly sliced
3 scallions, white and pale-green parts only, cut into 2-inch lengths, julienned
2 ounces daikon, peeled, very thinly sliced into 1/2-by-2-inch pieces
1/4 cup (about 3 ounces) snow peas, trimmed and very thinly sliced
1/4 chives, snipped into 2-inch lengths

Steps:

  • In a small bowl, whisk together garlic, zest and juice of lime, vinegar, soy sauce, and chili oil. Season with salt; set aside.

1 cup veg. oil
1/2 cup sugfar
1/3 cup white wine vinegar
2 packets beef flavoring Raman noodles
Salad:
2 bunches chopped scallions
1 sm head cabbage, shredded
1 cup sunflower seeds

Steps:

  • 0. Dressing: 1 cup vegetable oil; 1/2 cup sugar; 1/3 c white wine vinegar; 2 packets of beef flavoring from Rama noodles (must be beef, not roast beef). Mix and refrigerate for at least one hour before dressing salad. 1. Saute till browned in butter at least 2 (I use 4, at least) pkgs of dry beef-flavored Raman noodles (crumbled) and 1 cup of sunflower seeds. Set aside and let cool completely. 2. Shred 1 small head of cabbage shredded. 3. 2 bunches of of scallions chopped--keep these separate until you mix everything up. 4. Combine all ingredients toss with dressing JUST BEFORE serving.

We had the Napa Veggies at the Rainforest Cafe and knew we had to find a way to make something similiar at home. My kids now say that our recipe is better than the Rainforest Cafe's. There is a lot of room for personal taste with this recipe, add other veggies or take out those you don't like. Our favorite is the Jicima, we could never leave that one out! This recipe makes a ton, but it keeps well. It will still be nice & crispy 4 days later.
