2 1/2 pounds sweet potatoes, peeled and cut into 1 1/2-inch pieces (about 8 cups)
⅓ cup pure maple syrup
2 tablespoons butter, melted
1 tablespoon lemon juice
½ teaspoon salt
Freshly ground pepper, to taste

Steps:

  • Preheat oven to 400 degrees F.
  • Arrange sweet potatoes in an even layer in a 9-by-13-inch glass baking dish. Combine maple syrup, butter, lemon juice, salt and pepper in small bowl. Pour the mixture over the sweet potatoes; toss to coat.
  • Cover and bake the sweet potatoes for 15 minutes. Uncover, stir and cook, stirring every 15 minutes, until tender and starting to brown, 45 to 50 minutes more.

This sweet potato torte recipe is so good- it will have you asking if it is a side dish or is it a dessert? I promise you that this is one holiday dish that everyone will be talking about for a long time!

Number Of Ingredients 18

2 cups flour
1 Tablespoon sugar
¾ teaspoon salt
¾ cup shortening, cut into cubes
2 Tablespoons (or more) of ice water
2 Tablespoons vegetable oil
1 large egg yolk
1½ teaspoons white vinegar
4 large sweet potatoes
2 14-oz cans sweetened condensed milk
½ cup sugar
6 Tablespoons butter, melted
¼ cup honey
2 large eggs
2 Tablespoons maple syrup (the real stuff!)
1 teaspoon ground nutmeg
1 teaspoon salt
1 teaspoon vanilla extract

Steps:

  • In a food processor, combine flour, sugar, and salt, and blend for 10 seconds. Add the cubed shortening and process using on/off pulses until mixture resembles large crumbs.
  • In a small bowl, whisk together 2 Tablespoons ice water, egg yolk, oil, and white vinegar. Add liquid mixture to food processor and blend using on/off pulses until dough comes together in large moist clumps. (Add more ice water if the dough is too dry).
  • Gather dough into a ball, flatten to a disk, and wrap in plastic wrap. Chill for at least an hour and up to a day.
  • Cook the sweet potatoes until tender in the microwave, piercing them first to allow steam to escape. (I cook them on high for 10 minutes and then test for squishy-ness, adding two additional minutes of cooking time until they are done). Allow them to cool.
  • Scape cooked potato flesh into a large bowl and mash until smooth. Measure 3 cups of mashed sweet potatoes for use in the torte.
  • Add all remaining ingredients to the mashed sweet potatoes and beat until the filling is smooth.
  • Preheat oven to 375 degrees. Place disk of dough into a 9" springform pan. Using your fingers, press dough into the bottom and up the sides of the pan, pressing seams together to seal.
  • Add filling to springform pan and bake for 90 minutes, or until the torte is brown at the edges and the center is just set. Allow the torte to cool for 45 minutes before serving.

LAYERED SWEET POTATO TORTE

1/4 cup olive oil, for brushing
1 lb. Swiss chard, stems removed
2 1/2 lb. sweet potatoes, sliced 1/8-inch thick
3 tsp. chopped fresh rosemary
2 cloves garlic, minced (2 tsp.)
1 small red onion, chopped (3/4 cup)
3 oz. Taleggio or blue cheese, crumbled

Steps:

  • 1. Preheat oven to 450°F. Brush 9-inch springform pan with oil. 2. Stack 6 chard leaves on cutting board, and roll tightly into cylinder. Slice cylinder to chiffonade leaves into thin strands. Repeat with remaining leaves. 3. Place 1 sweet potato slice in center of bottom of prepared springform pan. Arrange slices in circles around center slice, overlapping slices by at least half. Brush with oil, sprinkle with 1 tsp. chopped rosemary and one-third minced garlic, and season with salt and pepper (if desired). Spread 1 cup Swiss chard over potatoes, sprinkle with 1/4 cup chopped onion and one-third crumbled Taleggio. Arrange another layer of sweet potatoes over chard, and press down on potatoes to flatten layers. Repeat layering twice. 4. Place torte on baking sheet, and cover with foil. Bake 45 minutes. Uncover, and bake 15 minutes. Cool 15 minutes. Press top of torte to remove excess liquid. 5. Turn torte upside-down on platter, unmold, and serve. For a crispier top, unmold onto ovenproof platter, and brush top of torte with oil. Broil 3 to 5 minutes, or until potato slices begin to brown and start to curl. Cool 10 minutes before slicing.

2 large leeks, trimmed, washed (see Tip) and thinly sliced

1 pound sweet potatoes (about 2 small), peeled and cut into 1/8-inch-thick slices
1 pound all-purpose potatoes, preferably Yukon Gold (2-4 medium), peeled and cut into 1/8-inch-thick slices

Steps:

  • 1. Position oven rack at the lowest level; preheat to 450°F. 2, Coat a 9 1/2-inch, deep-dish pie pan with cooking spray. Line the bottom with parchment paper or foil and lightly coat with cooking spray. 2, Heat oil in a large nonstick skillet over medium-high heat. Add leeks and thyme. Cook, stirring often, until tender, about 5 minutes. (If necessary, add 1 to 2 tablespoons water to prevent scorching.) 3. Season with 1/8 teaspoon salt and pepper. 4. Arrange half the sweet potato slices, slightly overlapping, in the prepared pie pan and season with a little of the remaining salt and pepper. 5. Spread one-third of the leeks over the top. 6. Arrange half the potato slices over the leeks and season with salt and pepper. Top with another third of the leeks. 7. Layer the remaining sweet potatoes, leeks and potatoes in the same manner. Cover the pan tightly with foil. 8. Bake the torte until the vegetables are tender, about 45 minutes. 9. Run a knife around the edge of the torte to loosen it. Invert onto a serving plate. Remove paper or foil and serve. Tip: To clean leeks: Trim and discard coarse green tops. Split leeks lengthwise with a sharp knife, beginning about 1 inch from the root end and cutting toward the green end. Leave root end attached. Swish leeks repeatedly in a basin of cold water to remove grit. Alternatively, trim roots and ragged tops. Slice leeks and place in plenty of water, then drain. Repeat a few times. The slices do not absorb water or lose flavor and the process is faster.

2¼ pounds medium-size red-skinned sweet potatoes (yams; about 4)
1¾ cups sweetened condensed milk (from two 14-ounce cans)

6 tablespoons (¾ stick) unsalted butter, melted
¼ cup honey
2 large eggs
2 tablespoons pure maple syrup
1 teaspoon ground nutmeg
1 teaspoon salt
¾ teaspoon vanilla extract

Steps:

  • FOR CRUST: Combine flour, sugar and salt in processor; blend 10 seconds. Add shortening and blend, using on/off turns, until mixture resembles coarse meal. Whisk 2 tablespoons, ice water, oil, egg yolk and vinegar in small bowl to blend. Add oil mixture to processor and blend, using on/off turns, until dough comes together in moist clumps, adding more ice water by teaspoonfuls if dough is dry. Gather dough into ball, flatten into disk. Wrap in plastic and chill at least one hour and up to one day. FOR FILLING: Pierce sweet potatoes in several places. Microwave until tender, turning once, about 12 minutes. Split potatoes open; scrape flesh into large bowl and mash until smooth. Measure 3 cups mashed potatoes and transfer to another large bowl. Add all remaining ingredients to 3 cups of mashed potatoes; beat filling until blended and smooth. (can be made 1 day ahead. Cover and chill). Preheat oven to 375°F. Roll out dough on floured surface to 13-inch round. Transfer to 9-inch diameter springform pan. Press smoothly over bottom and up sides to within ¾ inch of top edge, sealing any cracks. Add filling to dough-lined pan. Bake torte until filling is beginning to brown at edges and is just set in center, about 1½ hours. Transfer torte to rack. Cool 45 minutes. Cut around pan sides to loosen torte. Remove pan sides.

LEEK, POTATO & SWEET POTATO TORTE

This recipe travels well! Bake it first reheat in a moderate oven. It can be stored in the fridge for up to two days. I like to put "Baker's helper " sheet (layered aluminum sheet to prevent burning) under the pie plate. When you put in the layers of potatoes take your time and do it artistically so the top layer looks attractive with the swirl of potatoes. This is very attractive and I love the combination of Leeks with the two types of potatoes

1 tablespoon olive oil
2 large leeks, green trimmed off, washed well, sliced 1/2 inch pieces
1 tablespoon fresh thyme or 1 teaspoon dried thyme leaves

1 lb sweet potato, peeled and cut into 1/8 inch slices
1 lb potato, peeled and cut into 1/8 inch slices

Steps:

  • Have oven rack on lowest level, preheat to 450°F.
  • Lightly oil a 9" deep pie plate, line it on the bottom with parchment and lightly oil the parchment.
  • Heat the tbsp of oil in a skillet and saute the leeks and thyme for approx 5 minutes, watch they don't scorch, if necessary add a tbsp or two of water, remove from heat and season with salt and pepper.
  • Arrange half of the sweet potatoes in the pie plate, have them slightly overlapping going around the plate ending up in the center of the pie plate--one layer but overlapped.
  • Season with salt and pepper. Spread 1/3 of the leek mixture over the sweet potatoes.
  • Layer half of the potatoes in the same manner as the sweet potatoes. Season with salt and pepper.
  • Cover with 1/3 leeks repeat with another final layer of potatoes. Cover with remaining leeks. Season with salt and pepper.
  • Add final layer of sweet potatoes.
  • Cover tightly with foil and bake for 45 minutes or until the potatoes are tender.
  • To serve run a knife around the edge to loosen, invert onto a plate, remove parchment paper, slice in wedges and serve.

2 1/4 pounds Idaho potatoes, peeled and quartered
Salt
1 1/2 tablespoons butter
3 ounces Parmigiano-Reggiano, finely grated
3 ounces mortadella, sliced thin and minced
2 eggs, lightly beaten
2 to 3 tablespoons milk
Generous pinch freshly grated nutmeg
Freshly ground black pepper to taste
2 tablespoons plain bread crumbs

Steps:

  • Place potatoes in a pot of salted water, bring to a boil and cook until tender, about 20 minutes. Drain, and mash in a mixing bowl.
  • Preheat oven to 400 degrees. Butter an 8- or 9-inch baking pan at least 1 1/2 inches deep, preferably a springform or other loose-bottomed pan. Line the bottom with parchment paper, and heavily butter paper with about 1/2 tablespoon of butter.
  • Add the cheese, mortadella, eggs, 2 tablespoons of the milk, nutmeg and salt and pepper to taste to the potatoes, and mix well. The potatoes should be smooth and thick, but not stiff. Add a little more milk if necessary. Spread potatoes in baking dish and smooth the top. Sprinkle with breadcrumbs, and dot with bits of the remaining tablespoon of butter.
  • Bake about 35 minutes, until the bread crumbs are golden. Remove from oven and set aside for 10 minutes. Remove the sides of the baking pan, cut into wedges or squares and serve, taking care to lift the pieces off the parchment.

Pastry for single-crust pie
1/4 cup butter, softened
1/2 cup packed dark brown sugar
2 tablespoons all-purpose flour
1 teaspoon pumpkin pie spice
1/4 teaspoon salt
1 large egg, room temperature
1/4 cup heavy whipping cream
1 tablespoon bourbon or 1 tablespoon whipping cream plus 1/2 teaspoon vanilla extract
2 tablespoons butter, softened
2 tablespoons dark brown sugar
2 tablespoons dark corn syrup
1/2 cup chopped pecans

Steps:

  • Preheat oven to 400°. Place potatoes on a foil-lined baking sheet. Bake until tender, 40-50 minutes., On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. tart pan with removable bottom. Press onto bottom and sides of pan; trim edges to edge of pan. Refrigerate while preparing filling., Remove potatoes from oven; increase oven setting to 425°. When potatoes are cool enough to handle, remove peel and place pulp in a large bowl; beat until smooth (you will need 1 cup mashed). Add butter, brown sugar, flour, pie spice and salt; beat until blended. Beat in egg, cream and bourbon. Pour into crust. Bake on a lower oven rack 15 minutes., Meanwhile, for topping, mix butter, brown sugar and corn syrup until blended. Stir in pecans., Remove pie; reduce oven setting to 350°. Spoon topping evenly over pie. Bake until a knife inserted in the center comes out clean, 8-10 minutes. , Cool on a wire rack. Serve within 2 hours or refrigerate, covered, and serve cold.

1/2 cup (1 stick) unsalted Passover margarine
1/3 cup plus 2 tablespoons granulated sugar
6 large eggs, separated
1 1/2 cups cooked and mashed sweet potatoes, fresh or canned
1 teaspoon Passover rum extract (optional)
10 ounces good-quality semi-sweet chocolate, melted and cooled
1/4 teaspoon salt
Chocolate Ganache Glaze
1/2 cup water
6 ounces semi-sweet chocolate, coarsely chopped
Toppings
(optional)
Unsweetened cocoa powder, sifted
Curls of semi-sweet chocolate
Pureed strawberries or raspberries

Steps:

  • Preheat the oven to 350°F. Line a 9-inch springform pan with baking parchment.
  • Torte:
  • In a mixing bowl, cream the unsalted margarine or butter with the 1/3 cup sugar. Blend in the egg yolks, then the mashed sweet potatoes, rum extract (if using), and cooled chocolate.
  • In another bowl, with clean beaters, whip the egg whites gently until they are a bit foamy. Then add in the salt and whip on a higher speed, slowly dusting in the two tablespoons of sugar to form stiff, glossy (but not dry) peaks. Fold one third of the egg whites into the sweet potato/chocolate mixture and work them in well to loosen the batter. Then, gently fold in the remaining egg whites, blending well but taking care not to deflate the mixture. Spoon the batter into the prepared pan and bake for about 40 minutes. The cake rises and looks dry, and slightly cracked on top when done. The middle should be soft but firm. Cool in the pan for 20 minutes, then remove to a wire rack. At this point, the cake can be frozen for up to a month. Even if serving it the same day, chill the cake for an hour or two before finishing it with the ganache glaze.
  • Chocolate Ganache Glaze:
  • In a double boiler, bring the water to a gentle boil and add the chopped chocolate all at once. Remove from the heat and stir briskly with a wire whisk until all the chocolate melts and you have a thick glaze or sauce-like topping. Refrigerate for an hour or so. (You can also make this ahead and refrigerate it for up to a week or two. Simply warm it to the right temperature for glazing the cake.)
  • Invert the cake onto a cardboard circle or cake board so that the smooth, flat bottom faces up. Do not be dismayed if this is not a high cake - it is a torte and is meant to be a little less than statuesque. Pour the glaze over the cake and, using a metal spatula, even out the glaze and spread it along the sides.
  • Instead of the glaze, you can also simply sift some cocoa over the top of the cake or decorate it with curls of chocolate (using a vegetable peeler and a warmish chocolate bar). The cake can also be offered with a pureed raspberry or strawberry sauce, garnished with chocolate shavings, or left as is, with a citrus leaf, a sweetheart rose, or several berries in the center.

2 lbs yukon gold potatoes, scrubbed,peeled and thinly sliced lengthwise
2 tablespoons butter, plus extra
butter, for pan
2 shallots, thinly sliced
salt
pepper
9 eggs
4 ounces freshly grated mozzarella cheese
1 cup freshly grated parmigiano-reggiano cheese (or domestic parmesan, please dont use the stuff in the can)

Steps:

  • Preheat oven to 325 degrees.
  • Place potatoes in a large pot, and add enough cold water to cover, bring to boil and lower heat.
  • Simmer until tender but firm, about 5-7 minutes, drain and return to hot pan to dry out.
  • Melt butter in a cast iron skillet over medium heat.
  • Saute shallot in butter for about 5 minutes.
  • Season with salt and pepper and turn off heat, set aside to cool.
  • In a bowl, beat the eggs.
  • Add the shallots mozzarella and 3/4°C Parmigiano, mix to combine.
  • Make sure your Cast Iron Pan is buttered all around and on the sides.
  • Place 1 layer potatoes in the bottom of the pan, Top with 1/4 of the egg mixture, add another layer of potatoes and 1/4 of the eggs, repeating until all of the ingredients are used.
  • Be sure to end with a layer of potatoes.
  • Top with remaining Parmigiano and bake 40-50 minutes until tender and knife inserted in center comes out clean.

SPINACH & SWEET POTATO TORTILLA

Sweet potato adds a different flavour to this healthy Spanish-inspired tortilla. It's perfect to prepare ahead of a tapas night.

300g bag baby spinach leaves
8 tbsp light olive oil
2 large onions , thinly sliced
4 medium sweet potatoes (800g/ 1lb 12oz), peeled, cut into thin slices
2 garlic cloves , finely chopped
8 large eggs

Steps:

  • Put the spinach in a large colander and pour over a kettleful of boiling water. Drain well and, when cooled a little, squeeze dry, trying not to mush up the spinach too much.
  • Heat 3 tbsp oil in a 25cm non-stick pan with a lid, then sweat the onions for 15 mins until really soft but not coloured. Add another 3 tbsp oil and add the potatoes and garlic. Mix in with the onions, season well, cover and cook over a gentle heat for another 15 mins or so until the potatoes are very tender. Stir occasionally to stop them catching.
  • Whisk the eggs in a large bowl, tip in the cooked potato and onion, and mix together. Separate the spinach clumps, add to the mix and fold through, trying not to break up the potato too much.
  • Add 2 tbsp more oil to the pan and pour in the sweet potato and egg mix. Cover and cook over a low-medium heat for 20 mins until the base and sides are golden brown and the centre has mostly set. Run a palette knife around the sides to stop it from sticking. 5 To turn the tortilla over, put a plate face down onto the pan, then flip it over. Slide the tortilla back into the pan and cook for a further 5-10 mins until just set and golden all over. (Don't worry if it breaks up a little on the edges as you're turning it - it will look perfect when it's cooked through and set.) Continue cooking on the other side until just set and golden all over. Again use a palette knife to release the tortilla from the sides. Allow to rest for 5 mins, then tip onto a board before cutting into wedges.
