NECTARINE AND BERRY PARFAITS
There are breakfast parfaits with layered fruit and yogurt, and then there are dessert parfaits like this with crumbled cookies, slightly sweetened whipped cream and seasonal fruit. Here, the whipped cream gets a boost from mascarpone and lemon zest. If you don't wish to use orange-flavored liqueur, substitute 1 or 2 tablespoons of orange blossom honey for the liqueur and the sugar.

Steps:
- Step 1: Working over a bowl, use a sharp knife to slice 1 nectarine or peach very thinly. Add nectarine slices, 1 cup strawberry slices and 1 cup raspberries to the bowl. Add 3 tablespoons orange-flavored liqueur and 2 tablespoons powdered sugar; stir gently. Let stand for about 20 minutes.
- Step 2: Meanwhile, make mascarpone and lemon whipped cream.
- Step 3: Place a generous dollop of the fruit into the bottom of 4 stemmed dessert or wine glasses. Top with 1 spoonful of the mascarpone cream, a few cookie bits and more fruit. Repeat layers to fill the glass evenly, ending with a dollop of the cream. Cover and refrigerate at least 1 hour or up to 6 hours.
- Step 4: Serve cold, garnished with fresh raspberries and mint sprigs.
NECTARINES AND BERRIES WITH FLAVORED WHIPPED CREAM
Macerated desserts are simply fruit steeped in a flavored sugar syrup, wine, liquor, vinegar or citrus juice, usually for a couple of hours or overnight. During the process, the fruit becomes slightly softer, its flavor infused with spices, juices or wine. Fruit can be nicely complemented not only by a simple sugar syrup, but also by orange or lemon juice, wine, liqueurs and vinegar. Any soft fruit, like bananas, mangoes or papayas, should be added at the end. Basil or mint leaves, orange or lemon zest and star anise will also add some zing.

- In a large nonreactive bowl, mix the fruit, vinegar, sugar and pinches of salt and pepper. Let sit uncovered in refrigerator for 30 minutes.
- Combine cream, sugar, lavender, orange zest and another pinch of salt, and whip until soft peaks form.
- Put fruit into serving bowls, and spoon a bit of whipped cream on top. Garnish with mint.

WHIPPED CREAM WITH FRESH BERRIES
Steps:
- Add the heavy cream and sugar to the chilled bowl of a stand mixer (you can also use a hand mixer or a whisk and a large chilled bowl). Whip on medium speed until the cream holds soft peaks. Add the vanilla bean paste, creme fraiche, orange zest and orange liqueur and whip on medium speed until the cream holds medium peaks.
- Layer fruit in a bowl, spoon over whipped cream and serve.
NECTARINE & BERRY COBBLER
Steps:
- Prepare half the Sweet Cream Biscuits recipe on page 34. Cut out 10 biscuits using a 2 1/2 -inch round cutter, or 14 biscuits with a 2-inch cutter. A cutter with scalloped edges makes beautiful cobbler biscuits.
- Preheat the oven to 400°F. Combine the fruit in a large bowl. Mix 1/2 cup sugar, flour, and salt together, and stir into the fruit. Add the lemon zest and juice, and mix well. Put the fruit in a gratin dish approximately 9 inches by 12 inches and 2 to 3 inches deep. Bake the fruit for 8 minutes or until the fruit just softens. Remove the dish from the oven. Brush the biscuit tops with the cream and sprinkle lightly with the remaining sugar. Place the biscuits on the fruit in staggered rows and return the dish to the oven (set the dish on a baking sheet to catch any overflowing juices). Bake the cobbler for 35 to 45 minutes, until the biscuits are golden and the fruit is bubbling. Let the cobbler cool awhile and serve warm with vanilla ice cream or lightly whipped cream, if you like.
- Notes
- Use other stone fruit in place of the nectarines; plums will need 1 to 2 tablespoons additional sugar, and the slices should be slightly thinner. Use all nectarines, or peaches or other stone fruit, if berries are not available.
- Instead of cobbler biscuits, bake the fruit with a crisp topping: Mix together 1 1/4 cups flour, 6 tablespoons brown sugar, 1 1/2 tablespoons granulated sugar, 1/4 teaspoon ground cinnamon, and 2/3 cup lightly toasted chopped nuts (walnuts, pecans, or almonds). Work in 12 tablespoons butter cut into small pieces until the mixture has a crumbly texture. Cover the fruit in the pan with the crisp topping and bake until the fruit is bubbling thickly and the topping is lightly browned.
NECTARINE-BLACKBERRY CRISP

- For topping:
- Whisk flour, golden brown sugar, lemon peel, and salt in medium bowl to blend. Add melted butter and vanilla; stir until evenly moistened but crumbly. DO AHEAD: Can be made 4 hours ahead. Let stand at room temperature.
- For filling:
- Whisk eggs in large bowl to blend. Whisk in crème fraîche and vanilla. Add 1 tablespoon flour; whisk to blend. do ahead Can be made 4 hours ahead. Cover and chill. Rewhisk before continuing.
- Preheat oven to 375°F. Butter 8x10- inch oval ceramic dish. Place berries and nectarines in large bowl. Sprinkle remaining 1/2 cup flour and sugar over; toss to coat. Transfer to prepared dish. Pour egg mixture evenly over fruit. Using fingers, crumble topping over fruit, distributing evenly.
- Bake crisp until custard is set and topping is golden brown, about 55 minutes. Let cool at least 10 minutes and up to 1 hour before serving.
- Scoop crisp into bowls. Serve with vanilla ice cream.
MACERATED BERRIES WITH WHIPPED CREAM
This is a wonderful summertime dessert. So delicious with a nice glass of sparkling wine. This is also great served with some dark chocolate. From The Wine Club cookbook. Serve the berries in a white wine glass for a nice presentation. If you do not have rose water you can flavor the whipped cream with vanilla or lemon extract.

- Place the raspberries and blueberries in separate bowls. Sprinkle each with 2 tablespoons of sugar and 1 tablespoon of sparkling wine. Gently toss the berries; let stand at room temperature for 1 hour.

NECTARINES AND BERRIES IN WINE SAUCE
I have kept a box of white wine in my refrigerator and red in the pantry almost since these easily dispensed wines first became available. Need a half-cup, a cup or more for a recipe? It's at hand, ready to go into the pot, and there's also some always ready to go into the cook.About the only time I serve the wines is on an informal occasion, for example if someone wants a glass of white when everybody else is drinking red. The wines are also handy for a mixed wine drink like a kir, or even sangria.Their destiny, as the poaching liquid for summer nectarines, could not be more rewarding. The fruit is mixed with berries, and the wine, sweetened with sugar, is enriched with berry purée and reduced to a sauce. Whether to use white or red depends on the berries you select. Do not skimp on the chilling time; overnight would not be a mistake. It improves the dessert.

- Purée half the raspberries or blackberries by forcing them through a sieve or potato ricer to eliminate seeds.
- Place the wine (with raspberries, use white; with blackberries, red) in a 3-quart saucepan. Stir in the sugar, bring to a slow simmer and add the nectarines and pits. Simmer until the fruit is just tender, about 3 minutes. Transfer the nectarines to a bowl with a slotted spoon, draining well. Discard the pits. Stir berry purée into the pan.
- Bring wine with berry purée to a boil and cook about 15 minutes, until reduced to about 3/4 cup. Remove from heat and stir in the lemon juice and framboise or brandy, if using. Allow to cool 30 minutes. Mix the remaining berries with the nectarines. Pour the sauce over the fruit and refrigerate several hours, or overnight. Serve on its own or over ice cream, garnished with mint.
