1 1/4-ounce packet unflavored gelatin
1/3 cup sugar
1 cup half-and-half
1 cup buttermilk
2 teaspoons vanilla extract
2 teaspoons almond extract
6 cups pitted cherries (about 2 1/2 pounds whole cherries)
3 cups sugar
1 thin slice peeled ginger
1 star anise pod (optional)
Juice of 2 lemons
2 teaspoons vanilla extract
Chopped toasted almonds, for sprinkling (optional)

Steps:

  • Make the panna cotta: Fill a liquid measuring cup or small bowl with 1/2 cup cold water; sprinkle the gelatin on top and let stand 5 minutes.
  • Heat the sugar and half-and-half in a small saucepan over medium heat, whisking to dissolve the sugar. Remove from the heat and whisk in the gelatin mixture until dissolved. Stir in the buttermilk and vanilla and almond extracts. Pour through a fine-mesh sieve into a large liquid measuring cup or bowl. Let cool to room temperature, then divide among 6 glasses or small bowls. Refrigerate until firm, at least 4 hours.
  • Make the compote: Combine the cherries and sugar in a large saucepan; let sit at room temperature until juicy, about 4 hours.
  • Add the ginger and star anise to the cherry mixture and bring to a boil over medium-high heat. Cook, stirring occasionally and skimming any foam from the top, until thick and syrupy, about 30 minutes. Stir in the lemon juice and vanilla extract and cook 2 to 3 more minutes; remove from the heat and let cool completely. (Refrigerate any leftover compote in an airtight container for up to 1 month.) Spoon on top of the panna cotta and sprinkle with almonds.

This creamy, tart, and lightly sweet dessert is much easier to make than you might think! Serve with some fresh fruit for some added sweetness to balance out the tartness of the lemon. While the recipe describes how to remove the panna cotta from the molds for serving, they can also be served directly in the ramekins with the fruit on top for ease (I would use slightly larger ramekins in this case).

¼ cup fresh lemon juice
1 (.25 ounce) envelope unflavored gelatin
2 cups heavy whipping cream
1 cup half-and-half
2 teaspoons fresh lemon zest, plus more for garnish
⅓ cup granulated sugar
½ teaspoon vanilla extract
6 leaves fresh mint

Steps:

  • Lightly oil or spray six 6 ounce ramekins.
  • Pour lemon juice in a small bowl and sprinkle with gelatin. Let sit for 5 minutes to soften the gelatin; mix well. Set aside.
  • Stir together heavy cream, half and half, and lemon zest in a saucepan over low heat. Add sugar, stirring frequently, until sugar has dissolved completely. Heat mixture slowly until it just about to boil, about 15 minutes. Remove from heat.
  • Whisk gelatin mixture and vanilla extract into the cream mixture until well blended and gelatin is completely dissolved. Keep lightly whisking until the mixture comes close to room temperature, about 10 minutes. This will prevent the gelatin and cream from separating while the panna cotta is setting.
  • Divide mixture into ramekins, about 1/2 cup per portion. Cover each ramekin with plastic wrap and refrigerate until set, about 4 hours.
  • Run a knife around the inside edges of the ramekin to remove panna cotta from the ramekins. Carefully dip each ramekin into a bowl of hot water for a few seconds. Carefully invert onto serving plates, tap, and jiggle the ramekin a bit if needed for the panna cotta to come loose. Garnish with additional lemon zest and mint leaves, and serve with fresh blueberries.

1 1/4 cups well-shaken buttermilk
2 3/4 teaspoons unflavored gelatin (from two 1/4-oz envelopes)
1/4 cup water
1 1/2 cups heavy cream
2/3 cup sugar
2 tablespoons blackberry syrup, store-bought or homemade (see cooks' note, below)
For compote
1/2 cup water
1/2 cup crème de cassis
2 tablespoons sugar
1 1/2 tablespoons fresh lemon juice
1/2 lb blackberries (about 2 cups)
Special Equipment
6 (6-oz) molds (preferably nonreactive)

Steps:

  • Make panna cottas:
  • Purée blackberries with buttermilk in a blender until very smooth, then pour through a fine-mesh sieve into a bowl, pressing on and then discarding solids.
  • Sprinkle gelatin over water in a small bowl and let stand 1 minute to soften.
  • While gelatin softens, heat cream and sugar in a saucepan over moderate heat until hot, stirring until sugar is dissolved. Remove from heat and add gelatin mixture, stirring until dissolved. Stir cream mixture and syrup into blackberry purée, then pour through cleaned sieve into a bowl. Pour mixture into molds and chill, covered, until firm, at least 8 hours.
  • Make compote while panna cottas finish chilling:
  • Boil water, crème de cassis, and sugar in a small saucepan, stirring occasionally, until syrupy and reduced to about 1/3 cup, 10 to 12 minutes. Stir in lemon juice, then pour syrup over blackberries and gently stir to combine.
  • To serve panna cottas, run a thin knife along edge of molds to loosen if necessary and dip molds in a small bowl of warm water 3 to 5 seconds, then invert panna cottas onto plates and gently lift off molds. Spoon berries and syrup over and around each panna cotta.

  • Spoon compote over puddings.

1/2 vanilla bean, split lengthwise
5 tablespoons fresh lemon juice
2 teaspoons unflavored gelatin

1 cup creme fraiche
2 tablespoons grated lemons, rind of
3 cups frozen blackberries, thawed,drained,juices reserved (about 12 ounces)
3 tablespoons packed golden brown sugar
3 tablespoons creme de cassis (black-currant-flavored liqueur; optional)

Steps:

  • For panna cotta: Lightly oil six 3/4-cup ramekins or custard cups.
  • Mix milk and cream in heavy medium saucepan.
  • Scrape in seeds from vanilla bean; add bean.
  • Bring to simmer.
  • Remove from heat.
  • Cover; let steep 30 minutes.
  • Remove vanilla bean.
  • Pour lemon juice into small bowl; sprinkle gelatin over.
  • Let stand until gelatin softens, about 10 minutes.
  • Stir sugar and gelatin mixture into milk mixture.
  • Stir over low heat just until sugar and gelatin dissolve, about 2 minutes.
  • Remove from heat.
  • Whisk in crème fraîche and lemon peel.
  • Divide among ramekins.
  • Cover; chill until set, at least 6 hours or overnight.
  • For sauce: Puree 2/3 of blackberries and all reserved juices, brown sugar, and crème de cassis, if desired, in blender.
  • Strain mixture into medium bowl, pressing on solids to extract as much liquid as possible.
  • Discard solids in strainer.
  • Stir remaining blackberries into sauce.
  • (Can be made 1 day ahead. Cover and chill).
  • Run small knife around each panna cotta.
  • Place bottoms of ramekins, 1 at a time, in bowl of hot water 45 seconds.
  • Place plate atop ramekin.
  • Hold plate and ramekin together; invert, shaking gently, to turn out panna cotta.
  • Serve with sauce.

3 cups sliced strawberries (1 pound)
1 3/4 cups well-shaken low-fat buttermilk
6 tablespoons sugar
2 1/2 teaspoons unflavored gelatin, from less than 2 (1/4-ounce)
1/4 cup whole milk
1/4 cup heavy cream
2 1/2 cups strawberries, trimmed (preferably small; 3/4 pound)
1/4 cup fresh orange juice
2 teaspoons superfine sugar

Steps:

  • Make panna cotta: Blend strawberries, buttermilk, and sugar in a blender until very smooth. Pour through a very fine sieve into a medium bowl, pressing hard on solids and scraping the bottom of the sieve. Discard solids.
  • Sprinkle gelatin over milk in a small bowl and let stand 1 minute to soften.
  • Bring cream to a boil in a small saucepan. Remove from heat and add gelatin mixture, stirring until dissolved.
  • Whisk cream mixture into strawberry puree and pour into molds. Chill molds, covered, until firm, at least 8 hours.
  • To unmold: Dip molds in a small bowl of hot water 2 or 3 seconds, then invert onto dessert plates and remove molds. Let stand at room temperature 20 minutes to soften slightly.
  • Make compote while panna cottas stand: Halve strawberries lengthwise if small, or quarter if larger. Whisk together orange juice and superfine sugar in a bowl until sugar is dissolved and add strawberries, tossing to coat. Set the compote aside to macerate for 10 minutes.
  • Serve panna cotta with compote.
  • note: Panna cotta can be chilled in molds, covered, up to 2 days.
