MINT PATTY CAKES

Mint Patty Cakes image

Provided by Food Network Kitchen

Categories     dessert

Time 2h

Yield 24 cupcakes

Number Of Ingredients 17

3 sticks unsalted butter, cut into pieces
1 cup Dutch-process cocoa powder
3 1/4 cups packed dark brown sugar
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
11/4 cups buttermilk
2 large eggs, at room temperature
2 teaspoons vanilla extract
1 1-pound box confectioners' sugar (about 4 cups)
1/2 cup light corn syrup
1/4 cup vegetable shortening or cocoa butter, softened
2 teaspoons peppermint extract
8 ounces bittersweet chocolate, finely chopped
1/4 cup light corn syrup
1 1/2 tablespoons unsalted butter

Steps:

  • Make the cupcakes: Position a rack in the middle of the oven and preheat to 350 degrees F. Line two 12-cup muffin pans with paper liners. Put the butter, cocoa powder and 3/4 cup water in a medium microwave-safe bowl, cover with plastic wrap and microwave until the butter melts, about 2 minutes. Whisk to combine, then whisk in the brown sugar.
  • Whisk the flour, baking powder, baking soda and salt in a large bowl. Whisk in the warm cocoa mixture. In another bowl, whisk the buttermilk, eggs and vanilla; stir into the batter until just combined but don't overmix.
  • Divide the batter among the prepared cups, filling each about three-quarters of the way. Bake until the cupcakes spring back when touched, 30 to 35 minutes. Let cool in the pans 10 minutes, then transfer to racks to cool completely.
  • Make the topping: Beat the confectioners' sugar, corn syrup, shortening and peppermint extract with a mixer until a tight paste forms. Gather into a ball, place between two sheets of parchment paper and roll out to 1/4 inch thick (microwave 15 seconds to soften, if necessary). Use a 21/2-inch round cutter or juice glass to cut into disks; reroll the scraps. Place a peppermint disk on top of each cupcake.
  • Make the glaze: Put the chocolate, corn syrup, butter and 1/4 cup water in a microwave-safe bowl, cover with plastic wrap and microwave on 50 percent power until the chocolate melts, about 2 minutes. Whisk to combine, then cool slightly. Spread the glaze over the peppermint topping, leaving some peppermint exposed. Refrigerate until set, at least 20 minutes. Serve cold.

1 tablespoon fresh lemon juice
4 firm ripe peaches
1 1/2 cups all purpose flour

SURPRISE PATTY CAKES

Surprise Patty Cakes image

Scrumptious breakfast patties using leftover Surprise South Beach Mashed "Potatoes," with eggs to defer the protein police. Feel free to add garlic, rosemary, whatever! You may want to steam entire cauliflower head and freeze the extra puree. Then pull out for dinner or add eggs for an easy breakfast.

Provided by b. limon

Categories     Breakfast

Time 17m

Yield 6 3" patties, 2 serving(s)

Number Of Ingredients 9

1 cup cauliflower, 1/4 head (or use 1 cup Surprise South Beach Mashed "Potatoes," see a version in South Beach " Mashed Potatoes/Cauliflower", instead of the)
1 tablespoon milk
1 tablespoon soy margarine, less if desired
2 eggs
1 tablespoon grated carrot
1/2 teaspoon nutritional yeast
smidgen nutmeg
black pepper
2 teaspoons cooking oil (not olive)

Steps:

  • Steam cauliflower until crisp-tender (about 4 minutes).

AUNT PATTY'S OLD-FASHIONED COFFEE CAKE

Aunt Patty's Old-Fashioned Coffee Cake image

This old-fashioned recipe combines a sour cream batter with a filling of sugar, instant coffee, and cocoa powder. To marbleize the cake, run a thin knife through the batter in several spots, creating swirls as you work. The cake goes best with -- what else? -- hot coffee with milk and sugar.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cake Recipes

Yield Makes one 10-inch cake

Number Of Ingredients 12

3 tablespoons sugar
4 1/2 teaspoons instant coffee granules
4 1/2 teaspoons unsweetened Dutch-process cocoa powder
1/2 cup (1 stick) unsalted butter, softened, plus more for pan
2 cups all-purpose flour, plus more for pan
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup sugar
2 large eggs, room temperature
1 cup sour cream, room temperature
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350 degrees. Make the filling: Stir together sugar, coffee, and cocoa powder in a small bowl; set aside.
  • Butter a 10-inch (12-cup) Bundt pan. Dust with flour, and tap out excess. Make the batter: Whisk flour, baking powder, baking soda, and salt in a medium bowl. Put butter and sugar into the bowl of an electric mixer fitted with the paddle attachment. Mix on medium-high speed until pale and fluffy, 3 to 4 minutes. Reduce speed to medium. Mix in eggs, one at a time. Mix in flour mixture in 3 batches, alternating with sour cream. Add vanilla, and mix 1 minute.
  • Spread 1/3 of the batter into prepared pan. Sprinkle with half the filling. Spread another third of the batter on top, followed by the remaining filling. Spread remaining batter over top. Run a thin knife through batter to marbleize.
  • Bake until a cake tester inserted into center comes out clean, 35 to 38 minutes. Let cool 30 minutes. Invert onto a plate.
