1 Tin (410g) Pears In Juice
1 Tin (410g) Peaches In Juice
4 Level Tablespoons (80g) Plain Flour
5 Tablespoons (75g) Porridge Oats
5 Tablespoons (75g) Low Fat Spread
1 Tablespoon (20g) Sugar
2 Pots (200g) Low Fat Plain Yoghurt

Steps:

  • Method Preheat the oven to 180°C / 160°C fan oven / 360°F / gas mark 4. Mix flour and oats in a bowl then rub low fat spread into the mixture. When it looks similar to breadcumbs stir in the sugar. Drain juice from the fruit and place into the bottom of an overproof dish with no more than two layers of fruit. Pour crumble mixture over the fruit and level it out with a spoon. Don't press down too much on the crumble. Bake in the oven for approximately 25 minutes. Serve with yoghurt.

  • Substitute peaches or pears when they are in season. Microwave method: Place apples in a microwave baking pan and sprinkle with lemon juice, maple syrup, and cornstarch, and toss to combine. In a small bowl, melt butter at High for 30 to 45 sec. Stir in rolled oats, brown sugar, nuts and cinnamon. Combine well. Sprinkle evenly over apples. Microwave at High for 8 to 10 min. Allow 5 to 7 min after cooking time. Oven method: Preheat the oven to 350℉ (180℃) F. Butter a 9-by-9 or similar capacity baking dish . Mix together fruit, lemon juice, maple syrup if using, and cornstarch,. Gently toss until well combined. Pour the peach mixture to the buttered baking pan, and gently spread evenly. Mix together all the topping ingredients, and sprinkle over the fruit. Bake for 35 to 40 minutes or until the topping is golden-brown, and the fruit is bubbling around the edges. Let cool for about 30 minutes before serving. Serve warm or at room temperature or chilled, with ice cream or plain yogurt of your choice.

For the crumble
225 g plain flour
90 g caster sugar
1 pinch salt
1 teaspoon powdered ginger
115 g unsalted butter
For the filling
100 g sugar
100 ml water
4 nice ripe pears, peeled, cored and cut into chunks
5 pieces stem ginger in syrup, finely chopped
1 lime, juice and zest of, plus extra for serving

Steps:

  • You can't go wrong with an old-fashioned crumble. Everyone loves it, and it's lovely and easy!
  • Preheat your oven to 200ºC/400ºF/gas 6.
  • Sift the flour into a bowl and add the sugar, salt and ginger.
  • Cut the cold butter into chunks and rub it into the flour mix with your hands until you get a mixture that looks a bit like fine breadcrumbs. This is the crumble topping.
  • To make the filling, boil the water and sugar together, then carefully drop in the pear chunks and simmer gently for a couple of minutes.
  • Add the chopped ginger and the lime zest and juice to the pan and stir. Spoon the mixture into one large ovenproof dish or four small ones.
  • Sprinkle the crumble topping over the top of the fruit, piling it high in the middle of the dish and leaving space at the edge for the caramel to bubble up.
  • Bake in the preheated oven for 25 to 30 minutes until the pears are cooked and bubbling and the crumble is golden on top. Serve with custard or a dollop of crème fraîche with lime zest grated over, if you like.
  • Tip: This crumble will work well with apples instead, if you prefer.

zest 1 lemon , plus juice ½
1 tbsp agave syrup
140g plain flour
50g porridge oat
25g cold butter , grated

Steps:

  • Heat oven to 200C/180C fan/gas 6. Drain the peaches, but reserve the juice. Tip the peaches into a deep baking dish, roughly 20 x 30cm. Scatter over the lemon zest and juice and 1 tbsp of the agave, then toss everything together.
  • In a bowl, combine the flour, oats, butter, remaining agave and 4 tbsp of the reserved peach juice. Mix together, first with a spoon, then with your fingers, until you have a rough crumbly mixture. Scatter over the peaches, then bake for 35 mins until golden and crunchy on top.

125g butter
4 eating apples, thinly sliced
2 pears, thinly sliced
100g honey
80g light brown soft sugar
½ tsp vanilla extract
150g plain flour
100g Jordans Honey Country Crisp
1tsp ground cinnamon
200ml double cream
Honey, to serve

Steps:

  • Preheat the oven to 180 C/ fan 170 F/ Mk 4. Butter a 1 litre ovenproof baking dish with 25g of the butter.
  • Toss the apples and pears in the honey, 30g of the sugar, and the vanilla extract. Spoon into the baking dish and bake for 10 minutes.
  • Meanwhile, rub together the remaining butter with the flour. Stir in the remaining sugar, and the Jordans Honey Country Crisp. Spoon this over the apples and pears in the dish, and bake for a further 30 minutes.
  • To serve, whip the cream until thick, and stir in the cinnamon. Sweeten with extra honey if desired. Serve the crumble warm with the cream on the side.
